1 cup (227 g) unsalted butter softened
1 cup (235 g) creamy peanut butter I don't recommend using natural peanut butter
1 cup (200 g) light or dark brown sugar tightly packed
1 cup (200 g) granulated sugar
1 large egg + 1 large egg yolk
1 ½ teaspoons vanilla extract
2¾ cups (345 g) all-purpose flour

00:18 Preheat oven to 350F (175C) and line a 13×9 metal pan with parchment paper or grease and flour the sides and bottom of the pan.
00:35 Combine butter, peanut butter, and sugar in a large bowl and use an electric mixer to beat until light, creamy and well-combined.
02:15 Add egg/egg yolk and vanilla extract, and stir well.
03:47 In a separate bowl, whisk together flour, graham cracker crumbs, baking powder, cornstarch, and salt.

For the tart crust:
00:18 To the basin of a food processor, add flour, sugar, and salt. Briefly pulse to combine.
01:05 Add butter and pulse until coarse crumbs form (about ten 1-second pulses).
02:45 In a separate, small dish, whisk together egg and vanilla. Drizzle over flour mixture, and pulse until dough just begins to cling together.
03:58 Carefully remove from food processor (watch the blade) and shape dough into a disc, wrap in plastic wrap, and chill for 1 hour.
05:00 Roll chilled dough into a 10-11" (25cm) disc and press into a 9" (23cm) tart pan. Prick the bottom all over with a fork, line with parchment paper, and fill with pie weights or dry beans. Freeze for 30 minutes, meanwhile preheat oven to 375°F (190°C).
08:00 Once crust has chilled and oven is preheated, bake crust in center rack of 375°F (190°C) oven for 20 minutes or until edges are light golden brown. Remove parchment and weights (carefully), then bake for an additional 5 minutes (the bottom of the tart should be beginning to turn lightly golden). Prepare lemon filling.
Lemon Filling
11:33 In a medium-sized saucepan, combine eggs, egg yolks, lemon juice, sugar, and salt. Add butter and cook over medium-low heat, stirring constantly, until mixture is thickened and coats the back of a spoon.
13:09 Remove from heat and pour mixture through a fine mesh strainer into a bowl, then pour into tart crust and spread evenly. Cool at room temperature for 1 hour, then refrigerate for at least 6 hours or overnight.
Whipped Cream (optional)
15:05 Combine heavy cream, powdered sugar, and vanilla extract. Beat on high speed until stiff peaks form. Pipe or dollop whipped cream onto tart before serving. I used an Ateco 848 to add the decorative whipped cream on top.
Notes
Tart pan
I do not grease my tart pan. When trying to line the unbaked tart crust with parchment paper (step 5) it is helpful to crumple the parchment paper, uncrumple, crumple again, then uncrumple before using. This helps it fit snugly and more flush into the tart crust.
Filling
The tart crust does not have to be completely cooled before adding the lemon filling, in fact the filling can be added when the crust is hot right out of the oven. Sometimes I’ll begin preparing the lemon filling while the crust is still in the oven.
Storing
Store covered in the refrigerator for up to 5 days. I store my tart in the tart pan and do not remove unless I want to put it on a serving plate.

For the cookie dough:
00:18 Heat-treat your flour: Place flour in a microwave-safe dish and heat for 30 seconds. Stir and use an instant-read thermometer to check the temperature (flour must exceed 160F (71C). If not hot enough, return to microwave and heat in 10-15 second intervals, stirring in between, until at least 160F (71C). Set flour aside to cool.
01:15 To a large mixing bowl, add butter, brown sugar, condensed milk, vanilla extract and salt. Use an electric mixer to cream together ingredients until creamy and well-combined. Scrape the sides and bottom of the bowl, increase the speed to medium-high, and beat for another minute longer.

Condensed milk

Whipped cream
If you’ve ever struggled with whipping cream to stiff peaks, use a metal bowl and freeze it for 15 minutes before adding the cream. Also, it’s very important that your cream be cold!

I did a lot of testing and learned two things that will REALLY gives you those next-level, BEAUTIFUL brownies.
1️⃣ The chocolate makes a difference. Brownies that include melted chocolate in the batter (instead of just cocoa) yield shinier, cracklier tops. Brownie 3 was made with melted chocolate, the other two just used cocoa.
2️⃣ You can't mix too much. At least not when it comes to the eggs and sugar. Vigorously whipping the eggs and sugar helps create a meringue-like, crackly, shiny top.
The first recipe was mixed until just-combined and is the dullest. The second is the same recipe as the first but was well mixed, and it's shinier to show for it. The third uses melted chocolate AND was well-mixed and is the clear winner.

