I've been making german pancakes (Pfannkuchen) for a few years now, I have a video uploaded here how I make them. I have also made a popular recipe online "Lori's Gefuellte Flinsen" which is a single serving size of a german pancake rolled with a crepe filling. I love german pancakes, I love the crepe filling but when time is money and I am always behind, making the single rolled up version of german pancakes with crepe filling just takes too much time. So I got to thinking .... I can just combine the features I love from both recipes and it worked. Its absolutely delicious too. Give it a try and let me know what you think. Oh yea, I didn't use Lori's recipe ingredient for ingredient and the german pancake recipe is kind of my own version too .... thats just the way I am, I make all recipes in my own way. Recipe is below:
Eds take on german pancakes recipe + gefüllte Flinsen recipe:
For base:
6 large eggs
1 cup milk (1/4c great value powdered milk + 7/8c water)
1 cup all-purpose flour
1 tsp salt
1 tablespoon vanilla extract
5 tablespoons butter
For filling:
1 can peaches pie filling (you can use any canned or fresh fruit you love)
1/4 cup sugar
8oz cream cheese softened
2 tablespoons great value powdered milk
3 tablespoons water
Instructions:
Preheat oven to 425 degrees F
Add 5 tablespoons butter to 9x13 casserole dish and set aside
Mix base in bowl and set aside
Mix filling in bowl and set aside
Pour 1/2 of base in casserole dish, add filling to casserole dish mostly down center, add remaining base to casserole dish
Bake 22-30 minutes depending on your oven (light golden brown top is done)
Cut into 6-8 squares, serve and garnish with fruit of choice or toppings could include powdered sugar, maple syrup, honey, etc
