Salad dressing ingredients
3 tbsp thai roasted sweet chili paste 1 tbsp coconut sugar 2 tbsp fish sauce 2 tbsp tamarind paste 1 tbsp lime juice
Directions
Let’s start with toasting the dried shrimp. Add them into the pan and stir consistently.
Next, toast the fresh coconut flakes until they turn golden brown. When they are brown, they will become nice, and crunchy with a toasty scent.
Let me show you quickly how to peel pomelo. Split the pomelo into wedges and peel off the white fiber. Gently remove the pink flesh and remove all of the seeds. Set aside.
Pound dried shrimp and set aside.
Make the dressing by mixing all of the ingredients from the salad dressing section and set aside. In the salad dressing bowl, break pomelo into medium size pieces (bite size) and add it in. Mix gently until all of the pomelo pieces are well covered.
Add roasted shredded coconut meat, sliced kaffir lime leaves, roasted peanut and fried shallots into the salad bowl. Mix gently until all of the ingredients are well blended.
Decorate the dish with culantro, red chili and kaffir lime leaves.

1 Medium size chicken 10 cloves garlic ½ c finely sliced lemongrass 3 tbsp oyster sauce 3 tbsp soy sauce 1 tsp Rosdee chicken powder ½ c coconut milk
Pound garlic and lemongrass together into a fine paste. Set aside.
In a large bowl, add the paste, oyster sauce, soy sauce, chicken powder and coconut milk together. Use a spoon to mix all of the ingredients well together before adding in the chicken to marinate for 2-3 hours.
To grill the chicken, dig the surface of the ground, enough to fit a 10 inch round tray around 3 inches deep. Put the tray on the ground. Put a glass beer bottle inside the chicken and stand the beer bottle on the tray (see the video for a better understanding).
Afterward, put a large tint container over the chicken. Put the clay on the side to close all the holes around the container. Cover the container completely with straw and burn the straw. Grill the chicken for about 60 minutes.
During these 60 minutes, add more straws 3 times. Before adding straws, wait until the previous lot is completely burned.

Mix well before adding shallots and mint leaves. Mix again and then it’s done! You can decorate the dish with the rest of mint leaves and fried dried chilies.

Ingredients 500g coconut milk with candle scent or normal coconut milk 6 tbsp sugar 2 tbsp cornstarch ¼ tsp salt ⅓ cup lod chong (tapioca noodle) optional ⅓ cup jackfruit
Add flour, coconut milk, sugar and salt into a pot and stir until flour and sugar dissolve.
Put the pot over low heat and consistently stir so that the flour will not become lumpy.
When the mixture starts to get thicker, thick enough to cover the back of the spatula, turn off the heat and stir until the mixture has cooled down.
Add Lod Chong and jackfruit into the mixture and put the mixture into a tupperware. Put the tupperware into the freezer for 5-10 hours or until the mixture hardens into ice-cream.
Take the ice cream out and rest for 5-10 minutes before serving. Add peanut jackfruit and coconut sticky rice with ice cream and serve.

In a mortar, pound together dried shrimp and toasted peanut roughly, and set aside.
Fired the sliced garlic in rice bran oil until crispy. Then strain out the oil and place garlic and oil in a separated bowl.
In a mixing bowl, add horseshoe leaves, sliced onion, 2 tbsp of oil from fried garlic, and then mix well together.
Next, add fried garlic, all of the nuts, sesame seed and dried shrimp. Add fish sauce, lime juice and chilies. Mix all of the ingredients well together.
Garnish the dish with pounded dried shrimp, crispy garlic and horseshoe leaves.

First of all, in Thai, we call the fruit, Chompoo. Secondly, rose apples don't look/taste/feel like apples, or rose. Maybe the colour can be associated with the rose, and that is it in my opinion. You can see in the picture that the rose apple shape looks rather like a pear shape. It tastes sweet with an absent taste of sour, the texture is juicy, light and crunchy. The fruit comes in various sizes, shapes and colours. In this post I would like to show you rose apples from my neighbor’s backyard, and I will demonstrate the simple way of how to prepare rose apple fruits.

The tree is medium size. Usually when the fruits are ripe, they will be heavily tangled down, which makes it easy to collect. If it’s too high, you can climb up the three and collect or use a fruit collecting stick.
To prepare the fruit, rinse rose apples through water and cut the top and bottom part off. Remove the seeds in the middle, and quarter the fruit vertically. And that is it! Small tips from me, you can refrigerate the fruit first, it tastes very nice after chilling. Tips no.2, keep an eye on fruit worms. Home grown and organic rose apples can have worms if they aren't wrapped properly while they are on their tree. But the worms are harmless so you can just remove the part that was eaten by those guys. Tips no3, Chompoo is a common nickname for Thai women. The last one is not really related to anything but I would like to tell you because it’s kind of a local insight.

