It’s a rainy day at the farmhouse, which means the perfect excuse for a batch baking marathon in my kitchen! Today I’m rolling up my sleeves to stock the freezer with scratch-made staples—fresh sandwich bread, fluffy buns, golden waffles, homemade tortillas, and more.
This is the heart of from-scratch living: making everyday foods with simple ingredients that nourish my family, save money, and bring warmth to our home.
🍞 Real food, slow living, and homemaking from the heart—it’s all right here.

2–3 Tbsp honey

Cover and let rise in a warm spot for about 1 hour, or until doubled in size.
Punch down the dough, shape into a loaf, and place in a greased bread pan.
Let rise again for another hour.
Bake at 350°F for 30–35 minutes, until golden and sounds hollow when tapped.
Let cool before slicing. Enjoy!

Open-Faced Steak Sandwiches: Split sandwich buns in half and place open-face on a parchment-lined baking sheet. Spread each half lightly with cream cheese, then layer with thin slices of fully cooked steak (I used leftover T-bone) and sprinkle generously with shredded Swiss cheese. Toast in the oven just a few minutes until heated through and cheese is melted. Serve open-face or fold into sandwiches, adding barbecue or steak sauce if desired.
Instant Pot Beef & Broccoli with Rice
Ingredients
1 Swiss or round steak (frozen or partially frozen works fine)
4 cups water
2 cups jasmine rice, rinsed
2 cups broccoli florets (fresh or frozen), steamed separately
Sauce:
1 Tbsp olive oil or avocado oil
1 Tbsp sesame oil
4 cloves garlic, minced
1 tsp onion powder
½ tsp crushed red pepper flakes
1 tsp ginger paste
½ cup brown sugar
¼ cup water
½ cup soy sauce or coconut aminos
Place a Swiss or round steak (frozen or partially frozen) in the Instant Pot with 4 cups water. Cook on Manual for 20–25 min, remove and slice thin. Stir 2 cups rinsed jasmine rice into the leftover liquid, place beef on top, and cook 4 more min. Meanwhile, steam broccoli and make sauce: in a saucepan, heat 1 Tbsp olive or avocado oil + 1 Tbsp sesame oil, add 4 minced garlic cloves, 1 tsp onion powder, ½ tsp crushed red pepper, 1 tsp ginger paste, ½ cup brown sugar, ¼ cup water, and ½ cup soy sauce or coconut aminos. Boil 2–3 min, then remove from heat to thicken. Serve rice and beef topped with broccoli and drizzle with sauce.

Farmhouse Sheet Pan Hash (Make-Ahead Friendly):
This hearty “hash” is a farmhouse favorite—simple, adaptable, and full of flavor. It’s perfect for busy nights or lazy weekends, and you can make it ahead to save even more time.
Ingredients:
4 russet potatoes, cubed (about 3 cups)
2 sweet potatoes, cubed (about 3 cups)
1 smoked sausage link (such as kielbasa), sliced
1 bell pepper, chopped
1 small onion, chopped
Optional: chopped garden peppers (like banana peppers) or any veggies you have on hand
Avocado oil
All-purpose seasoning or seasoning salt
Instructions – Oven Method:
Preheat oven to 425°F.
On a parchment-lined sheet pan, toss all ingredients with a drizzle of avocado oil and your seasoning of choice.
Roast for 30–40 minutes, flipping halfway through, until the potatoes are golden and tender.
Stovetop Method:
Heat oil in a large skillet over medium heat. Add all ingredients and cook, stirring occasionally. Cover with a lid partway through cooking to help the potatoes soften faster. Cook until everything is tender and browned (about 20–25 minutes).
Make-Ahead Tip:
You can prep this hash ahead of time by combining all ingredients in a freezer-safe bag. Add oil and seasoning directly into the bag and toss to coat—easy, mess-free prep! Store in the freezer for up to 2 days before cooking (potatoes may begin to brown if stored too long). Cook straight from frozen or thaw overnight in the fridge before roasting or sautéing.
Quick coleslaw for loaded baked potatoes:
Ingredients:
½ cup mayonnaise
½ cup plain Greek yogurt
2 tsp apple cider vinegar
½ tsp celery seed
¼ tsp onion powder
¼ tsp garlic powder
Salt & pepper, to taste
3–4 cups shredded tri-color cabbage mix (or to your desired texture)
Instructions:
In a large bowl, whisk together mayo, Greek yogurt, apple cider vinegar, and seasonings.
Add shredded cabbage and mix until fully coated.
Chill until ready to serve. Use as a side dish or pile it high on top of baked potatoes with BBQ beef and extra BBQ sauce! YUM!

