Ingredients: β’ 2 ΒΌ cups (315 g) all-purpose flour β’ 1 Tablespoon cornstarch β’ 1 ΒΌ teaspoon baking soda β’ 1 teaspoon ground ginger β’ Β½ teaspoon ground cinnamon β’ Β½ teaspoon ground cloves β’ Β½ teaspoon Kosher salt β’ 10 Tablespoons (141 g) unsalted butter, softened β’ Β½ cup (110 g) dark brown sugar, packed β’ ΒΌ cup (50 g) white granulated sugar β’ 1 teaspoon vanilla β’ Β½ cup (170 g) unsulfured molasses β’ 1 large egg
For Rolling: β’ Β½ cup white granulated sugar
Instructions: 1. In a medium bowl, whisk together flour, cornstarch, baking soda, ginger, cinnamon, cloves and salt. Set aside.
2. Using a stand mixer or electric beaters, cream butter and sugars until fluffy, about 2 minutes, scraping down sides as needed. Add vanilla and molasses and beat again until fully mixed, about 1 minute, scraping sides and beaters again as needed. Add egg and beat to combine, scraping down sides and beaters again.
3. Add flour mixture to wet ingredients and beat just to combine. Cover dough with plastic wrap and chill for 20 minutes or overnight. (Chilling makes the dough easier to work with.)
4. Preheat oven to 350 F (176 F). Line a baking sheet with parchment paper. Pour remaining Β½ cup white granulated sugar in a shallow bowl. Using a cookie scoop, scoop and then roll 1 Β½ Tablespoons of dough into round balls. Roll in granulated sugar and place on baking sheet, about 3 inches apart. Bake 13-15 minutes, until centers are set but still soft. Let cookies sit on baking sheet for 10 minutes; then transfer to a wire rack and finish cooling.
Notes: β’ How to Store Cookies: Cool cookies completely. Store in an airtight container at room temp for up to 4 days. Add a slice of sandwich bread to the container to keep the cookies soft. β’ For Thicker, Softer Cookies: Use 1/3 cup (113 g) molasses instead of Β½ cup (170 g)

Today we're making an easy pasta salad! It's filled with colorful veggies and fresh herbs, making it an excellent side dish for simple main courses like burgers, steaks, chicken, or fish.
The only cooking required is for the pasta, and you can do that up to 24 hours in advance. I prefer a small pasta like orecchiette, shells, or spirals for easy-to-eat bites. Be sure to wash the pasta (and then cool completely) so it doesn't stick together before tossing with the other ingredients.
Although the slices of zucchini and yellow squash don't require cooking, they do marinate in the Italian dressing, which softens the texture and adds wonderful flavor. If you have another favorite veggie or two, feel free to add those. Bell pepper, red onion, artichoke hearts, or little florets of steamed broccoli would all pair well with the cherry tomatoes and Greek olives. Yum!

RECIPE β¬οΈ Β½ lb. (227 g) dry orecchiette pasta 3 Tablespoons (45 g) red wine vinegar 1 clove garlic, minced 1 teaspoon Kosher salt 1 medium yellow squash, halved lengthwise and sliced into thin half moons 1 medium zucchini squash, halved lengthwise and sliced into thin half moons Freshly ground pepper 1 Β½ cup (280 g) halved cherry tomatoes 1 cup (130 g) halved pitted Greek olives 8 oz. (226 g) mozzarella pearls Β½ cup (45 g) finely grated Parmesan cheese β cup (74 g) extra virgin olive oil 2 Tablespoons chopped flat-leaf parsley ΒΌ cup chopped basil leaves (10-12 leaves)
Cook the pasta according to package directions. Drain, rinse with cool water to remove excess starch, and refrigerate to cool completely. (This can be done in advance.) In a small bowl, mix together red wine vinegar, garlic and salt. Set aside for 5 minutes. In a large bowl, toss yellow squash and zucchini squash with vinegar mixture. Add some pepper. Let marinate for 20 minutes, tossing occasionally. (This will soften the squash. Donβt worry if liquid accumulates; it will become part of the marinade.) After marinating the squash, add tomatoes, olives, mozzarella, Parmesan, olive oil and herbs to the bowl. Toss to combine. Add cooked and cooled pasta and toss again. Let marinate 30 minutes or up to an hour at room temperature, tossing every 10 minutes or so to distribute flavors. Garnish with basil and serve.

