Ingredients:
* Butter – 250 g
* Dates – 300 g (chopped)
* Black tea – 1 cup (strained, strong brew)
* Maida (all-purpose flour) – 250 g
* Rava (semolina) – 50 g
* Sugar – 250 g
* Eggs – 3
* Vanilla essence – 2 tsp
* Baking powder – 1 tsp
* Baking soda – ½ tsp
* Milk – 1 cup
* Salt – a pinch
* Almonds – 50 g
* Cashews – 50 g
* Raisins – 50 g
* Walnuts – 50 g
Method:
1. Prep the Dates: Chop the dates into small pieces and soak them in the warm black tea. Let them sit for 30 minutes – this makes the dates soft, plump, and full of flavor.
2. Cream the Butter & add others: In another bowl, whisk butter until light and fluffy. Add eggs one by one, beating well after each addition. Stir in vanilla essence. Add maida, rava, baking powder, baking soda, and a pinch of salt.
3. Combine: Gently fold in the flour mixture, alternating with milk, until smooth. Add the soaked dates (with the tea) and mix well.
4. Nuts & Raisins: Toss the almonds, cashews, walnuts, and raisins and fold them into the batter.
5. Bake: Pour into a greased and lined cake tin. Bake at 170°C (340°F) for 40–50 minutes, or until a skewer inserted comes out clean.
6. Cool & Serve: Let the cake cool completely before slicing.

* Brew your tea strong – it adds a deep, malty flavor.

- 2-3 tbsp cream cheese (optional)
- A handful of mint leaves, chopped
- A handful of coriander leaves, chopped
For Finishing:
- 2 tbsp milk (for brushing before baking)
- Sesame seeds (optional, for garnish)
- 1 tbsp butter (for brushing after baking)

1. Prepare the Dough:
1. In a bowl, mix sugar, butter, and yeast with warm milk. Let it sit for 5-10 minutes until frothy.

3. In a large mixing bowl, combine the flour and salt. Gradually pour in the yeast mixture.

2. Make the Chicken Filling:
1. Heat oil or butter in a pan over medium heat. Sauté the onions and green chilies until translucent.
2. Add carrots and mushrooms, cooking until softened.
3. Stir in the shredded chicken, salt, pepper, and chili powder. Mix well.

3. Assemble the Buns:
1. Punch down the risen dough and knead it again briefly.
2. Divide the dough into equal portions (10-12 pieces).
3. Roll each portion into a small circle. Place a spoonful of the filling in the center.
4. Gather the edges of the dough and pinch to seal the bun. Place seam-side down on a baking tray lined with parchment paper.
4. Final Proofing and Baking:
1. Cover the buns with a cloth and let them rest for 20-30 minutes.
2. Preheat your oven to 180°C (350°F).
3. Brush the tops of the buns with milk and sprinkle sesame seeds on top, if desired.
4. Bake for 15-20 minutes, or until golden brown.

Sweet Panniyaram Recipe
Ingredients:
- 2 cups raw rice batter
- ½ cup grated jaggery syrup
- 1 tablespoon ghee (for cooking)
- 1 cup grated coconut
Step-by-Step Process:
1. Prepare the Sweet Batter:
In a bowl, take 2 cups of the batter. Add ½ cup grated jaggery syrup. Stir the mixture well until the jaggery dissolves completely.
2. Heat the Paniyaram Pan:
Heat a paniyaram pan on medium heat. Grease each of the molds with a small amount of ghee.
3. Cook the Panniyarams:
Pour the sweet batter into each mold, filling them about three-quarters full. Cover the pan and let them cook on medium heat for 3-4 minutes, or until the edges turn golden.
4. Flip and Cook Again:
Use a spoon or skewer to gently flip each panniyaram. Let them cook for another 2-3 minutes until both sides are golden and cooked through.
5. Serve:
Once they are golden and crisp, remove the sweet panniyarams from the pan. Serve warm as a sweet snack or dessert.
Savory Panniyaram Recipe
Ingredients:
- 2 cups raw rice batter

2. Sauté the Vegetables:
Add 1 finely chopped onion and 1 green chili. Sauté until the onions turn translucent.
3. Mix with the Batter:
Add the tempered mixture to 2 cups of the batter. Mix well and add salt to taste.
4. Heat the Paniyaram Pan:
Heat a paniyaram pan and grease each mold with a little oil.
5. Cook the Savory Panniyarams:
Pour the savory batter into each mold, filling them about three-quarters full. Cover the pan and cook on medium heat for 3-4 minutes.

