8x The Juice 10x The Flavour - Cocktail Super Juice

People are probably going to argue about the 'origin' of this recipe - Mostly because that's what humans do; Argue. All I can tell you, is that on our travels through India; this dish was on the menu called Chicken tikka or chicken masala all made essentially the same, with slightly different spicing by region. It's origins are most likely in the Punjab region, and not Glasgow or anywhere else in the UK.
Chicken marinade:
500g boneless chicken, cut up
Pinch salt
1 mL (1/4 tsp) turmeric powder
5 mL (1 tsp) Kashmiri red chilli powder
5 mL (1 tsp) coriander powder
2 mL (1/2 tsp) garam masala
60 mL (¼ cup) plain yogurt
Gravy:
2 green peppers, chopped
2 mL (1/2 tsp) cumin
3-4 green chillies, sliced
15 curry leaves
2 medium onions, chopped
10 mL (2 tsp) ginger garlic paste
Cashew paste- 12 blanched cashews
Pinch turmeric
5 mL (1 tsp) Kashmiri red chilli powder
2 mL (½ tsp) coriander powder
2 medium tomatoes, chopped
250 mL (1 cup) water
Handful crushed Kasuri Methi
Method:
Heat a pan and add 2 Tbsp oil.
Fry the marinated chicken pieces 5-6 mins, 2-3 mins on each side .
With the chicken still in the pan, add the green pepper and fry a couple minutes more.
Remove and set aside.
Heat oil and add the cumin
Then add the sliced green chillies and curry leaves, give a stir and then add the chopped onions.
Mix and fry on medium heat for 7-8 mins till light brown and then add the ginger garlic paste.
Mix and fry on low heat for 2 mins.
Now add the cashew paste, the spice powders other than garam masala powder & kasuri methi.
Add a splash of water and mix and cook on low heat for 2-3 mins till oil separates.
Add the chopped tomatoes and a pinch of salt and mix and cook on low heat for 3-4 mins.
Now add the fried chicken and green pepper pieces and mix and fry on medium heat for 2 mins.
Add around 1 cup (200-225 ml) water and cover & cook on low heat for around 12 mins
Now add garam masala powder & kasuri methi.
Mix and simmer for 2-3 mins.
Garnish with chopped coriander leaves and serve.

1.75 oz tequila reposado
2/3 oz sweet vermouth
1/2 oz Maraschino liqueur
1 dash bitters
1 dash simple syrup
Stir all ingredients in an ice-filled mixing glass and strain into a chilled coup or martini glass.

Ingredients:

Method:

This is a super easy vegan chickpea curry recipe, that molds together a great depth of spice and flavour.
Ingredients:
30 mL (2 Tbsp) oil
10 mL (2 tsp) coriander seeds
5 mL (1 tsp) cumin seeds
1 large onion, diced
1 to 3 serrano peppers, diced
3-4 garlic cloves, minced
Thumb sized piece fresh ginger, minced or grated
15 to 20 fresh curry leaves
Pinch black pepper
7 ml (1½ tsp) curry powder
10 mL (2 tsp) coarse salt
5 mL (1 tsp) ground coriander
2 mL (½ tsp) ground cinnamon
1 mL (¼ tsp) turmeric
2 tomatoes, chopped
250 mL (1 cup) coconut milk
250 mL (1 cup) water
2 (540 mL or 19 Imperial ounces) cans chickpeas, drained and rinsed
45 mL (3 Tbsp) tahini
10 mL (2 tsp) garam masala
Method:
Heat the oil in a sauté pan, and add the cumin and coriander seeds.
Stir constantly for about 30 seconds and then add the onion, and chillies.
Fry until the onions are translucent.
Stir in the garlic, ginger and curry leaves, cook for 2-3 minutes.
Add ground spices and stir to incorporate.
Add tomatoes and cook for a few minutes until tomatoes are soft.
Pour in chickpeas, coconut milk, water, and tahini.
Stir well and bring to a simmer.
Cover and simmer for about an hour.
Just before serving, stir in the garam masala and let simmer another 10 -15 minutes.