Ingredients: 2 Tablespoons fresh lemon juice 2 Tablespoons extra virgin olive oil, plus extra for drizzling 1 Tablespoon whole grain mustard 2 Tablespoons minced shallot 2 Tablespoons capers Salt and pepper 1 1/2 lb. steelhead trout (or salmon) with skin on 1 lb. asparagus, trimmed
Instructions:
Preheat oven to 450 degrees F.
Whisk together lemon juice, olive oil and mustard. Add shallots, capers, small pinch of salt, and pepper; mix again.
Place the trout on a sheet pan and surround with asparagus. Pour the dressing over the trout. Drizzle a little olive oil over the asparagus and season with salt and pepper.
Roast trout and asparagus for 15 minutes. Remove from oven and serve warm.

Today we're making Bakery-Style Cowboy Cookies! These cookies are inspired by Laura Bush's award-winning cowboy cookies, packed with coconut, pecans, chocolate, oats and a hint of cinnamon. Have you tried cowboy cookies? They just might be my favorite!
Here are several bakery secrets to achieving cookies like these. First, cream the butter rather than melt it. Creaming the sugar creates little pockets of air, which help the cookies rise and hold their shape. Second, add a little cornstarch to your dough. Cornstarch helps create tender cookies with thick and chewy centers. (If you donβt have cornstarch, you can just leave it out. Your cookies will spread more and may be a little less tender, but they will still be delicious!) Third, chill the dough before baking. *or use salted butter and leave out salt
ππ‘π¦π§π₯π¨ππ§ππ’π‘π¦ Place flour, sugar and salt in a bowl. Stir to combine.
Press the butter into the dry ingredients with your fingertips until the butter is coated in flour and in various sizes (ranging from pea size to almond size).
Add 4 tablespoons cold water and 1 tablespoon vinegar. Use a fork or spatula to toss the butter and flour with the water, until there are no more dry patches. The dough should hold together in a ball when you squeeze it in your hand. (If it does not hold together, add 1-2 teaspoons additional water and toss again.)
Spread a large piece of plastic wrap on the counter (approximately 1 1/2 feet long). Gently dump the dough (it will be crumbly) onto plastic wrap. Pull plastic wrap together around the dough and mold it with your hands so the dough forms a disc inside the wrap. Refrigerate dough for at least 20 minutes, and up to 2 days.
When you are ready to roll out the crust, remove dough from refrigerator, unwrap and let sit at room temperature for about 5 or 10 minutes.
Use your hands to flatten the dough slightly so it will be easier to roll out. Toss some flour on your countertop.Β Place dough in the center. Using a rolling pin, roll out the dough into a circular shape that has about the same thickness all the way around. To keep the dough from sticking and to help keep the dough in a round circle, turn the dough ΒΌ turn clockwise after each roll. Continue rolling and turning until the circle is evenly rolled out.
Once the dough is large enough to fit your pie plate, gently place in the pie plate with edges hanging over. Gently press the dough into the bottom of the plate. Using your hands, tuck any dough that overhangs the plate into an even edge that rests on the lip of the plate.
Use your hands to even the edge if needed. Finally, crimp the edges with your fingers for a decorative scalloped shape. Wrap in saran wrap and store crust in freezer for at least 20 minutes or up to 1 month.
When you are ready to bake a pie, simply remove the pie crust and pie plate from the freezer, let sit at room temperature for 5 minutes, add the filling and bake. Baking the crust from frozen will help the pie crust keep its shape as it bakes.
Blind Baked Crust: If you are making a pie that requires blind baking (baking the crust without a filling), follow the instructions here: mariesaba.com/recipes/blind-baking-pie-crust
Crust Baked With Filling: Add the filling and bake according to instructions in your recipe. Baking times and temps will depend on the type of pie you are making.
NOTE: This recipe makes 1 pie crust. If making crust for a double crust pie, I prefer to make 1 pie crust at a time, one after another. I find it is easier to evenly mix in the butter and liquids when working with just one crust a time.

