This is a classic German cake known as Gugelhupf. Unlike your typical cake batter, this cake is made from a dough: after the dough was mixed, it rose slowly in the refrigerator overnight. From there, it was baked in the oven at 325°F for one hour. It was pointed out that because we used sourdough starter, this dough would rise much slower than using store-bought yeast, and so it was suggested that this dough slow-rise in the fridge. I thought that was a great idea, and so this cast iron pan filled with dough has risen in the fridge (covered) for eight hours. Now, it goes into the oven with the light on, but the oven turned off, to bring the pan and the cake to room temperature.