Welcome back to the kitchen and Sunday morning and the Old Cookbook Show! Join us as we revisit Morrison Wood's collection of recipes from his syndicated column, "A Jug of Wine." These recipes are filled with stories from Wood's life, making each dish a journey through culinary history. Today, we're making a classic New England Rum Pie, a delightful rum flavoured cheesecake in a graham cracker crust. Follow along as we decode this vintage recipe and share some tips for modernizing it.
NEW ENGLAND RUM PIE
*Crust
18 graham crackers
¼ lb. butter
⅓ cup sugar
Dash cinnamon
Filling
4 small pkgs. cream cheese
½ cup sugar
2 eggs
1 tbsp. rum
Topping
1 cup sour cream
Dash cinnamon
3 tbsp. sugar
1 tbsp. rum
Make a crust of 18 graham crackers, crumbled, ¼ pound of butter, melted, ⅓ cup of sugar, and a dash of cinnamon. Line a pie tin with this. For the filling, mix together 4 small packages of cream cheese, ½ cup of sugar, 2 beaten eggs, and 1 tablespoon of rum. When thick as cream, pour the filling into the crust and bake in a 375-degree oven for 20 minutes. In the meantime, mix together 1 cup of sour cream, 3 tablespoons of sugar, and a tablespoon of rum. Spread this mix on the baked pie and cook 5 minutes more in the 375º oven.

This was a 3Kg (6.5 Lb) boneless rib roast - ‘Ungraded’ Mexican beef. Best guess; this was at the bottom of Canada AAA grade (American Choice), but was more likely Canada AA grade (American Select).
The roast was salted and then left uncovered in the fridge for 24 hours.
Before smoking it was coated with our Montreal Steak Spice rub mix.
I cooked it on a pellet smoker set to 250ºF, using a mix of hardwood pellets. Unwrapped to 160ºF internal, then I wrapped it with some extra beef fat and continued on the smoker to 200ºF. I then let it rest on the counter for about an hour.
All told this took 9 hours.

I took a little trip to Austin Texas to hang out with the Whiskey Tribe at Crowded Barrel distillery. They had followed our recipe for 1886 Coca Cola, fermented it and I was there for the distillation.

30 mL (2 Tbsp) butter, softened
1 egg
30 mL (2 Tbsp) cooking molasses
For the Glaze:
60 mL (¼ cup) icing sugar
5 mL (1 tsp) bourbon
Method:
Preheat oven to 190ºC (375ºF)
Grease and flour two 1 cup mini Bundt pans.
In another bowl whisk together flour, baking powder, baking soda, pepper, ground ginger, cinnamon, allspice, salt, and candied ginger.
In another bowl whisk together sugar, butter, molasses, and egg.
Then whisk the flour mixture into the butter mixture.
Divide into prepared Bundt pans.
Bake for 15-20 minutes.
Let cool for 10-15 minutes before removing cakes from pans.
For the glaze mix together icing sugar and bourbon; pour over cakes just before serving.

In today's episode, we're diving into a recipe from the "Household Cookery Recipes" cookbook, courtesy of the Northern County's Training College of Domestic Science. Join us as we explore the origins and variations of a classic recipe called "Singin' Hinny" (pronunciation mysteries included!). Watch as we attempt this traditional recipe, discussing its regional differences and historical context in relation to Welsh Cakes. Despite a few kitchen mishaps, we're excited to share our tasting experience and thoughts on this unique dish. 1 lb. Flour.
1 pinch Salt.
4 ozs. Lard.
4 ozs. Butter.
1 teaspn. Baking Powder.
4 ozs. Lard.
6 ozs. Currants.
Sufficient Milk to make a stiff paste.
Rub the lard and butter into the flour, add salt, baking powder and currants.
Mix to a stiff paste with milk.
Roll into one large round cake about finch thick, place on a girdle and cook slowly until the first side is well browned; slip a cake turner under and turn onto the other side and cook it also till browned.
The girdle usually requires frequent turning round.
After the second side is cooked the cake should be again turned over and allowed to cook for a further few minutes.
When cooked, place the cake on pastry board, cut into squares, split and well butter. Serve hot.
Instead of making one large cake it can be cut into rounds with a cutter, about 2 ½ to 3 inches

Put a tablespoonful of butter into a dish, then a layer of bread cut into thin slices; on top of it put a layer of sliced cheese, and over the whole pour a mixture of three eggs and a cupful of milk. Bake in the oven until light brown on top. It needs very little heat underneath and ought to brown in fifteen minutes. It is delicious if the oven is in the right condition.

Curried Red Lentil Stew
Ingredients:
5 mL (1 tsp) cumin seeds
5 mL (1 tsp) coriander seeds
4 cardamom pods
30 mL (2 Tbsp) oil
1 onion, chopped
2 long green chili peppers, chopped
2 cloves garlic, minced
2 mL (½ tsp) turmeric
10 mL (2 tsp) curry powder
Salt to taste
5 mL (1 tsp) Kashmiri chili powder
2 tomatoes, chopped
250 mL (1 cup) red lentils, rinsed / drained
250 mL (1 cup) water / stock
250 mL (1 cup) coconut milk
Method:
Heat up a sauté pan to medium heat.
Toast the cumin seeds, coriander seeds, and cardamom pods just until fragrant, then transfer to a mortar and pestle and gently crush.
Then, coarsely crush using a pestle and mortar
In the same heated pan; add the oil and sauté the onions until translucent.
Add the garlic and chili peppers; and cook anther 2-3 minutes.
Stir in the toasted crushed spices, turmeric, curry powder, salt, and Kashmiri chili powder.
Stir in the tomatoes, red lentils, coconut milk, and water
Bring to a boil, turn the heat to medium and cover and cook for about 10 - 15 minutes.