1. Heat oil: In a pan, heat 1 tbsp of oil.
2. Tempering: Add mustard seeds and urud daal and let them splutter.
3. Sauté onions: Add finely chopped onions and sauté until golden brown. Add dried red chilies, green chili and curry leaves, and sauté for a few seconds. Sprinkle salt to taste,.
4. Combine semiya: Add the steamed ragi semiya to the pan, and gently mix everything together.
5. Serve: Enjoy hot!
Sweet Ragi Semiya:
1. Add coconut and sweetener: Once the ragi semiya is steamed and ready, transfer it to a serving bowl.
2. Topping: Sprinkle coconut shavings and jaggery powder or sugar directly over the semiya.
3. Serve: Gently mix to combine and serve immediately as a sweet treat.

- Pour water into the pan in a 1:1 ratio with the semiya. Add the leftover chicken gravy (or any leftover meat or gravy you have). This will enhance the flavour and add depth to the dish. Stir well to combine.
5. Add Cashews and Seasonings:
- Add roughly chopped cashews to the mixture and let it simmer. Then, add 1/2 teaspoon of turmeric and salt to taste. Mix everything together.
6. Cook the Semiya:
- Add the roasted semiya to the pan and mix well, ensuring the semiya is fully immersed in the liquid. Cover and let it cook on medium heat until the semiya absorbs all the gravy and flavors. Stir occasionally to prevent sticking.
7. Finish with Ghee and Coriander:
- Once the semiya has cooked and absorbed all the liquid, add 3 teaspoons of ghee for extra richness. Mix gently to coat the semiya evenly.
- Garnish with freshly chopped coriander leaves and mix. For extra flavor, you can also add some mint leaves at this stage.
8. Serve Hot:
- Your Chicken Semiya is ready to be served! Enjoy this delicious and comforting dish with family and friends.

- 7 cups water
- 4 cloves
- 4 cardamom pods
- 2 bay leaves
- 1-inch cinnamon stick
- Salt to taste
For the Chicken Marinade:

- 2 teaspoons red chili powder
- 1 teaspoon garam masala powder

For the Biryani:
- 4 large onions, thinly sliced
- 3 tomatoes, chopped
- 5 green chilies, slit
- whole spices cinnamon stick -3 inch, cardamom-8, cloves -8, bay leaves-3
- 1 cup fresh coriander leaves, chopped and mint leaves, chopped
- 2 tablespoon ginger-garlic paste
- 1 teaspoon pepper powder
- 2 tablespoons chilli powder
-50 ml oil & ghee ( add more if necessary)
- Saffron strands soaked in 1/4 cup warm milk . Grind to get nice colour
- yogurt-50 ml
- Fried onions (for garnish)
- A handful of cashew nuts and raisins (optional)
- Juice of 1 lemon
Instructions:
Preparing the Rice:
1. Wash the basmati rice thoroughly until the water runs clear. Soak it in water for about 30 minutes.
2. Boil 7 cups of water in a large pot. Add cloves, cardamom, bay leaves, cinnamon sticks, and salt.
3. Add the soaked rice and cook until the water evaporates. rice will be 70% cooked (it should still have a bite to it).
Marinating the Chicken:
1. In a large bowl, combine the ginger-garlic paste, red chilli powder, turmeric powder, garam masala powder, and salt.
2. Add the chicken pieces to this mixture, coat them well, and marinate for at least 1 hour (preferably overnight for better flavor).
Cooking the Chicken:
1. Heat oil or ghee in a large, heavy-bottomed pan. Add the whole spices
2. Add the sliced onions and sauté until golden brown. It might take more than 20 minutes. Keep some for garnish
3. Add the ginger-garlic paste and green chillies. Cook until the raw smell disappears.
4. Add the chopped tomatoes and cook until they turn mushy, Add the chopped coriander, mint leaves, chilli powder, yoghurt, nuts and raisins. Mix well and cook for a few more minutes. Adjust salt as needed.
5. Add the marinated chicken and cook on medium heat until the chicken is 80% cooked.
6. Add the lime juice and 50 ml water and wait till the oil separates.
7. Layer the cooked rice on top of the masala.
8. Add Fried onions and add a layer of rice .9. Sprinkle the saffron milk, and fried onions.
10. Cover the pan with a tight-fitting lid or seal it with aluminium foil to trap the steam.
6. Place the pan in the oven for 20 minutes at 180 degrees celsius or on a low flame (you can use a tawa underneath to prevent direct heat) and cook for 25-30 minutes.
Serving:
1. Let the biryani rest for 10 minutes before opening the lid.
2. Gently fluff up the rice and Serve hot with raita, and brinjal chutney.

