Epcots Food and Wine Canadian Cheese Soup The Fab 5207 2017-04-04 | Epcot's Food and Wine Canadian Cheese Soup - Published on April 4, 2017Sarah and Peter take their second attempt at one of their all time favorite dishes especially for the Food & Wine festival...Canadian Cheese Soup. What is your favorite Food & Wine item?Ingredients: 1/2 pound of bacon, cut into 1/2 inch pieces1 medium red onion, cut into 1/4 inch pieces3 celery ribs, cut into 1/4 inch pieces4 tablespoons butter1 cup all-purpose flour3 cups chicken stock4 cups milk1 pound grated white cheddar cheese1 tablespoon Tabasco sauce1 tablespoon Worcestershire sauceCorse salt, freshly ground pepper to taste1/2 cup warm beerchopped scallions or chives, for garnishSteps:1. Cook bacon over medium heat in a Dutch oven for 5 minutes2. Add onion, celery and butter; sure until onion softens3. Add flour and cook, stirring constantly, for about 4 minutes over medium heat. Whisk chicken stock and bring to a boil for 1 minute. Reduce heat and simmer for 15 minutes, stirring occasionally.4. Add milk and continue to simmer for 15 minutes. Do not boil.5. Remove from heat and stir in cheese, Tabasco, Worcestershire sauce, salt and pepper until cheese is melted and soup is smooth. Stir in warm beer.6.