1 tsp. lemon juice
1 tsp. vinegar
1/2 tsp salt
1 tsp. dijon mustard
Carefully place the egg yolk in the bottom of a wide mouth mason jar (do no break the yolk). Add the lemon juice, vinegar, salt, and dijon. Carefully pour over the oil. Place an immersion blender wand directly over the yolk and blend for 10-15 seconds holding in place. Once you see the bottom of the jar beginning to look white like mayo, slowly work your immersion blender up the sides of the jar to incorporate the rest of the oil into your mayo. Enjoy! I store my homemade mayo in the fridge for a week.

**This week on the vlog, we're talking about *abundance vs. lack*—and how choosing to see the good can change everything.** 🌿
Life's been full lately... not of hot water (still waiting on that fix 😅), but of meaningful moments and everyday blessings. In today’s video, come along as we:
• Share a family cattle drive across the farm 🐄
• Bake cookies + preserve garden peppers 🫑
• Make hearty stuffed bell peppers for dinner
• Conquer laundry and dishes (as always)
• Talk kefir water and kitchen experiments
• Reflect on what it means to notice *abundance*, even in imperfect seasons 🌱
From a quiet garden bed to a noisy kitchen full of kids and chores, I’m reminding myself (and hopefully you too) that joy often hides in the messiest moments.

Are you feeling behind this summer? I know I've said this many times to myself recently but today I'd thought I'd address the truth and put us back on track. Right on summer time! Join us for an ordinary day in our farmhouse, feeding hungry bellies, endless homemaking and slowly but surely decorating our farmhouse for the 4th of July!
RECIPES:
Homemade Pancakes:
2 cups flour
1 Tbsp sugar
4 tsp. baking powder
1/2 tsp. salt
2 eggs
1.5 - 1.75 cups milk (I start with 1.5 and then add more if needed)
1 tsp vanilla
1 stick butter, melted
Whisk together dry ingredients. Make a well in the middle and add the wet ingredients. Mix together until well blended but don't over-mix.
Allow batter to rest a few minutes while your pan heats over medium/low heat. Cook pancakes until you see small bubbles on top, flip and cook until golden brown (try to only flip once!) Serve with butter and maple syrup.

🌪 Life doesn’t always go as planned…
This past week, three tornadoes touched down in our small community and it’s been a whirlwind—literally and figuratively. While our home was spared, our land and community are still picking up the pieces. In this video, I’m sharing a heartfelt life update and some reflections on how the unexpected has reminded me of what really matters: faith, family, and the power of community.
If you’ve ever felt like your plans were interrupted or your schedule was completely turned upside down, I hope this video encourages you to slow down, look around, and find purpose even in the pause.
Thanks as always for stopping by!

🍔 Smash Burger Tacos with Special Sauce
Ingredients – Smash Burger Tacos
1 lb ground beef (I may have had more like 1.5)
Garlic salt and black pepper, to taste
16 small flour street-style tortillas
8 slices American cheese (I used half a slice per taco)
Toppings: chopped lettuce, diced tomatoes, onions, pickles, etc.
To Prepare:
Divide the ground beef into 16 small meatballs.
Season each with garlic salt and pepper.
Preheat a large griddle or Blackstone to high heat.
Place each burger ball on the hot surface and top with a tortilla.
Use a flat spatula to press (smash) the burger flat under the tortilla.
Cook for 2–3 minutes until the meat is browned.
Flip each taco so the tortilla is now on the griddle.
Top with a half slice of American cheese and cook for another 2–3 minutes, allowing the cheese to melt and the tortilla to crisp.
Fold into tacos and remove from heat.
Add toppings and finish with a generous drizzle of the special burger sauce.
Special Sauce (Burger Sauce)
Whisk together the following in a small bowl or shake in a mason jar:
¼ cup plain Greek yogurt
¼ cup homemade mayo (or store-bought)
2 tsp vinegar (white or apple cider)
2 tsp mustard
1 tsp onion powder
½ tsp smoked paprika
½ tsp garlic salt
1 tsp honey
3 Tbsp chopped dill pickles
2 tsp dill pickle juice
(makes 16 tacos)