1¾ cups Grape-Nuts
3 eggs, well beaten
2¼ cups milk
3 tablespoons melted butter
I cup nut meats, finely chopped
1½ tablespoons onion, finely chopped
1½ cups celery, chopped
1½ teaspoons salt
Mix ingredients thoroughly and let stand 20 minutes. Bake in greased pan in moderate oven (375° F.) 30 minutes, or until well browned. Cover during first 20 minutes of baking. Serve with parsley sauce.

Welsh Cakes Recipe
2 cups flour
½ cup currants
2 ozs. margarine
2 02s shortening
1 or 2 eggs (depending on size)
¾ cup white sugar
¼ tsp, allspice
½ tsp. baking powder.
Milk if needed (I use water )
Rub fat + flour together until quite fine.
add sugar, currants, spice and baking powder. Add eggs and enough water to make & soft dough.
Roll out on a floured surface, thickness to suit.
Cut into rounds. Bake in electric fry pan approx 350ºf until brown, turn and brown other side.

Put a cupful of white beans in cold water over night; then in the morning put in another water, and boil until the beans are soft; should the water boil down before they are soft, add more warm water to keep them covered. Drain nearly all the water off. Take a piece of ham and cut it in small pieces, put in pan and brown a little, then add this to the beans, also a cup of canned tomatoes, an onion in pieces and some pieces of celery, and salt and pepper to taste. Leave on fire until thickness wanted.

Ingredients:
Roasted Chickpeas:
540 mL (19 oz) can chickpeas, drained / rinsed
½ red onion, sliced
1 tsp smoked paprika
Salt & pepper to taste
Oil to coat
Rice:
15 - 30 mL (1-2 Tbsp) chili oil / mix of chilli and other oil
15 mL (1 tsp) cumin seeds
15 mL (1 tsp) coriander seeds, crushed
½ red onion, sliced
2-3 cloves garlic, minced
1 green chili pepper, minced
1 tomato, chopped
1 mL (¼ tsp) cayenne pepper
2 mL (½ tsp) paprika
5 mL (1 tsp) curry powder
250 mL (1 cup) basmati rice, rinsed
Scant 250 mL (1 cup) stock or water
Method:
Toss together the chickpeas, onion, paprika, salt, pepper, and oil.
Spread onto a baking tray, and bake for 30-35min.
Heat the chili oil in a deep sided pan on medium heat.
Fry (bloom) the cumin and crushed coriander seeds until fragrant; about 1min
Add the onion and sauté until starting to brown.
Add in the garlic and green chili, continue to sauté for a couple more minutes.
Add the cayenne, paprika, curry powder, salt and tomatoes.
Continue cooking until the tomatoes start to break down, then add the rice and cook for another minute.
Stir in the stock / water, turn the heat to medium high, and bring to a bare boil.
Turn the heat to medium low, cover and cook for 15min.
After 15min, turn the heat off and let it steam covered for another 10min
Stir the chickpeas into the rice.
Serve.

Banana Bread For Two
What are you going to do with that one over ripe banana on your counter… Here’s your answer, it's a dessert for two, it's a round banana bread. The chopped pecans give this banana bread a great texture, but you could swap them out for walnuts. The yogourt keeps it moist and adds just a little zing.
Ingredients:
60 mL (¼ cup) sugar
15 mL (1 Tbsp) butter, melted
1 ripe banana, mashed
15 mL (1 Tbsp) yogourt
2 mL (½ tsp) pure vanilla extract
1 egg
125 mL (½ cup) all-purpose flour
2 mL (½ tsp) baking soda
Pinch of salt
60 mL (¼ cup) pecan pieces
Method:
Preheat oven to 180ºC (350ºF)
Grease a 6" round cake pan.
In a bowl whisk together butter, banana, yogourt, vanilla, and egg.
In a another bowl whisk together flour, pecans, baking soda, salt, and sugar.
Stir the flour mixture into the banana mix and transfer to the cake pan.
Smooth the top and bake for about 20-25 minutes.
Let cake cool for 10-15 minutes before removing from pan.

