Our Christmas Lights 2021, Freeman Lights imstillworkin 2022-01-07 | We live in Freeman, VA, a small town which consists of a post office, a gas station and a population of 691 people. Our house is about a mile off the highway and we thought it was unlikely that many folks would ever see our Christmas lights but we would deck it out every year anyways. Well, it's true, if you build it, they will come. This year 9,215 smiling faces came through our backyard gate. Our light display is free to all, donations are accepted to help defray the costs of such things as free hot chocolate, s'mores, firepits, etc. It took my husband and I thirty days to put the lights up and we have no idea how many we have. Folks that drove for an hour or more to see the lights said it was well worth the trip. We hope to see you in 2022! Pumpkin BreadPreheat oven to 350 degrees and grease 3 loaf pans. Sift together:3 1/2 cups all purpose flour1/2 teaspoon baking powder2 teaspoons baking soda2 teaspoons salt1 teaspoon cinnamon1/2 teaspoon ground clovesIn another bowl, beat until light and fluffy:2/3 cups shortening2 2/3 cups sugar4 eggsAdd and beat in:2 cups cooked or canned pumpkinNow add the sifted dry ingredients alternately with:2/3 cups milk or water1 teaspoon vanilla (optional)Do not overbeat. Fold in:1 cup coarsely choppped nuts (optional)2/3 cup raisins or chopped dates (optional)Pour batter into greased pans and bake about 1 hour or until a toothpick or wooden skewer inserted into the center of a loaf comes out clean. Hot Sauce45 fresh cayenne peppers (10 oz.)3 3/4 cups white vinegar5 tsp. garlic, minced2 1/2 tsp. saltRemove stems and seeds from cayenne peppers and chop. Put all ingredients in a large saucepan and heat over medium heat until boiling. Reduce the heat slightly, but so the mixture continues to boil and cover. Simmer 20-25 minutes.Remove the mixture from heat, carefully pour into a blender and puree until thick and smooth. Strain if you don't want bits of peels in your hot sauce. Transfer the mixture back into the saucepan and bring back to a boil.Ladle the hot sauce into hot jars, leaving 1/4" headspace. Follow standard canning procedures and water bath process for 10 minutes. Virginia Beach Oceanfront - Things To Do imstillworkin 2019-09-10 | Here's some things to do at Virginia Beach's oceanfront. You can even do nothing and have a good time. Summer is almost over but the free street entertainment will still be there on September 13-14 and again on September 20-21. There are plenty of free concerts, if you search "Live on Atlantic" you should be able to find a schedule for the different bands. Also, the last big bash of the summer will be September 27-29 with the Neptune Festival. There is a load of things to do at the festival - a parade, a sand sculpting contest, boat races, volleyball tournaments, an art show along the boardwalk, an 8k race, free concerts galore at the many stages along the boardwalk, and much, much more. We'll be there and we hope you will too!

How to Can Pepper Jelly imstillworkin 2019-08-20 | Here's how to can pepper jelly.Pepper Jelly1 1/2 cups diced red bell pepper1 1/2 cups diced green bell pepper1 cup diced jalapenos1 cup cider vinegar1 pkg. sure jell (powdered type)5 cups sugarMix together peppers, vinegar and sure jell. Bring to a rolling boil. Add sugar, bring back to a rolling boil and boil for exactly 1 minute. Remove from heat and can according to usual canning procedures leaving 1/4" headspace and water bath canning for 10 minutes. When the jars come to room temperature, shake them so that the peppers will be evenly dispersed through the jelly.