To ensure smooth edges, use your hands to roll dough into smooth round balls. Lightly press tops of cookies with the tines of a fork to create a crisscross pattern.

Your cookies will spread more and may be a little less tender, but they will still be delicious!) Third, chill the dough before baking. Chilling the dough enhances flavors, improves browning and encourages thicker centers for these bakery-style cookies. Fourth, slightly underbake the cookies (leaving the centers a little shiny). The cookies will finish cooking on the baking sheet without becoming tough.
Depending on your desired level of sweetness, you can adjust the sugar accordingly. One cup of white granulated sugar (together with 1 cup light brown sugar) is delicious, but I often use just 1/2 cup of the white sugar for a less-sweet version. If youβre out of either the dark chocolate or white chocolate chips, feel free to sub in one cup chopped nuts instead.

INSTRUCTIONS: In a medium bowl, mix together the flour, salt, baking soda and cornstarch. Set aside.
Using a stand mixer or electric beaters, beat the butter, brown sugar, and white sugar until light and fluffy, about 2-3 minutes. Add vanilla and eggs and beat again until combined, scraping down the sides as needed.
Reduce mixer speed to low and gradually add dry ingredients, beating just until incorporated. Fold in chocolate chips. Cover dough with plastic wrap and chill for 30 minutes to 1 hour.
Preheat oven to 350 F (176 F). Line a baking sheet with parchment paper. Using a cookie scoop or your hands, place 1.5 Tablespoon portions of dough on the baking sheet. Bake for 12-14 minutes. INSTRUCTIONS 1. Preheat oven to 400 F (204 C). Coat cups of a standard 12-cup muffin pan with nonstick spray or butter, or use paper liners.
2. In a medium bowl, make the streusel. Stir together oats, brown sugar, flour and salt. Add melted butter and stir until clumps form. Cover bowl with plastic wrap and refrigerate.
3. In a medium bowl, whisk together 2 cups flour with baking powder, baking soda and salt; set aside. In a small cup, mix milk with lemon juice and vanilla; set aside. In a small bowl, toss blueberries with 2 Tablespoons flour; set aside.
4. In the bowl of a stand mixer, cream butter and sugar until well-combined, about 2 minutes. Scrape down the sides with a spatula. Add eggs and beat again until well-combined.
5. Add dry ingredients and milk to butter mixture and mix again, just to combine. (Do not overmix. Some lumps are okay.) Fold in blueberries with a rubber spatula.
6. Scoop batter into 11 muffin cups, filling each to the top. (Using 11 of the muffin cups instead of all 12 helps make bigger bakery-style muffins.) Add streusel to the top of each muffin, pressing gently into the muffin batter to help the streusel stay in place.
7. Bake at 400 F (204 C) for 5 minutes. Then reduce heat to 375 F (190 C) and bake until toothpick inserted into the center comes out clean, about 18-20 minutes. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Today we're making a Mixed Seafood Cocktail, or Campechana, which originated in Campeche, a Mexican state located along the Gulf Mexico. A campechana has a tomato base, thickened with ketchup, which is then mixed with tomatoes, cucumbers, onion, jalapeΓ±os, green olives, cilantro, lime juice. It's refreshing and delicious and absolutely stunning when served in a sundae bowl and topped with avocado.
While is no cooking required for this dish, there is some chopping involved. But here's the good news, you can do all the chopping ahead of time! You can chop everything up to 2 days in advance and store it in the fridge until ready to use. Or, you can make the full campechana in advance and store that in the fridge until ready to serve.
We especially love to serve a campechana as an appetizer at the beach, when we have access to fresh Texas blue crab and gulf shrimp. Will you be near fresh seafood this summer? Hope you get to try this one!

