Tortilla Time: Buckwheat tortillas? Nathan Reynolds (The Linen Railroad) 2026-02-16 | Many of you know Chelsea has been on an intense healing journey the past few years trying to heal her body from devastating mold toxicity. After seeing a new doctor and embarking on a whole new treatment protocol these past few months, she has had to make some major diet changes in order to reset her body and heal . Join Chelsea and her spunky daughters for some tortilla time in the kitchen, as they attempt to liven up Chelsea's strict Candida diet and make a first ever Buckwheat tortilla! Fresh-milled Whole Wheat Tortilla Recipe * 1 +1/4 cup of warm water if using honey -or- ( 1 +1/3 cup warm water if using no honey) * 2 tsp Sea Salt* 1/2 cup Olive Oil * 4 cups of Fresh Milled Wheat Flour of your choice ( you may need a little more if using Spelt- Spelt is very sticky!)* 2 Tbsp Honey ( can be substituted for raw cane sugar or xylitol or none - just adjust hydration as stated above)***Helpful tools but not required- Electric tortilla press, Kitchen Aid stand mixer, Baking drying racks*If you don’t have a tortilla press, no worries, you can just roll these out by hand with a rolling pin ( dust off any excess flour before frying ) and pan fry them in coconut oil and they are delicious!*I also use my Kitchen Aid Mixer to make the dough, but you can always make it by hand. 1. Combine warm water , sea salt, olive oil and honey in a stand mixer. Mix well until combined. 2. With the mixer on low, add the whole wheat flour 1 cup at a time until all flour is combined. 3. Knead the dough in mixer for 3-5 minutes ( or by hand) until moisture is more distributed. ( it is a sticky dough, but if it is too sticky to handle ( using spelt) you can add a little more flour just don’t over do it or your tortillas will be stiff and Wont expand or stretch properly . 4. Rest the dough in the bowel for 10 minutes to allow extra moisture to be absorbed and it allows the dough to be very pliable. (I cover a bowl with a tea towel.)5. Form the dough into small rounded ball pieces( 1.5-2 in balls) and place onto a parchment paper lined pan- if using tortilla press. If dough is too sticky to handle you can lightly flour your hands to form the balls. 6. Let the balls rest for 10 min while the tortilla press is preheating. Set up a tortilla station- you will want some kind of zone to space out tortillas and let them cool. Drying racks work great and if you don’t have them , I use an oven rack! haha7. Place tortilla balls on press, a little higher up on the plate from the center. As you close the press the ball slides down to center and it makes for a perfect tortilla. Press times and pressures can vary per person and press. **We like to do 3-5 sec - then we open it up and flip it then cook for another 3-5 sec. I use my fingers - but Be VERY careful not to burn yourself when flipping - they are extremely hot. My daughters like to wear ski gloves HAHA ( do not wear plastic gloves that will melt- a plastic spatula to flip it may be the safest choice) . The tortillas cook very quickly and sometime the press makes a squeaking sound- that’s your sign to stop and flip ! Don’t press too hard for too long or let the squeaking get too loud- that is from steam pressure building up and it can rip apart the tortilla. If you have some bad ones or torn ones , we call them “ Scrapples” haha and it’s a wonderful opportunity for all of your hungry friends and family members to sample your work. The Kids just love them . Just play around with it until you get the hang of it and most of all have fun! Enjoy!!**If you don’t have an electric tortilla press, after step # 4. Flour a surface and rolling pin and roll the tortillas out by hand. Then pan fry them. We prefer the taste of coconut oil, but olive oil works great or you can always just use what you have on hand . Make sure to really dust off any excess flour from the tortilla before cooking as the extra flour in the pan will build up and burn. Buckwheat Tortillas:*. 4 cups Fresh-milled Buckwheat flour*. Water ( ahhhh I can't remember how much spring water. I'm so sorry guys) I think it was maybe 4+1/2 -5cups - I'm just not sure. I added enough water slowly to make a thick batter /dough . I did not want a runny batter. if I make these again I will edit this!)* sea salt to taste- I think I used at least 2 teaspoons but maybe more. the original recipe I used was 1+1/3 cup buckwheat flour and 2 cups water- but I did not use this much water to flour ratio. I didn't want runny batter because I was using the press, it's probably fine to use this ratio if you're cooking them in a frying pan . I also tripled this recipe above. Have fun with it and experiment!:) I also may try adding a little oil to the recipe next time to make them as close to my other tortilla recipe as possible and add some moisture.