Instructions
Clean the pork belly with water and dry it with a paper towel.
Use a knife to cut thinly (½ inch deep) on the pork skin side vertically.
Rub the vinegar thoroughly on both sides of the pork belly.
Rub salt on both sides of the pork belly and leave it to dry for 1 hour.
Set the oven over 250c. When the temperature reaches the point, put the pork belly in, skin side down and let it bake for 25 minutes.
After 25 minutes, flip the pork belly and bake for another 10 minutes.
Remove the pork belly from the oven, let the pork belly rest at room temperature until it completely cools down.
Set a wok or deep bottom pan over add frying oil. Add the pork belly with skin side up, turn on the heat over medium- low heat. Let it heat up at the same time as the oil. Fry for about 8-10 minutes.
Flip the pork belly and fry for another 8-10 minutes or until it krispies to your preferred consistency.
Take the pork belly off the pan and strain out the oil, before slice into bite size pieces and serve.
Note* You can use this crispy pork belly with other dishes as well.

Bruise lemongrass, garlic and turmeric and set aside.

In a pot, add water and set over high heat. Add lemongrass, garlic and turmeric directly into the water. When the water starts to boil, and aroma from the herbs start to come out, you can add the chicken. Close the lid and wait until the chicken is cooked.
Once the chicken is cooked, season the soup with salt and continue to boil the chicken until it’s soft and tender.
Turn off the heat and serve hot with steamed jasmine rice.
Note* In Thailand, we eat every part of a chicken so when we make chicken soup we also add everything. The bones can make the soup taste sweeter and bring out umami flavor.
If you are using free range chickens, it can take more time to cook because their meat are more lean and less fat when compared to farmed chicken, therefore, it takes longer time to become tender.

We make coconut shell charcoal, for fuel and for medical/ household usage. For coconut fruit we drink water, eat their meat, fresh and cooked. Here is what you will need to make coconut milk for a pot of curry:
2 Old coconut - You can see in the video that it has a brown outer shell color. 550 ml warm water
Directions:
To begin with, we are going to open the coconut by using a cleaver knife. Knock the knife abruptly in the middle of the coconut (the middle I mean widthwise, which is the side between bottom and top of coconut where the dots are). If it doesn’t open, don’t worry, keep doing it until it’s open.
To shred coconut, you will need a shredder. At home I use a traditional shredder. The traditional shredder is a small seat with a sharp round metal saw plate at the front. It sounds like a torturer device right?, it actually looks like one, and well it actually is, if you don’t use it properly. People commonly shred the hands and fingers so please be careful if you are a newbie to this equipment. My trick is: shred slowly with medium/mild power, you can start from the rim and work your way toward the center of the coconut shell.
After you are successful with step two, you can carry on and prepare 2 bowls, 1 strainer and a thin cloth. We are going to squeeze coconut milk. To begin, place the strainer over an empty pot and place the thin cloth on the top.
Add shredded coconut into a bowl, and add water. Squeeze the coconut meat with your hands until the liquid turns into a creamy white color, and the texture becomes slightly denser.
Strain the coconut milk over the thin cloth and squeeze out as much coconut milk from the meat as possible. Lastly, squeeze the rest of the milk from the cloth. We are done!
Note:
You can use fresh coconut milk in many dishes such as curry, coconut ice-cream and other Thai desserts.

Let’s begin with chopping the garlic roughly. After the garlic is done, set aside and chop the chilies roughly.
Next step is to prepare dried chilies. Toast the chilies over low heat until fragrance. Add a pinch of salt into the pan while toasting will help prevent the chilies from burning. After the chilies are toasted, we will slice the chili diagonally into 1.5 inches long.
We are now going to prepare the quid by frying them. Set a pan over medium heat and add frying oil. Coat the squid with flour lightly. When the oil is hot, add in the squids and fry until they turn lightly golden. Strain out the oil and set aside.

1kg pork belly (whole piece) 2 tbsp salt 4 tbsp vinegar 1 L oil for frying
Instructions
Clean the pork belly with water and dry it with a paper towel.
Use a knife to cut thinly (½ inch deep) on the pork skin side vertically.
Rub the vinegar thoroughly on both sides of the pork belly.
Rub salt on both sides of the pork belly and leave it to dry for 1 hour.
Set the oven over 250c. When the temperature reaches the point, put the pork belly in, skin side down and let it bake for 25 minutes.
After 25 minutes, flip the pork belly and bake for another 10 minutes.
Remove the pork belly from the oven, let the pork belly rest at room temperature until it completely cools down.
Set a wok or deep bottom pan over add frying oil. Add the pork belly with skin side up, turn on the heat over medium- low heat. Let it heat up at the same time as the oil. Fry for about 8-10 minutes.
Flip the pork belly and fry for another 8-10 minutes or until it krispies to your preferred consistency.
Take the pork belly off the pan and strain out the oil, before slice into bite size pieces and serve.
Note* You can use this crispy pork belly with other dishes as well.