While grating your own cheese takes a little more time, itβs worth it. Unlike prepackaged grated cheese, freshly grated cheese has a better flavor and no anti-caking agents. To grate the cheese, I use my Cuisinart Food Processor.
For an extra pop of flavor, you can drizzle hot honey directly on the bowl of pimento cheese just before serving, or spread some on the bread for sandwiches. Although it may sound like a strange combination, the spicy-sweet honey makes the creamy, savory, tangy pimento cheese taste even better!

Today we're making classic Oatmeal Raisin Cookies! These oatmeal raisin cookies are soft, chewy and delicious. Theyβre baked with hearty rolled oats, brown sugar, a hint of cinnamon, and juicy raisins.
While these cookies are very easy to make, keep in mind that oatmeal raisin cookies can be a little finicky. The reason is the oats. Oats behave differently than flour. Flour gives cookies structure, while oats add bulk and chew. If you donβt have enough structure (flour), the cookies will spread too much and bake unevenly. And if you donβt give the oats time to hydrate, the oats will be dry and gritty.
So there are two keys to this recipe: (1) Use the correct amount of flour (to ensure the cookies have enough structure), and (2) refrigerate the dough at least one hour before baking (to give the oats time to hydrate). If you have a kitchen scale, you can weigh out 140g flour. If youβre using measuring cups, fluff the flour a bit, then scoop out 1 cup of flour with the measuring cup and level it off with a knife.

Today we're making easy Amish Sugar Cookies! Amish Sugar Cookies are soft and tender cookies with a delicate buttery vanilla flavor. As my kids say, βMom, they melt in your mouth!β
There are a few keys to achieving the melt-in-your-mouth texture that is so delightful. First, we use a combination of butter and oil. The oil coats the flour and reduces gluten development, helping the cookies stay tender. Second, we use a combination of granulated and powdered (or confectionerβs) sugar. The ultra-fine grains of sugar and touch of cornstarch in the powdered sugar create cookies that are softer and more delicate. Third, we bake the cookies until edges are just set and barely golden, not crispy.
If youβre looking to add a little sparkle to these Amish Sugar Cookies, flatten the tops just a bit with your fingers and then dust on some colored sugar. For a more flavorful version, try adding a hint (about 1/4 teaspoon) of almond, lemon, orange, or maple extract. Hope you have fun with these!

3. Preheat oven to 375 F. Line baking sheet with parchment paper. Using a 1 Β½ teaspoon cookie scoop, scoop balls of dough onto parchment about 2 inches apart. Bake 8-10 minutes. Let cool on the baking sheet for 2-3 minutes, then transfer to a wire rack to cool completely.
Make-Ahead Tip: Cookie dough can be scooped into balls and frozen on a parchment lined baking sheet. Freeze 2 hours; then transfer to a Ziploc bag and freeze for up to 2 months. To bake from frozen, do not thaw. Bake at 375 F for 10-12 minutes.