RECIPES:
Pico de Gallo & Guacamole
If you're making pico, you might as well make guac too! These fresh and flavorful condiments are perfect for topping your favorite dishes or enjoying with tortilla chips.
Pico de Gallo
Ingredients:
5-6 Roma tomatoes, chopped into bite-sized pieces
3/4 med red onion, finely chopped (yellow or sweet onion works too)
1 jalapeño, finely chopped (fresh is best; jarred works too—omit for mild pico)
¼ cup fresh cilantro, chopped
1 clove garlic, minced (optional)
Juice and zest of 1 large lime
1 tsp salt
1/2 tsp black pepper
1/2 tsp cumin
Instructions:
In a medium bowl, combine the chopped tomatoes, onion, jalapeño, cilantro, and garlic (if using).
Add lime juice, lime zest, salt, pepper, and cumin.
Stir well and let sit for at least 10 minutes to allow the flavors to meld.
Guacamole
Ingredients:
5-6 ripe avocados, mashed
½ cup prepared pico de gallo
Instructions:
In a bowl, mash the avocados to your desired consistency.
Stir in the pico de gallo.
Mix well and enjoy! When storing leftovers, make sure all air is removed so avocados won't brown as much!
Chicken Verde Enchilada Casserole
A simple, flavorful, and semi-homemade casserole with tender shredded chicken, creamy cheese, and a zesty green enchilada sauce. Perfect for a busy weeknight!
Ingredients:
3 large boneless, skinless chicken thighs (or breasts) – frozen or thawed
1 tsp pepper
1 1/2 tsp cumin
1 1/2 tsp garlic salt
½ lime, juiced
1 cup water or broth
Avocado oil (for greasing)
Corn tortillas
1 can pinto beans (or beans of choice)
2 cups shredded Monterey Jack cheese
1 jar Siete brand green enchilada sauce (or your favorite brand)
Minced onion & chopped cilantro (for garnish)
Plain Greek yogurt or sour cream, pico de gallo, and guacamole (for serving)
Cook the Chicken:
Place frozen chicken thighs (or breasts) in the Instant Pot.
Season with pepper, cumin, garlic salt, and lime juice. Add 1 cup of water or broth to the bottom. Cook on manual mode for 14 minutes (reduce time for thawed chicken).
Once cooked, shred the chicken and set aside.
Assemble the Casserole:
Preheat oven to 350°F (175°C).
Grease a casserole dish with avocado oil.
Layer torn corn tortillas to cover the bottom.
Add shredded chicken, pinto beans, shredded cheese, and a drizzle of green enchilada sauce.
Repeat layers 3-4 times, finishing with cheese on top.
Bake & Serve:
Cover and bake for 25 minutes.
Garnish with minced onion and chopped cilantro.
Serve with Greek yogurt or sour cream, pico de gallo, and guacamole.
Lunch Wrap:
Realgood foods co. brand chicken strips (lightly breaded)
Carb Balance Mission tortillas
Caesar Salad dressing (I used Primal Kitchen brand)
Parmesan cheese, shredded
Romaine lettuce or greens of choice
Instructions:
Top your tortilla with chopped romaine lettuce, cooked chicken strips (chop the chicken if desired) and parmesan cheese. Drizzle over your salad dressing and enjoy. I served with a side or cottage cheese for extra protein and garnished my plate with Peperoncini peppers and kalamata olives.