How to Make Pork Chops with Peaches and Pecans imstillworkin 2019-08-10 | Here's how we make pork chops with peaches and pecans.Pork Chops with Peaches and Pecans4 pork chopsolive oilsaltpepperTony Chachere's Creole Seasoning2 tbsp. butter1/2 cup brown sugar, light or dark2 sliced fresh peaches1/4 cup pecans2 tbsp. Peach Schnapps1 or 2 tbsp. water if neededWash and pat dry pork chops. Rub a little olive oil over chops, sprinkle with salt, pepper and creole seasoning. Turn chops over and repeat on other side. Let chops marinate several hours or overnight. Bring chops to room temperature when ready to grill. Preheat grill to 500 degrees. If using a cast iron griddle, allow time for griddle to heat up thoroughly. Put the chops on the griddle, close the lid and grill for 4-5 minutes on each side. When the chops are done, cover them with aluminum foil and allow them to rest for about 5 minutes.For the peaches and pecans, put 2 tbsp. butter in a frying pan, add 1/2 cup of brown sugar, 1/4 cup pecans and 2 tbsp. peach schnapps. Cook covered until peaches are done. Add a couple tablespoons of water if necessary to keep syrup from becoming too thick. Put peaches and pecans on top of pork chops and enjoy!
How to Can Banana Peppers imstillworkin 2019-08-08 | Here's how I can banana peppers.Hot Banana Peppersseveral pounds hot banana pepperspickling salt 5 cups white vinegar5 cups water1/2 cup less 1 tbsp. pickling salt1/2 tsp. dill seed per jar1/4 tsp. pickle crisp per jarWearing gloves, wash peppers and slice into 1/4" rings. For really hot pickles, leave the seeds in, for less hot pickles, remove most of the seeds. In a large bowl, put a layer of pepper rings, sprinkle with pickling salt and continue layering until the bowl is full. Cover and in an hour or so stir the peppers so that the salt will be well dispersed through the peppers. Let sit for 4 hours to overnight. Rinse the peppers well. Prepare the pickle juice by placing in a large pot 5 cups white vinegar, 5 cups water and 1/2 cup less 1 tbsp. of pickling salt. Bring to a boil. To can the peppers, fill a pint jar with peppers to within 1" of the top of the jar, packing them tightly, add 1/2 tsp. dill seed, 1/4 tsp. pickle crisp and enough hot pickle juice to within 1/2" of the top of the jar. Follow usual canning procedures, processing in a water bath canner for 15 minutes. If necessary, adjust processing time to suit your altitude.

Tomato Wine3 1/2 quarts or so of water2 lbs. of sugar or 2 lbs. light honey4 lbs. ripe tomatoes, red or yellow2 tsp. acid blend1/8 tsp. tannin1 tsp. yeast nutrient1 Campden tablet, crushed (optional)1/2 tsp. pectic enzyme1 packet champagne or Montrachet yeast (Red Star Premier Classique was formerly known as Montrachet)Boil most of the water and all of the sugar or honey and skim if necessary. Wash the fruit. Peel, core and chop the tomatoes. Put them in a nylon straining bag and into the bottom of a primary fermenter. Squash the fruit with your clean hands or a sanitized potato masher. Remove the bag.Pour the hot water and sugar over the juice. See if you need to add the rest of the water to make up the gallon. When cooled, add acid, tannin, yeast nutrient, and the crushed Campden tablet if you choose to. Cover the fermenter. Twelve hours after the Campden tablet, add the pectic enzyme. If you don't use the tablet, merely wait until the must cools down to add the pectic enzyme. Twenty four hours later check the specific gravity with a hydrometer. You want the reading to be about 1.094. If it is too high, add water, if it is too low, add sugar. Once you have the reading where you want it, add the yeast. Stir daily.In about a week, check the gravity with a hydrometer again. If it is anywhere between .990 and 1.020, rack the wine into a glass secondary fermenter. Rack the wine again in the next two to six months, and wait for it to ferment out and clear. The color of the wine varies from a red gold to gold. Tomato wine is better when sweetened a little, so stabilize it and add 2 to 4 ounces of sugar in a bit of water and bottle. Keep six months to a year. How to Make Watermelon Rind Pie imstillworkin 2019-07-18 | If you like Apple Pie or Mincemeat Pie, you'll love Watermelon Rind Pie.Watermelon Rind Pie:2 1/2 cups watermelon rind, peeled and chopped1 cup sugar3 tbsp. all purpose flour1 tsp. cinnamon1/4 tsp. nutmeg1/4 tsp. cloves1/8 tsp. salt3 tbsp. cider vinegar1/2 cup raisins1/2 cup pecans, choppedpie pastry for 2 crust pie, homemade or purchasedYou need 2 cups of chopped watermelon rind. It's best to cut the rind so that it still has a little pink on it and take off the dark green part. Put the chopped rind in a small saucepan and add enough water to cover. Bring it to a boil, put a lid on it, reduce the heat and simmer for about 15-20 minutes or until the rinds are mostly translucent. Remove from the heat and drain.Preheat the oven to 350 degrees.Mix together the watermelon rind with 1 cup of sugar, 3 tablespoons of flour, 1 teaspoon of cinnamon, 1/4 teaspoon of nutmeg, 1/4 teaspoon of cloves, 1/8 teaspoon of salt, 3 tablespoons of cider vinegar, 1/2 cup of raisins and 1/2 cup of chopped pecans. Pour the mixture into an unbaked pie shell, brush the edge of the pie with water, top with another pie crust, crimp the edges together with a fork, cut small slits in the top crust so the pie can vent. Bake at 350 degrees for 45 to 50 minutes. Shield the edges of the pie with strips of aluminum foil after 25 minutes to prevent excessive browning. Cool and serve.