Stretch & Fold

Stretch & Fold

Baking

Notes
To bake the same day:
Follow recipe through step 10. Immediately after transferring dough to pan, preheat oven to 450F (230C). Allow dough to rest uncovered while oven preheats, at least 30 minutes. Once oven is preheated, follow directions in recipe starting with step 13.
Storing
Store in an airtight container at room temperature for up to a week. You may also freeze this bread, I recommend cutting into slices and storing in a plastic Ziploc bag (remove as much air as you can before freezing). If you struggle with freezer burn, you can individually wrap each slice in plastic wrap before closing in the plastic bag.

Notes
Almond flour
While not required, I prefer to use superfine, blanched almond flour. I personally like Bob’s Red Mill brand. Unblanched will work but you will see bits of the almond in the end result.
Tip
I like the Ateco 804 best, but any round open tip will work.
Food coloring
I recommend gel food coloring, I use Americolor gel and typically add 4-5 drops per batch of macaron.
Filling
½ batch of any of my frosting recipes will work nicely in these macarons. My go-to choices are white chocolate buttercream (it’s not too sweet!) or my favorite chocolate frosting.
Storing
Macaron shells will keep in an airtight container at room temperature for 5-7 days or freeze in an airtight container for up to several months. When thawing, allow shells to come completely to room temperature before opening the container or you’ll have moisture on the shells.
Filled macarons will keep at room temperature in an airtight container for several days (assuming a shelf-stable filling) or in the refrigerator in an airtight container for up to 2 weeks. To freeze, first mature macarons (let them sit in the refrigerator in an airtight container for 24 hours) then transfer container to freezer and freeze for up to several months. Thaw in container in refrigerator or thaw at room temperature (do not open container until thawed or you’ll have condensation).

Ingredients
1 ¾ cups all-purpose flour (220g)
¼ cup granulated sugar (50g)
¼ cup light brown sugar, firmly packed (50g)
2 teaspoons cornstarch
1 teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon salt
¼ cup very hot water (boiling or steaming)
¼ cup natural cocoa powder (25g)
¾ cup buttermilk (177ml)
4 Tablespoons unsalted butter, melted
1 large egg, room temperature preferred
1 ½ teaspoons vanilla extract
⅓ cup mini chocolate chips
Glaze
1 cup semisweet chocolate chips
2 ½ teaspoons coconut oil or vegetable shortening

Instructions
Preheat oven to 350F (175C) and lightly but thoroughly grease and flour (or spray with baking spray) a 12 count donut tin. Set aside.
In a large mixing bowl, whisk together flour, sugars, cornstarch, baking powder, baking soda, and salt.
Measure out steaming water into a large measuring cup or a separate mixing bowl. Immediately add cocoa powder and whisk until smooth.
Whisk in butter until combined (it’s OK if small lumps form).
Add egg and vanilla extract to cocoa mixture and whisk well.
Add buttermilk and whisk until smooth.
Add chocolate mixture to dry ingredients and use a spatula to gently fold together until about halfway combined.
Add mini chocolate chips and continue to gently stir ingredients until just combined (do not over-mix or donuts could be dense, dry, and tough).
Drop batter evenly into prepared donut molds (or pour the batter into a piping bag and pipe it in, this will give you neater donuts!).
Transfer to center rack of 350F (175C) oven and bake for 10-12 minutes or until a toothpick inserted in the thickest part of a donut comes out clean or with fudgy crumbs. Allow donuts to cool in pan for several minutes before carefully turning out to a cooling rack to cool completely before covering with glaze.
Glaze
Combine chocolate chips and coconut oil in a small microwave-safe bowl and heat in 25-second intervals, stirring well in between, until chocolate and oil are completely melted and mixture is smooth.
Dip the smooth surface of each donut entirely into the chocolate glaze. Return to a cooling rack for the glaze to set before enjoying. If desired, decorate glaze with sprinkles while icing is still wet.

These donuts taste best the day they are made but may be stored in an airtight container at room temperature for up to 48 hours or in the refrigerator for up to 5 days.
