☐ 2 Tbsp oil
☐ 1/2 stick unsalted butter
☐ 1/2 medium onion (diced)
☐ 1/2 of a 10oz. bag Matchstick carrots (chopped)
☐ 2 minced garlic cloves
☐ 3 Tbsp flour
☐ 4 cups chicken broth
☐ 1 Tbsp sea salt
☐ 1 Tsp Thyme
☐ 1 Tsp Basil
☐ 1/2 Tsp Paprika
☐ 1 Tbsp Dijon mustard
☐ 3 heads Broccoli (cut into sm. florets)
☐ 2 cups Milk & 2 Cups heavy cream OR 4 cups half & half
☐ Cornstarch slurry made with 2 Tbsp corn starch and 4 Tbsp water mixed
☐ pepper to taste
☐ 6 oz. Velveeta cheese (cubed)
☐ 1 1/2 Pkgs. Mild cheddar cheese (I used the 8 oz. pkgs) *shred your own
☐ Enjoy with french bread!