Come on in and stay awhile, friend — today we’re baking for the week, but more than that, we’re talking about the kind of ‘failure’ that really just means you’re growing. It didn’t all go as planned… but maybe that’s exactly how it’s meant to be.
Have you ever felt like you were “failing” only to realize you were learning all along?
I’d love to hear your heart in the comments. Let’s chat about it below. 💛

✨ Protein Granola with Honey
2 cups old-fashioned oats
1 cup chopped pecans (or less, to taste)
2 scoops unflavored protein powder
1 tsp vanilla extract
½ tsp maple extract
2 tbsp pure raw honey
1 egg white
¼ cup melted coconut oil
Mix well (leaving some clumps of course) and spread onto a baking sheet lined with parchment paper. Bake at 325°F for 10 minutes, stir/flip, then bake 10 more minutes.
Let cool completely to crisp up. Store for up to a week in an airtight jar or container.
Homemade Mayo:
1 egg yolk
1 cup avocado oil
1 tsp. lemon juice
1 tsp.
🍔 Quick Homemade Hamburger Buns
Soft, golden, and ready in under an hour — perfect for busy weeknights!
2¼ Tbsp yeast
1 cup warm water (plus 1Tbsp)
3 Tbsp honey
1 egg (beaten)
3 cups all-purpose flour
1½ tsp salt
⅓ cup avocado oil
Optional: egg white + sesame seeds for topping
Mix yeast, warm water, and honey. Let it rest while you prep the dry ingredients.
In a stand mixer, combine flour and salt. Add the beaten egg to the yeast mixture, then pour it into the flour mixture. Knead 3–5 minutes, slowly adding avocado oil. Add extra flour as needed until dough pulls away from the sides.
Shape into 8 buns (or more for smaller sizes). Cover and let rise for 10 minutes.
Brush with egg white and sprinkle sesame seeds if desired.
Bake at 425°F for about 18 minutes, until golden brown.
🥗 Easy Chicken Salad (Sweet & Crunchy)
A quick, fresh lunch option — perfect for make-ahead meals or sandwiches!
2 cups rotisserie chicken, shredded or chopped
⅓ cup chopped celery
¼ cup chopped pickled red onion (or regular works fine)
⅔ cup red grapes, halved
⅓ cup chopped pecans
Dressing:
½ cup mayo
½ cup plain Greek yogurt
Optional: 3 Tbsp honey for a sweeter twist
1 tsp apple cider vinegar
½ tsp poppy seeds
Garlic salt, salt & pepper to taste
Toss everything together in a large bowl and chill until ready to serve.
Delicious on croissants, sandwich bread, or over greens!

2 cups flour (all purpose)
2 cups oats (old-fashioned rolled oats, not instant)
1 cup sugar
1 cup brown sugar
1 tsp salt
1 tsp baking powder
1 tsp baking soda
1 tsp vanilla
2 eggs
1 cup oil (vegetable oil or canola oil typically... I've also used coconut oil but it does change the flavor a bit)
1-1.5 cups chocolate chips (I often measure with my heart here! Use what you have but today's combo was semi-sweet chocolate chips, milk chocolate chips and butterscotch chips. In the past, I've also done white chocolate chips and caramel nibs! So yummy!)
Bake at 350 degrees for 15 minutes - don't over bake!!
Allow to cool for a few minutes and then cut into squares and enjoy!

