Took Blitz Lunar/goniochromism's MIDI and used Mario Kart samples in FL Studio 8, then I recorded a video of me winning as Donkey Kong Jr., recorded the coin sound, and then silenced his actual victory theme and overlaid the beta track, Much easier than my Vanilla Lake recreation from a few years ago.

Some technical difficulties hopefully will be solved in future livestreams.
For this, I used the re-tuned brass from my previous video, and I replaced the overdriven guitar sample from one of the rhythm tracks with the distorted guitar sample (which seems to be the original intention, since those two tracks notes are in harmony), and I replaced the backing brass section later in the track (I think you'd call it a climax?) with the overdriven guitar, and retouched both to make sure they were in in sync, so the harmony would work better. I also replaced the short octave sections near the end with harmonies, though that was mostly to save space (I'm still tweaking it, so I might reinsert those octave parts).
I'm sorry if my descriptions aren't the best. I'm not too well versed in music terminology. At least, this is all programmed in the game, and fully functional, which is the first time I've done something like this.
Changing the 20 at x5CD3D to 30 will correct this.
I also admit to not remembering who originally recorded the footage, but I will state openly that it's not my gameplay. I apologize.

Now, I went and by ear I did my best to transcribe the song accurately. It's a very eccentric song, and very noisy, so it was kind of a painstaking process, but I feel it paid off.
I actually was messing around with the debug mode, and realized that the songs when played through it have no reverb, so that made it easier for me to distinguish the notes. The backing guitar was the hardest part since the Smash Bros 64 guitar sample is very grating and noisy. I think it's about right though.
Make sure you stick around until the end. There's a neat little surprise on the last loop of the song.

Sorry it took a few years, but lots of crap has happened in life, and I kind of forgot about it. :p Anyway, it's here now, so I guess all's well that ends well, right? ;)

Don't know if I should have just uploaded these separately, but I didn't want to upload a bunch of videos of different versions of one song. Both versions are within the respective hardware's limits (thought might not work in gameplay, as they'd need a channel or two for sound effects), and were both made in FL Studio.
Perhaps this will inspire Nintendo to make a Super Mario Kart 3D Classics. :p
I don't know of any MK7 Rainbow Road MIDIs, so I transcribed one myself. I'll probably upload the actual remix by itself soon.

The first song is just the hotel 5 song slowed down, as it is in the original.
The previous version wasn't quite finished, and I just got Vegas 11, so I re-uploaded this, and also used a better version of the song that I further worked on in FL Studio.
There were a few mistakes with the previous version which have been corrected. It's now as close to the original song as I can get it.
This is a re-upload. The skip during the first second glitch struck again, ruining the nice intro to the song. From now on I'm including a 1 second buffer on my music uploads.
I even optimized it for the game, making it usually use 5-6 instruments, as Star Fox games usually did for sound effects that always play like lasers and the Arwing's engine noise.
I made this video by recording the Star Wolf fight in an emulator and disabling all but the last 3 sound channels, then, in Windows Movie Maker, I manually inserted the music, then I saved the video, imported the music mixed one, and reinserted what sound effects I could within WMM's limitations.
The result isn't 100% as it would be on hardware, as some points of the song have instruments on 7-8 channels, and some would get cut off by sound effects. I haven't reproduced this effect, as with the current software available to me would result in lots of time taken to do something minor.
It's not supposed to be a representation of SNES hardware capabilities, just something fun I wanted to do.
I still like the Star Fox 2 Wolf Theme better though...
This is basically the same as the one I used in my mock-up Vanilla Lake Beta video, but I further refined it, and it's now as close as I can imagine anyone getting it to the original, unless the original SPC were dumped, which isn't looking likely at this point.
I altered the drum beat, as it was very slightly off, and I finally found out the problem with the guitar. The loop point was fine, but the actual song seemed to use an LFO on the guitar, so I applied that, and it sounds much better, and closer to the recording that was released.
Also, try to spot the little changes I made to the screenshot to reflect the differences in the beta.

Instruments I used were 2 "Ultimate NES Soundfont" samples for the 2 main leads, the orchestra hits I sampled form Super C, the entire drum kit (including the noise channel hi-hats) was sampled from Super Mario Bros. 3, and the backing square waves were sampled from Super Mario Bros.
I transcribed the song by hand in FL Studio 8.

Instead of just removing a channel, I went back to the original song, and basically re-composed my version around it. The original was just a channel reduced MIDI (of which the original was rearranged and had different notes in some areas), but this one's basically a transcribed version of the SNES song, with a few touches I made.
I added a beat to the beginning (...I admit it was inspired by "Tough Boy" from Fist of The North Star 2...), and raised the tempo, giving it that hard hitting, "Mega Drive feel" that was lacking from my original, which was rather weak in my opinion.
As before, I used a combination of VOPM and the "Ultimate Megadrive Soundfont" in the creation of this remix. Made in FL Studio 8.

Simply took a MIDI by King Meteor, and used the samples and effects I had at my disposal to recreate the original song in the best quality I could, while making it sound as close to the original as I could in terms of instrumentation.
Also, on a semi-relevant note, I had been using the term "arrangement" for the versions of songs that I simply wanted to reproduce in higher quality, but after researching, it would appear that the correct term for a simply re-instrumentation would be "remix". So, unless I'm mistaken, all of my future songs like this will be labeled "remix".
Made in FL Studio 8. I don't take any credit. After all, I borrowed a MIDI someone else made.

I used a MIDI file from VGmusic.com, but it had tons of incorrect notes so I had to redo most of it, then I started working around with the tune and started modifying things and adding in harmonies and new instruments. The MIDI also didn't have the "near KO" music, so I had to modify it for that as well.
I used multiple soundfonts and FL Slayer for the guitars, though I turned off it's built in amps and used the JCM900 VST amp with an overdrive stompbox VST.
I don't know much about music, but I think I've really outdone myself here.
I took a midi from VGMusic, modified it to fit the Genesis channel limitations, and used a combination of VOPM (for the guitars) and the "Ultimate Genesis Soundfont" for the drums, square waves, and the bass.