3-4 medium-size prawn 1 crab 2 squids 3-4 mussels 5-6 clams 100g fish filet sliced into dice (5-6 pieces) 2 stalks of lemongrass bruised and chopped into 2 inches long. 5 shallots bruised 5 slices galangal 5 leaves kaffir lime 1 hand full of holy basil leaves 1 tbsp bird-eye chilies 5 pieces toasted dried chilies 2 tbsp fish sauce 3 tbsp lime juice ½ tsp salt 500 ml water
Instructions Put water and salt into a pot. When the water is boiling, add galangal, lemongrass, kaffir lime leaves and shallots.
When the water starts to boil again, add all of the seafood. Don’t stir because it will make the soup taste fishy. Let the water come to a boil without touching.
When the water is boiling again and the seafood is cooked, add bird-eye chilies as much as you want and season with fish sauce.
Turn off the heat, add lime juice and follow by basil leaves. Stir until the ingredients are mixed well together and serve.

4. To season the dish, add oyster sauce, soy sauce, and sugar. Keep stir-frying, and at this point, if the pan gets dry, you can add some water. Not too much.
5. After 1 minute, add spring onion and followed by sliced chilies. Stir-fry for another 30 seconds, then turn off the heat and serve hot with steamed Jasmine rice.

5. Add Jinda chili and stir for a few seconds before adding shrimp paste. After you add shrimp paste you can use the spatula to spread the shrimp paste into small pieces and consistently stir together with the rest of the ingredients in the pan.
6. Season the dish with sugar, and add water and Morning Glory. Stir-fry consistently until all of the water evaporates. Serve hot with steamed Jasmine rice and enjoy.

Instructions
1. Mix all of the ingredients together into a bowl.
2. Make the mixture into ball shapes before flatten them with your hands. Keep doing this until you finish with all of them.
3. Set frying oil over medium heat. When the oil is hot, add in pork cakes gently and make sure not to overcrowd them. Don’t touch the cakes often, you only need to flip when the bottom turns golden brown. When the bottom side turns brown, you can flip and do the same thing again.
4. Strain the oil from the pork cake before serving it with steamed jasmine rice or have it as appetizers.

Directions
1. Slice Lemongrass, galangal, Turmeric, Finger roots into small pieces. Set aside.
2. Chop dill into 1.5” long, lengthwise.
3. In a mortar, pound garlic, chilies and all of the herbs from number 1 into a rough paste.
4. Set a pan over medium heat and add cooking oil. When the oil is hot, add the herb paste and stir-fry until fragrance.
5. Add chicken and stir for a few minutes before season with oyster sauce, fish sauce and ½ tsp sugar. Then add water. Let the chicken simmer until soften down and 2/3 of the water has evaporated.

INGREDIENTS • 8 Small squids • 200g Minced pork or other meat you prefer • 5 Cloves of garlic • 1 Tsp Black Peppercorn • 3 Coriander root • 2 Tbsp Soy sauce • 2 Tbsp Oyster sauce • 1 Tsp Salt • 1 Tbsp Fish sauce • 0.5 L Water • 1 Tbsp Bird-eye chilies • 3 Stem Culantro • 2 Tbsp Lime juice
DIRECTIONS 1) Clean the quids very well. Remove the purple skin by rubbing on the surface of squid meat lightly.
2) Pound black peppercorns, coriander roots and garlic together in a mortar into a rough paste. Separate the paste into 2 parts.
3) In a medium bowl, add minced pork, 1 part of ground paste, oyster sauce, soy sauce, and salt. Mix all of the ingredients well and let the pork marinate for 5 minutes.
4) Stuff the marinated pork minced into each squid and slice the squid into 3 stripes diagonally.
5) Put a pot or a pan over high heat, add water and another part of ground paste into the pot. Let the water boil before add the stuffed squids.
6) When the squid is cooked, season the soup, turn off the heat, garnish with culatro leaves and serve with steamed jasmine rice. ....................................................................................................

This is my favorite Thai beef salad, Nuea Yang Nam Tok (เนื้อย่างน้ำตก) which in Thai translates to waterfall grilled beef. It's one of the most delicious dishes from North East of Thailand (Isaan). Nam tok Nuea is very similar to Thai laab, a minced meat Isaan salad. But instead of using minced meat, grilled steak is the main ingredient. See how I made mine and you can try this at home. Stir-fly for 1 min until it aroma 5. Add scallops, fish sauce, soy sauce, oyster sauce and a little bit of water. 6. Add holy basil leaves and sliced chilly.