There's nothing like a snow day to bring out the cozy vibes in our 1903 farmhouse! ❄️ Today, we’re embracing the chill with heartwarming meals and nostalgic treats.
☕ In This Video:
Start the day with semi-homemade donuts, just like grandma used to make.
For lunch, it’s a chili baked potato bar—the ultimate comfort food!
Dessert? A homemade apple cobbler from our fall harvest and some snow ice cream straight from the backyard.
While the kids juggle homework and backyard snow fun, I’ll be wrapping up the day with a slow and romantic goat cheese chicken risotto for dinner.
The world outside may be freezing, but the warmth of the farmhouse kitchen will wrap you up like a big hug! Grab a warm drink, and join us for a slice of country life. 💕
#CozyFarmhouse #SnowDay #RusticCooking #SimpleLiving #slowliving
RECIPES:
Semi-Homemade Donuts: rustichoney.com/easy-homemade-donuts-3-ways
Baked Potatoes:
Wash and dry your baking potatoes and place on a parchment lined baking sheet. Drizzle with olive oil and sprinkle with salt and garlic salt and then massage until well coated. Bake at 400 degrees for about 30 minutes and then flip them over and continue baking another 30 minutes or so until fork tender. Outside will be slightly crisp and interior fluffy and tender. Baking time will vary on size of potatoes and oven temps.
Homemade Chili:
We made a pot of chili in this video and you can find that recipe in the description box of this video here: youtu.be/qclbjEvg4Ww
Homemade Snow Ice Cream:
1 cup sugar
1/2 cup milk + 1/2 cup heavy whipping cream (or just use all milk like grandma ;) )
1-2 tsp. vanilla extract
Whisk the wet ingredients together and then add in fresh snow and mix until you reach the desired soft serve consistency. Best served right away!
Similar (EASY) Apple Cobbler Recipe: (rustichoney.com/rustic-apple-cobbler)
*The crisp I had made in this video is slightly different and I honestly don't remember the exact measurements, so sorry! It was a late night chopping apples and I just through it together for our freezer stash! I assume it was very similar to this recipe for crisp: allrecipes.com/recipe/24127/apple-oatmeal-crisp
Creamy Chicken Goat Cheese Risotto:
2 large chicken breasts
1-2 Tbsp. Olive Oil
1/2 tsp. Garlic powder
1/2 tsp. Onion powder
Salt + pepper
Cube the chicken breast into bite-size pieces and saute in a fry pan with seasonings until cooked through. Set aside.
1 c. Arborio Rice
4 c. Chicken Broth
1 Tbsp. Butter
1 medium onion diced
2 tsp. fresh minced garlic
In the same pan, add the butter and diced onion. Saute until translucent and then add in the garlic and rice to toast slightly. Add one cup of the broth to deglaze your pan. You can also use wine to deglaze if you have any on hand. Then continue to add one cup of warm broth at a time to the rice allowing it to absorb most of the liquid before adding in more. The result is a very creamy risotto rice.
If needed, use the 1/2 c. extra water to continue the process until the rice is creamy and al dente.
1/2 cup chopped spinach
4 oz. Goat Cheese (or use cream cheese instead)
Once the risotto is finished, add the cooked chicken back in along with the goat cheese and spinach. Stir to combine and melt the cheese into every bite! Top with a drizzle of balsamic glaze if desired. See method below:
Balsamic glaze:
1) Over med/low heat, add the balsamic vinegar to a small saucepan. Allow the vinegar to simmer while stirring (do not burn). Cook until the vinegar begins to thicken and coat the back of a spoon. Remove from heat and allow to cool slightly. As it cools it will continue to thicken into a syrup consistency.