- 300 grams Jaggery
- Water (for dough and diluting jaggery)
- 1/2 coconut, grated (for garnish)
- Salt, according to taste

1. Prepare Jaggery Syrup:
- In a saucepan, dissolve the jaggery in a little water over medium heat until it forms a syrupy consistency. You can strain the syrup to remove any impurities if necessary. Set aside to cool down.
2. Make Dough:
- In a mixing bowl, take the roasted rice flour.
- Gradually add the jaggery syrup to the rice flour and mix well.
- Add water gradually (using the 1:1 ratio of water to rice flour) to the mixture and knead it into a smooth dough. The consistency should be such that you can make small bats/balls out of it without it sticking to your hands.
- Use ghee/oil if it's sticky.
3. Shape the Kolukattai:
- Take small portions of the dough and shape them into bats or balls.
4. Steam the Kolukattai:
- Place the shaped kolukattai in a steamer basket or on a greased plate.
- Steam them for about 10-15 minutes until they are cooked through. They will become slightly translucent when done.
5. Garnish and Serve:
- Once cooked, remove the kolukattai from the steamer.
- Garnish with grated coconut on top.
6. Serve:
- Jaggery kolukattai is best served warm or at room temperature. Enjoy this delicious South Indian sweet as a snack or dessert during festivals or anytime you crave something sweet!

Ingredients:
- 1 cup black glutinous rice
- 1 cup jaggery
- 1/2 cup grated coconut
- 1 tablespoon poppy seeds
- 1/4 cup moong dal (yellow lentils)
- 2 cups water
- 1 tablespoon ghee (optional)
Instructions:
1. Prepare the Black Glutinous Rice Flour:
- Rinse the black glutinous rice thoroughly.
- Soak the rice in water for 4-6 hours.
- Drain the soaked rice and spread it on a clean cloth or tray to dry completely.
- Once dried, grind the rice into a fine flour using a blender or grinder. Set aside.
2. Prepare the Jaggery Syrup:
- In a saucepan, combine jaggery and 1 cup of water.
- Heat the mixture over medium heat until the jaggery is completely dissolved, stirring occasionally.
- Once the jaggery is dissolved, strain the syrup to remove any impurities.
- Return the strained syrup to the saucepan and add grated coconut and poppy seeds. Mix well.
3. Prepare the Moong Dal:
- In a separate pan, dry roast the moong dal until it turns slightly golden and aromatic.
- Add 1 cup of water to the roasted moong dal and let it simmer until the dal is cooked through and the water is absorbed. Set aside.
4. Combine Ingredients:
- Add the cooked moong dal mixture to the jaggery syrup with coconut and poppy seeds.
- Mix well and bring the mixture to a simmer over low heat.
5. Make the Dough:
- Gradually add the black glutinous rice flour to the jaggery and moong dal mixture, stirring continuously to prevent lumps from forming.
- If the mixture is too sticky, you can add ghee to make it more manageable. It should form a soft dough-like texture.
6. Shape and Steam the Kolukattai:
- Take small portions of the dough and shape them into small dumplings or balls.
- Place the shaped kolukattai on the steaming pan.
7. Steam:
- Steam the kolukattai in a steamer for about 15 minutes, or until they are cooked through and firm to the touch.
8. Serve:
- Once steamed, allow the kolukattai to cool slightly before serving.

2. Blend Shallots, garlic, ginger, & green chilli & add to sauteed onions. Add turmeric powder, red chilli powder, coriander powder, cumin powder, and salt. Cook for a minute to release the flavours.
3. Add cleaned crabs to the spice mix. Coat the crabs well with the spices.
4. Pour in lemon juice and stir. Cook for 5-7 minutes on medium heat until the crabs start to turn orange.
5. Cover the pan and let it simmer until the crabs are fully cooked, stirring occasionally.
6. Sprinkle fried onions and coriander leaves (optional) over the crab masala. Cook for an additional 2 minutes.
7. Serve hot with steamed rice or your choice of bread.

2. In a pot, heat up some oil and saute the onions. add turmeric powder.
3. Add water and the glutinous rice to the pot and stir well, ensuring the turmeric coats the rice evenly, add some salt accordingly.
4. Bring the mixture to a boil over medium heat, then reduce the heat to low, cover, and simmer until the rice is cooked and has absorbed the flavors (approximately 15-20 minutes).
5. While the rice is cooking, heat a bit of oil in a pan and fry the chicken or fish until golden brown.