INSTRUCTIONS: In a pie plate or shallow bowl, mix together the half-and-half, eggs, vanilla and cinnamon until well combined. Melt a pat of butter in a non-stick or cast-iron pan or griddle over medium heat. Working with one piece of bread at a time, dip a slice of bread in the egg-custard mixture and let it soak for a few seconds, then flip the bread and soak the other side. The first secret to focaccia is to use a very wet dough ("high-hydration dough"), so the water to flour ratio is important. The wet dough produces the pillowy center you want for focaccia. The second secret is to "stretch and fold" the dough rather than knead it. A high-hydration dough is very difficult to knead without adding additional flour (which we don't want to do because more flour will create a dense dough). INGREDIENTS: β’ 3 Β½ cups (480 g) bread flour β’ 2 ΒΌ teaspoon Kosher salt β’ 1 packet (2 ΒΌ teaspoons) Instant yeast β’ 1 β cups (390 g) warm water (105 β 115β) β’ 2 Β½ Tablespoons extra virgin olive oil, plus about 5 Tablespoons more for pan and top of bread
INSTRUCTIONS: 1. In a large mixing bowl, mix together flour, salt and yeast. Measure out 1 β cup warm water (105 β 115β) and add 2 Β½ tablespoons olive oil. Add water and oil to dry ingredients and stir until fully combined. (Dough will be very wet and sticky.) Cover bowl with a clean dish towel, set in a warm spot, and let dough rest for 20 minutes.
2. Remove dish towel and begin the βstretch and foldβ process. Using wet hands to prevent sticking, pull one edge of the dough up and then fold it over towards center of dough. Turn bowl ΒΌ turn and repeat stretch and fold. Wet hands as needed to prevent sticking. Continue stretching and folding until you have turned the bowl 3 times around (about 12 total stretch and folds). Cover bowl with dish towel, set in a warm spot, and let dough rest for 20 minutes.
3. Repeat the stretch and fold process a second time. Then cover bowl with dish towel, set in a warm spot, and let dough rest for another 20 minutes.
4. Repeat the stretch and fold process a third time. Then cover bowl with dish towel, set in a warm spot, and let dough rise for 60 to 90 minutes. Dough should be big and bubbly.
5. Drizzle 3 Tablespoons olive oil in the bottom of a 9x13β pan. Tilt pan to distribute oil. Gently turn risen dough into pan, using a rubber spatula to help release it from the sides of the bowl if needed. Lightly oil your hands and gently press and stretch the dough towards the edges of the pan. (Donβt force it. If it resists, let dough rest 10 to 15 minutes, then continue gently stretching until it fills most of the pan.) Cover pan with an inverted baking sheet and let rise 30 to 45 minutes until puffy and airy. Preheat oven to 425β while dough is rising (a fully preheated, hot oven will produce the best crust).
6. Drizzle 1 to 2 Tablespoons olive oil over the dough. Press lightly-oiled fingertips straight down into the dough to create deep dimples all over. Bake at 425β until bread is golden brown on top and crisp on the bottom. Cool for 5 minutes in the pan. Then transfer to a wire rack and continue to cool until ready to serve.
Notes:
β’ Focaccia is best enjoyed on the day it is made. β’ For short-term storage: Cool completely. Wrap tightly in plastic or store in an airtight container for up to 2 days. Reheat in the oven at 350β for 5-10 minutes to re-crisp crust. β’ For long-term storage: Cool completely. Slice into portions. Wrap tightly in plastic or foil and place in a freezer bag. Remove excess air from bag and seal. Freeze for up to 2 months.

INSTRUCTIONS: 1. In a small bowl, mix together cumin, coriander, smoked paprika, cinnamon, cayenne, salt and pepper. Place chicken thighs in a Ziplock bag. Sprinkle seasonings all over the chicken and drizzle with olive oil. Move the chicken around in the bag so everything gets coated evenly. Refrigerate the chicken for at least 20 minutes or up to 48 hours.
2. Using the grill, air fryer, or oven, cook chicken until the internal temperature reaches 175 F. Cook times are provided below but may vary depending on the size of each thigh. (If using chicken tenders or chicken breasts, cook until the internal temperature reaches 165 F.)
GRILL: Heat grill to high. Lightly oil grates. Grill chicken for about 5 minutes per side, or until internal temperature reaches 175 F.
AIR FRYER: Arrange chicken, lying flat, in the air fryer basket. Air fry at 380 F for 7-10 minutes for smaller thighs, and 12-15 minutes for larger thighs, or until internal temperature reaches 175 F.
OVEN: Preheat oven to 415 F on the convection setting. Drizzle about 1 tablespoon olive oil on a sheet pan. Place oiled pan in oven for 3 minutes. (The heated pan and oil will help sear the chicken.) Use a potholder to remove the hot pan from the oven. Place chicken on the hot pan and bake for 14-16 minutes, or until internal temperature reaches 175 F.
3. Transfer to a serving platter and sprinkle with finely chopped parsley if desired. Serve chicken, warm, with lightly salted labneh or Greek yogurt for dipping.