RECIPES:
DROP BISCUITS:(If you want to try the easiest biscuit recipe, try these drop biscuits!): rustichoney.com/country-drop-biscuits
SCRATCH-MADE SAUSAGE GRAVY:
1.5 - 2 lb ground sausage
4 Tbsp. flour
3-4 cups milk
Brown the sausage in a large skillet over med/hi heat.
Drain off any excess grease.
Add 4 Tbsp of flour and cook over medium/low heat for 1-2 min.
Add 1 cup of milk, stirring to deglaze all the cooked on bits from the pan
Add 2 more cups of milk, stir and return heat to med/hi to simmer and thicken. Finally add the last of the milk until you reach your desired gravy consistency.
Salt & Pepper to taste
OVERNIGHT CINNAMON BUNS ("Christmas Morning Rolls"):
Here's the link to my original recipe with the butterscotch pudding mix (sounds weird but it's so good!): rustichoney.com/overnight-cinnamon-buns
Here's the version I made today:
1 stick butter
3/4 cup brown sugar
1/4 cup sugar
1 tsp. vanilla
1/2 tsp. salt
15 frozen dinner rolls
Butter to coat your pan (remember my mistake! Grease your pan well!)
Melt in a small sauce pan the butter, sugars and salt. Bring to a simmer, add vanilla and remove from heat. Pour over the frozen dinner rolls and allow to rise at least 5 hours or overnight covered lightly with a towel or plastic wrap. Bake at 350 for 20-25 minutes. Remove from oven and immediately and very carefully, invert your pan of rolls onto another platter or dish. Cool a few minutes and then top with this cream cheese icing:
CREAM CHEESE ICING:
1/3 bar of cream cheese (3-4oz)
2-3 Tbsp milk
1-2 tsp vanilla extract
About 2 cups of powdered sugar (I tend to eyeball this - add more or less if needed)
Use a mixer to blend the cream cheese and milk first, then add in the vanilla and one cup at a time of the powdered sugar until the desired consistency is achieved to ice your rolls.
SWEET POTATO CASSEROLE:
Inspired by this recipe: thepioneerwoman.com/food-cooking/recipes/a11302/soul-sweet-taters-step-by-step-recipe
MY VERSION (for two large 9 x 13 pans):
10-12 medium sweet potatoes (washed, baked and peeled)
1.5 cups sugar
1.5 cups milk
4 eggs
2-3 tsp vanilla
2-3 tsp salt
(Mix the above together and pour into greased baking dishes)
Topping:
2 sticks of butter (1 cup)
2 cups brown sugar
2 cups pecans
1 cup flour
Use a pastry cutter to break up the butter and mix this crumble together. Could also grate in the butter and mix it up. Top your potatoes with this topping. Refrigerate until ready to bake if making ahead. Bake (from cold) at 400 degrees for 20-30 minutes covered and another 10-20 minutes uncovered until heated through and topping is golden. If baking right away baking time will be much shorter!

RECIPE:
Homemade Waffles:
2 cups flour
1 Tbsp sugar
4 tsp. baking powder
1 tsp. salt
2 eggs
1.5 cups milk (I start with 1.5 and then add more if needed)
1 tsp vanilla
1 stick butter, melted
Whisk together dry ingredients. Make a well in the middle and add the wet ingredients. Mix together until well blended but don't over-mix.
Allow batter to rest a few minutes while your pan heats over medium/low heat. Cook waffles in waffle maker (hopefully you have a nicer one than I do! Haha!) Serve with butter and maple syrup.

We're making a happy fall home today around the farmhouse! I'll be baking, decorating for Halloween and discussing self-care. As moms we tend to always put everyone's needs before our own but today I want to talk a bit more about "selfless self-care" and how our homemaking can be a way to serve our families, make a happy home but also care for ourselves simultaneously.
I hope you enjoy today's video and find inspiration to make your home happy this fall too!

Today we're slowing down in our farmhouse kitchen, cooking up some yummy family meals and talking about the changing of the seasons. We're often in such a hurry to get to the next, new, exciting season without giving much thought to the beauty of the in-between. So today, let's slow down, enjoy the season we're in...even the messy, imperfect ones.

Potato Salad recipe: lecremedelacrumb.com/bacon-avocado-potato-salad/#wprm-recipe-container-20969
Pulled Pork Pickle Pizza:
Pizza dough (see recipe below)
BBQ sauce of choice (I used a sweeter variety for this recipe)
Pulled pork leftovers
Shredded mozzarella cheese
Crunchy dill pickle slices
Bacon crumbles
*optional additions:
- candied jalapeños (or regular jalapeños)
- pickled red onions
I don't measure my pizza toppings but tend to be generous with them! Top your crust with bbq sauce first, then add on the pulled pork, mozzarella and then pickles (and other veggies if desired) and bacon. Bake for 12-14 minutes at 450 degrees.
Pickled red onion:
To a mason jar add thinly sliced red onion. Pour over 1/4 cup sugar and 1 to 1.5 cups of white vinegar. Shake to mix in sugar and then make sure onions are submerged. Refrigerate for at least two hours before use. Store in the fridge.
5 min pizza dough (two crusts):
3 cups flour
1 tsp sea salt
2 1/4 tsp. instant Yeast
1 cup warm water
2 tbsp olive oil
2 tbsp sugar (or honey)
In a stand mixer with the dough hook attachment add the flour and salt. In a separate bowl combine warm water, yeast and sugar until bubbly and sugar dissolved. Turn on the mixer and slowly pour in the water mixture. Continue to run mixer on low and add the olive oil. Blend and knead just until combined and pulling away from the sides of the mixer. Cover and allow to rise for 5 min (longer if not using an instant yeast). This recipe usually makes two smaller pizzas or on every large Stromboli.

