Recipe --
Steamed whole fish
• In-season whole white fish, scaled and gutted
• Rock sugar
• White pepper
• Salt
• Light soy sauce
• Ginger, julienned
• Garlic cloves, sliced
• Spring onions, julienned, white and green parts separated
• Coriander, roughly chopped
• Shao xing wine
• Vegetable oil
Method --
1. Gently scrape a serrated knife across fish skin to remove missed scales. Look around the head, fins, tail and gill covers.
2. Cut off fins and trim the tail. Use scissors for ease.
3. Remove any remaining innards and gills and scrape out bloodline with a small spoon and/or toothbrush. Rinse.
4. Shake off any excess water.
5. Steam fish according to size. Eg. 8-9 minutes for small/medium fish, longer for a larger one. A heat-proof dish, raised by a lidless tin can, in a wok with a few of inches of water will do the trick. Make sure to use a lid that fits.
6. Carefully tip out fishy water from the dish when done.
7. In a small saucepan, sauté the garlic, half the ginger and a few bits of rock sugar in oil until fragrant.
8. Add soy sauce, salt, white pepper and shao xing to taste and simmer.
9. Add white parts of spring onion, stir until simmering. Add a bit of water to calm the intensity of the sauce.
10. Spread other half of ginger, green parts of spring onion and coriander over fish.
11. Strain sauce over fish and serve.

Recipe --
Tofu baby
• Egg tofu, two tubes, sliced thinly
• 4 eggs, lightly beaten
• Salt
• White pepper
• Corn flour
• Cucumber, julienned
• Carrot, julienned
• Fried shallots
Peanut sauce
• Peanut butter
• Kecap manis
• Palm sugar
• Salt
• Garlic, smashed finely
• Tamarind pulp
• Chilli (fresh or sambal oelek works)
• Water
Method --
• In a small bowl, cover a spoonful of tamarind pulp with boiling water. Let stand for a few minutes and then squeeze out pulp with fingers or a spoon. Strain and remove solids.
• Sauté garlic and chilli with salt to taste in a small pan until fragrant.
• Add prepared tamarind and palm sugar to taste.
• Add kecap manis and peanut butter to taste.
• Add water until you reach a consistency of thin gravy. Taste, and adjust with ingredients if needed.
• Allow sauce to cool.
• Combine eggs, egg tofu, a few pinches of salt and white pepper, and a tablespoon or two of cornflour in a bowl. The egg should be one colour but entire mixture not beaten too much–should be decent chunks of tofu still floating about.
• Heat an inch of oil in a pan with a lidless tin can. Make sure oil is level both inside and outside the can. Oil is ready when a submerged wooden chopstick quickly produces bubbles. Good deep-frying temperature.
• Ladle egg mix into tin can until almost full and constantly spoon hot oil over the top until the egg mix can stand on its own without the tin can. Continue until outside is crispy golden brown.
• Remove tofu mass carefully from the pan and rest on paper towels.
• Repeat with the rest of the egg mix, and stack on top of the first tofu child. Whole thing should be wobbly but staying together.
• Sprinkle cucumber and carrot on egg tofu tower.
• Pour peanut sauce over egg tofu tower and garnish with fried shallots.

Marinade
* Fermented tofu & sauce

* Maltose
* Sugar
* Salt
* Light soy sauce
* Five-spice powder
* Garlic
* Ginger
* Shao xing wine
* White pepper
* Vegetable oil
Pork
* Boneless pork belly, skin removed, trimmed into long pieces
Method --
1. Heat maltose for ease of handling, either in microwave or sit the container in hot water.
2. Throw marinade ingredients into blender and blitz. Adjust to taste. A lot is required, so don’t be afraid of having a lot/adjusting a lot.
3. Use half of the marinade to marinate pork in fridge overnight. 🌙
4. Go to bed.
5. 🌞 Wake up and start a fire. Keep building it through the day.
6. Let marinated pork rise to room temperature.
7. Preheat oven, medium heat.
8. Roast pork in oven on a wire rack over a tray of water, until half done. Make sure it doesn’t dry out.
9. Meanwhile, reduce marinade in saucepan over low heat on stovetop. Add lard and extra maltose if you feel like it.
10. Make sure pit coals are hot and abundant.
11. Skewer pork and finish over hot coals while basting with reduced marinade. Reserve some for final drizzle.
12. Pork is done at 71 degrees C. Slice thinly and drizzle with last of marinade.