Cold Oven Popovers
1 cup milk
2 eggs
1/2 tsp. salt
1 tbsp. melted butter
1 cup flour
Beat eggs, salt and butter into milk. Add to flour gradually until smooth. Pour into custard cups (they need not be greased) place in cold oven set at 415°, leave for 1 hour. Do not open oven door while baking.

Ham and Macaroni Scallop
18 sticks of macaroni.

1 cup milk.
¼ level teaspoon pepper.
3 level tablespoons grated
cheese.
½ cup stale bread crumbs.
1 level tablespoon butter.
Break the macaroni into short lengths and cook it in boiling salted water till tender, which will probably take about thirty minutes.
Make a sauce by blending the butter and flour smoothly, adding the milk and stirring till the mixture boils; then add the pepper, but no salt as the ham will sufficiently salt the mixture. Grease a baking-dish and place in it alternate layers of macaroni, ham and sauce, sprinkling a little of the cheese over each layer of the macaroni.
Melt the other tablespoon of butter, add the crumbs to it, and stir till they have absorbed the butter.
Spread over the ingredients in the dish, and bake till golden brown.

Ingredients:
2 Kg pork loin, butterflied
3 slices bacon, chopped
2 small onions, chopped
2 stalks celery, chopped
Salt and pepper to taste
5-10 mL (1-2 tsp) poultry seasoning
Handful mushrooms, chopped
1-2 medium apples, chopped
3-4 slices stale bread, cubed
Method:
Fry the bacon to release the fat, but don’t get it too crispy.
Toss in the celery and onion, fry until veg is translucent.
Season with the salt, pepper and poultry seasoning.
Stir in the mushrooms, and apples and continue cooking until the apple starts breaking down.
Stir in the bread, cover and cook 5 minutes.
Cool completely before stuffing the pork loin.
Preheat oven to 160ºC (325ºF)
Lay the butterflied pork loin flat season with salt, pepper and poultry seasoning and then spread on the stuffing.
Roll up the loin and truss (tie) with butcher twine.
Place in a roasting pan and roast until a safe internal temp is reached (145ºF).
Remove and let rest, while you make a pan sauce, with some water or stock and beurre manié.

Grease a baking-dish and place in it alternate layers of macaroni, ham and sauce, sprinkling a little of the cheese over each layer of the macaroni.
Melt the other tablespoon of butter, add the crumbs to it, and stir till they have absorbed the butter.
Spread over the ingredients in the dish, and bake till golden brown.

Roasted Stuffed Pork Loin - Glen And Friends Cooking
Ingredients:
2 Kg pork loin, butterflied
3 slices bacon, chopped
2 small onions, chopped
2 stalks celery, chopped
Salt and pepper to taste
5-10 mL (1-2 tsp) poultry seasoning
Handful mushrooms, chopped
1-2 medium apples, chopped
3-4 slices stale bread, cubed
Method:
Fry the bacon to release the fat, but don’t get it too crispy.
Toss in the celery and onion, fry until veg is translucent.
Season with the salt, pepper and poultry seasoning.
Stir in the mushrooms, and apples and continue cooking until the apple starts breaking down.
Stir in the bread, cover and cook 5 minutes.
Cool completely before stuffing the pork loin.
Preheat oven to 160ºC (325ºF)
Lay the butterflied pork loin flat season with salt, pepper and poultry seasoning and then spread on the stuffing.
Roll up the loin and truss (tie) with butcher twine.
Place in a roasting pan and roast until a safe internal temp is reached (145ºF).
Remove and let rest, while you make a pan sauce, with some water or stock and beurre manié.

This one pan chicken leg quarter dinner is easy to prep, and usually pretty easy on the pocket book. Buying whole chickens and cutting them up at home saves a lot of money and can be an easy way to extend your budget. If you're looking for easy weeknight chicken recipes, easy weeknight one pan chicken recipes; give this a try.

Ingredients:
2 chicken leg quarters
Salt and pepper to taste
30 mL (2 Tbsp) butter, or other oil
3-4 large shallots, chopped
500 - 750 mL (2-3 cups) mushrooms, halved
125 mL (½ cup) stock
5 mL (1 tsp) dried thyme
2 mL (½ tsp) rosemary
15 mL (1 Tbsp) dijon mustard
5 mL (1 tsp) hot mustard
15 mL (1 Tbsp) honey
Method:
Pre heat oven to 350ºF (180ºC).
Season the chicken with salt and pepper on all sides.
Heat an oven proof pan and melt the oil.
Brown the chicken quarters on all sides, the remove from the pan.
Sauté the shallots until they are translucent, then add the mushrooms and continue cooking until the mushrooms have lost most of their moisture.
Stir in the stock, thyme, rosemary, mustard, and honey.
Return the chicken to the pan, and place in the oven until the chicken is cooked through, about 20-30 minutes.