RECIPES:
Cinnamon Baked Oatmeal With Streusel Topping:
2 cups oats
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. baking powder
2 tsp. Honey
2 TBSP flax seed meal
1 tsp. vanilla
2 cups milk
1 egg
Streusel topping:
1/4 cup flour
2 TBSP butter
dash cinnamon
2 TBSP sugar
2 TBSP brown sugar
1. Grease a pie pan and preheat oven to 375.
2. Mix together the dry ingredients and pour into the prepared pie pan.
3. Whisk together the milk, egg and vanilla. Pour into the dry ingredients and carefully blend.
4. Bake for 15 minutes at 375. Meanwhile prepare the streusel by melting the butter, adding the sugars, cinnamon and flour. Mix with a fork and then crumble on top of the oatmeal. Continue to bake for another 15 minutes.
5. Optional: Drizzle with a homemade glaze of about 1/2 cup powdered sugar and 1-2 TBSP milk.
Chili Seasoning Mix (I used 4 TBSP per 2lbs of ground beef
4 T. Chili powder
2 T. cumin
1 T. onion powder
1 T. garlic powder
1 T. paprika
2 tsp. salt *I would increase to 1 T next time (I ended up adding more)
1 tsp. pepper
1T. oregano
Chili - Cowboy campfire style
2 lbs ground beef
4 TBSP of chili seasoning mix *recipe above
1 medium onion (I used onion powder this time)
2 tsp. garlic powder
2 TBSP brown sugar (optional: we added a couple more TBSP later on)
1 can dark red kidney beans, rinsed and drained
1 can black beans, rinsed and drained
2 cans diced tomatoes
1 TBSP tomato paste
1 can tomato sauce (I used canned garden tomato juice)
2 tsp. liquid smoke
2 tsp. Worcestershire sauce
Cook the ground beef and chopped onion in a large cast iron dutch oven (or pot of your choice). Once cooked and crumbled, drain off any excess fat. Add the chili seasoning mix (4TBSP of the prepared mix) and any additional seasonings. Then add the tomatoes, sauce, paste and beans. Then finally finish with the sugar, liquid smoke and Worcestershire sauce. Simmer on low heat for at least 20 minutes to allow the flavors to blend and develop. Top with your favorites. I always recommend shard shredded cheddar cheese, plain greek yogurt (or sour cream) and a few candied cowboy jalapeños! Yum!
Homemade cornbread:
1 cup flour
1 cup cornmeal
1/2 cup sugar
1 tsp. salt
2 tsp. baking powder
1 egg
1 cup milk
1/4 c. butter, melted
Grease your pie pan. Combine the dry mixture and then make a well to add the wet ingredients. Blend everything together with a rubber spatula and then transfer batter to the pie pan. Bake at 375 for about 20-25 minutes or until a toothpick comes out clean.
Smoky BBQ (Less Sugar) Meatloaf:
2 lbs ground beef
2 cups rolled oats
2 eggs
1 cup milk
2 tsp. salt
1/2 tsp. pepper
1 small chopped onion (or 1 tsp. onion powder)
1 tsp. garlic powder
2 tsp. chili powder
Topping:
1 cup (Noble Made) less sugar smoky bbq sauce
1 cup (thrive market) ketchup
1 tsp. liquid smoke *optional
1/2 tsp garlic powder
1/2 tsp onion powder
*for a full-sugar recipe I'd add 1/2 cup brown sugar
To a large bowl, add your meatloaf ingredients and mix well. Transfer to a greased casserole dish and press into a loaf to fill the pan. Blend together the topping ingredients and pour over the top of the meatloaf. Bake at 375 for 30-35 minutes or until cooked through.