INGREDIENTS: 1/4 cup light olive oil (58 ml) 3/4 cup sugar (150g) 1 Tablespoon vanilla 1/2 teaspoon almond extract 2 eggs 1 3/4 cups (235g) all-purpose flour 1 teaspoon baking powder 1/4 teaspoon salt 3/4 cup finely chopped pecans 1/2 cup dried blueberries
INSTRUCTIONS: Preheat oven to 300Β°. Line a baking sheet with parchment paper or foil. In a large mixing bowl, mix together flour, baking powder, salt and sugar. In a smaller bowl, whisk together oil, extract and eggs. Add wet ingredients to dry and stir to combine. Mix in pecans and dried blueberries (dough will be very thick). Using wet hands (dough will be sticky!), separate dough into two piles on the lined baking sheet, about 3 inches apart. Using wet hands, spread each pile into a rectangle (about 4 inches wide, 8 inches long and Β½ inch tall). Bake for 35 minutes or until light brown. Remove from oven. Cool for 5 minutes. Reduce heat to 200Β° F. Transfer one rectangle to a cutting board. Using a sharp knife, cut the rectangle into 1-inch slices (so each biscotti is about 1-inch wide by 5 inches long and Β½ inch tall). Lay biscotti on their sides on the baking sheet. Repeat with second rectangle. Bake biscotti for about 30 minutes or until hard. Remove from pan to cool on a wire rack.
When itβs cold outside, not much sounds better than a warm bowl of this satisfying white bean and chicken chili. With healing spices and shredded chicken, this chili is much lighter than the beef-and-pinto-bean variety, more like a satisfying Mexican soup.
For the chicken, I love to use a whole smoked chicken from a nearby BBQ restaurant (which is very easy to find in Texas! π€ ). The smokey flavor from the chicken infuses the entire dish in the best way. If thatβs not an option though, a rotisserie from the grocery store will work, too. Can't wait for you to try this one!

INSTRUCTIONS: Melt butter in a large pot over medium heat. Add onions; cook, stirring occasionally, until softened, about 5 minutes. Add garlic and cook until fragrant, about 1 minute. Reduce heat to medium-low. Add chicken stock, cumin, coriander and chilies. Simmer for 15 minutes. Add beans, shredded chicken, and lime juice. Simmer 5 minutes more. Reduce heat to low. Add sour cream; stir until smooth. Taste, adjust seasonings if needed, and serve. Top with grated cheese, fried tortilla strips, avocado, cilantro, and lime.

INGREDIENTS 1 lb. (454 g) boneless, skinless chicken breasts 1 cup (240 g) Julioβs mild fresh salsa 2 teaspoons chopped chipotle in adobo sauce 8 oz. (226 g) shredded Mexican blend cheese 24 corn tortillas Spray olive or avocado oil
For serving: guacamole, cilantro lime sauce, salsa
INSTRUCTIONS
1. Make chicken tinga filling using an Instant Pot or Slow Cooker.
β Instant Pot: Place chicken breasts in the instant pot in a single layer. Add chipotle to salsa and stir to combine. Pour over chicken. Lock lid and set valve to sealing. Cook on High Pressure for 9 minutes. Let pressure naturally release for 1-2 minutes, then quick-release any remaining pressure.
β Slow Cooker: Place chicken breasts in the slow cooker in a single layer. Add chipotle to salsa and stir to combine. Pour over chicken. Cover with lid and cook on LOW for 4-5 hours, or HIGH for 2-3 hours, until chicken is very tender.
2. Transfer cooked chicken to a bowl (reserve cooking liquid for later) and shred chicken with two forks or a Kitchen Aid stand mixer fitted with the paddle attachment.
3. To the shredded chicken, add back about Β½ of the cooking liquid. (The liquid adds flavor, but too much will cause chicken to be soupy.) Discard remaining cooking liquid or use as a base to flavor beans or rice.
4. Wrap 8 tortillas in a damp, clean dish towel. Microwave for 1 minute. Place warm tortillas (still in damp dish towel) next to a cutting board. Working with one tortilla at a time, place 1 Tablespoon shredded cheese and 2 Tablespoons chicken across the bottom third of the tortilla. Tightly roll up the tortilla and secure with a toothpick.
5. Fit 8 taquitos into the basket of the air fryer, gently pressing the toothpick through both the taquito and one of the holes in the basket. (This technique will keep taquitos from rolling around or spilling open.) Spray taquitos with olive oil.
6. Air fry at 350 F for 10-12 minutes, removing the toothpick halfway through. While taquitos are cooking, repeat steps 4 and 5 above with remaining chicken and cheese. Use tongs to transfer taquitos to a platter. Serve immediately.
Make-Ahead Tip: Taquitos can be made ahead and frozen. Fully cool taquitos and then freeze 1-2 hours on a parchment lined baking sheet. Transfer to a freezer bag, remove as much air as possible, seal and label with date. Store in the freezer for up to 2 months. To reheat, microwave taquitos for 1 to 2 minutes, then air fry at 350 F for 2 to 3 minutes to re-crisp the tortilla.