ESCALLOPED HAMBURG
Put a layer of hamburg steak in a baking dish. Season with salt and pepper. Then put in a layer of thin sliced, raw potatoes and onion, chopped fine. Dot with butter. Alternate layers until dish is full. Cover with enough milk to moisten.
Bake for one hour in a moderately hot oven.

Welcome back to the kitchen, my friends! In today's episode, we dive into the remnants of a fantastic grocery store sale - a pork shoulder and leg at an unbeatable 56 cents a pound! Join us as we turn these finds into delicious and flavourful pork stock. I share my preferred method for creating a clear and rich broth, simmering it slowly to perfection. As we go along, the plan for the soup takes shape, incorporating white kidney beans, vegetables, and a mix of delightful spices. Watch till the end to discover the unexpected twist in this soup adventure! Don't forget to experiment with your own variations in the kitchen. Let's get cooking!
Broth:
1 pork leg bone
1 large onion, roughly chopped
2 carrot, roughly chopped
2 ribs celery, roughly chopped
2.5L (10 cups) water
Handful of whole peppercorns
Soup:
375 mL (1½ cups) dry white kidney beans, soaked
Fat / Oil for frying
500g (1lb) pork, diced
1 large onion, fine dice
2 carrot, fine dice
2-3 cloves garlic, crushed
¼ head of cabbage, sliced
1 - 796 ml (28 fl Ounce) can of tomatoes
Salt and pepper to taste
Hot pepper flakes to taste
Handful of fresh thyme (or dried) to taste
Method:
Broth:
Put all ingredients in a pot, cover with a lid and bring to a gentle simmer.
Simmer 2-3 hours.
Soup:
Drain the beans from the soaking liquid, place in a pot, cover with fresh water and a lid.
Boil the beans for 45 minutes to an hour, drain and set aside.
In a heavy bottomed pot, melt the fat over medium high heat, and brown the pork pieces.
Remove pork from pot, and then fry the onion and carrot until soft, then add the garlic.
Add the pork back to the pot along with the cabbage, tomatoes, beans and spices.
Transfer 6-8 cups of the stock to the soup pot, cover and simmer 1-2 hours.

This cookbook was a fundraiser for a Cape Cod Hospital, reflecting the community spirit of that time. Join us as we make a delicious Grape Nut Bread recipe, exploring the unique ingredients and techniques of the past. Grape Nut Bread Recipe
2 cups scalded milk
1 cup Grape-Nuts
3 cups sifted all purpose flour
4 tsp. baking powder
1 tsp. salt
1 cup sugar
1 egg well beaten
3 tbsp. melted butter or margarine
Pour milk over grapenuts, cool. Sift flour once, measure, add baking powder, salt and sugar. Sift again.
Add egg and shortening to grapenut mixture and stir well, add flour mixture stirring only enough to dampen all flour - this is so that the grapenuts will not lose their form when the bread is baked. They should show up quite definitely.
Turn into greased loaf pan, let stand 20 minutes.
Bake in moderate oven 350 to 375° for about 1 hour.

Ingredients:
75 mL (1/3 cup) sugar
Zest of 1 lemon
45 mL (3 Tbsp) butter, softened
1 egg
15 mL (1 Tbsp) lemon juice
1 mL (¼ tsp) pure vanilla extract
45 mL (3 Tbsp) yogourt
150 mL (⅔ cup) cake & pastry flour****
1 mL (¼ tsp) baking powder
.5 mL (1/8 tsp) baking soda
Pinch salt
Method:
Preheat oven to 160ºC (325ºF)
Prepare a 6" cake pan by greasing and then flouring it.
In a bowl mix together the flour, salt, baking powder, and baking soda.
Zest the lemon into another bowl, then mix in the sugar.
Scoop out about a tablespoon of the lemon sugar mix and set aside.
To the remaining lemon sugar mixture cream in the butter and then the egg.
Then mix in the yogourt, lemon juice and vanilla.
With two or three additions mix in the flour.
Pour the batter into the cake pan and smooth the top.
Sprinkle on the reserved lemon sugar mixture.
Bake for 20 - 25 minutes.
Let cool in the pan for 10-15 minutes before serving.
****Cake and Pastry flour isn't sold everywhere... It seems this 'name' is prevalent in Canada, but not other places. Fear not! If you have Cake flour or Pastry flour - it's essentially the same thing. If you only have plain or all purpose; go ahead and use that, you'll be fine.
