This recipe is a family favorite for Chef Matt Abdoo. Inspired by the meals his mom made, this Italian-marinated flank steak is served with charred peppers, sweet onions, and fresh basil for a simple meal full of flavor. Chef Matt's tip: Slice flank steak against the grain for the most tender bite.
Italian-Marinated Flank Steak with Charred Peppers & Onions
Serves: 4
Prep Time: 15 minutes (plus 1–2 hours or overnight to marinate)
Cook Time: 20 minutes
Ingredients
Flank Steak
2 pounds flank steak, trimmed
1 cup Italian salad dressing
Kosher salt, to taste
Freshly ground black pepper, to taste
Charred Peppers & Onions
1 red bell pepper
1 yellow bell pepper
1 orange bell pepper
1 sweet onion
1 red onion
2 tablespoons olive oil
2 tablespoons Italian salad dressing
Kosher salt, to taste
Freshly ground black pepper, to taste
6 fresh basil leaves
Directions
1. Marinate the steak: Place the flank steak in a large resealable bag and pour in the Italian salad dressing. Massage the marinade into the meat, then refrigerate for at least 1–2 hours or up to overnight.
2. Preheat the grill: Set the grill to high heat. Clean and lightly oil the grill grates before cooking.
3. Grill the vegetables: Slice the onions into ½-inch-thick rounds. Drizzle with olive oil and season with salt and pepper. Grill the onions for about 5 minutes without moving until nicely charred. Char the whole bell peppers over high heat, turning occasionally until blistered on all sides.
4. Finish the vegetables: Transfer the peppers and onions to a cutting board. Slice the peppers into strips and separate the onion rounds into rings. Toss with the remaining 2 tablespoons of Italian salad dressing, season with salt and pepper, and finish with fresh basil.
5. Grill the steak: Remove the steak from the marinade and place it on a plate to allow the excess marinade to drip off. Season with salt and pepper. Grill over high heat for 2 minutes, rotate 90 degrees, and cook for 2 more minutes. Flip the steak and repeat on the second side for another 4 minutes, for a total cook time of about 8 minutes.
6. Finish cooking: Check the internal temperature. For medium-rare, cook until the steak reaches **130°F**. If needed, move it to a cooler area of the grill, close the lid, and continue cooking in 2-minute intervals until it reaches the desired doneness.
7. Rest and serve: Let the steak rest for 5 minutes before slicing against the grain. Drizzle with the remaining Italian salad dressing and serve alongside the charred peppers and onions.