INGREDIENTS: β’ 2 ΒΎ cups (360g) all-purpose flour β’ Β½ teaspoon baking soda β’ ΒΎ teaspoon salt β’ 1 Β½ teaspoon ground ginger β’ 1 Β½ teaspoon ground cinnamon β’ Β½ teaspoon ground cloves β’ Β½ teaspoon grated nutmeg β’ Β½ cup (113g) unsalted butter, room temperature β’ Β½ cup (100g) packed brown sugar β’ 1 large egg β’ Β½ teaspoon vanilla β’ 6 fl. oz. (170g or Β½ cup) unsulfured molasses
Decoration: melted white chocolate and gold sprinkles
INSTRUCTIONS: 1. In a large bowl, mix together flour, baking soda, salt and spices. Set aside.
2. In the bowl of a stand mixer, cream butter and sugar until well-combined. Add eggs and vanilla and mix again. Add molasses and mix again until smooth. Add half the dry ingredients to the wet and mix just to combine. Add second half and mix again until forms a sticky dough. Shape into a 1-inch slab, wrap in plastic, and refrigerate for 2 to 48 hours.
3. When youβre ready to bake the cookies, preheat oven to 350 F (176 C). Toss some flour on your counter and line a baking sheet with parchment paper. Unwrap dough and let sit on the counter for 5 minutes. Gently roll out the dough, adding flour as needed to prevent sticking, until dough is about ΒΌ inch thick. Cut out cookies and transfer to baking sheet.
4. Bake cookies for 8-10 minutes for smaller cookies, or 10-12 minutes for larger ones. Let cookies cool on baking sheet for 5 minutes; then move to a wire rack and cool completely. Gather up scraps and repeat with remaining dough, working the dough as little as possible to avoid tougher cookies.
5. Decorate with drizzled white chocolate and gold sprinkles if desired.

PESTO PINWHEELS Makes 16 1 sheet puff pastry, thawed 1/4 cup pesto 1/4 cup grated mozzarella cheese (optional) Preheat oven to 400 F (204 C). Line a baking sheet with parchment paper. Lay puff pastry on a lightly floured surface. Spread pesto on puff pastry, leaving 1/2 inch clear on the right-side edge. Sprinkle mozzarella cheese over pesto if desired. Roll puff pastry from left to right and press to seal the edge. Wrap in plastic and freeze 15-20 minutes. Using a sharp knife, slice into 1/2 inch thick slices and place about 1 inch apart on parchment-lined baking sheet. Bake until golden brown and crispy, about 25 minutes.
ROASTED OLIVES Makes 1 cup 1 cup mixed pitted olives Zest of 1/2 lemon 2 sprigs fresh rosemary Olive oil Preheat oven to 400 F (204 C). Place olives in a small baking dish. Add lemon zest and whole rosemary sprigs on top. Bake for 20 minutes. Serve warm.
ROSEMARY PECANS Makes 2 cups 2 cups pecan halves 2 Tablespoons unsalted butter 2 teaspoons minced fresh rosemary Salt Preheat oven to 300 F (150 C). Place pecans in a bowl. Pour butter over pecans. Add rosemary and salt. Toss to coat. Spread into single layer on a baking sheet. Bake for 25-30 minutes, tossing once halfway through. Serve warm.
CHRISTMAS TREE CUCUMBER TOASTS 1 loaf French bread, sliced into 3/4 inch thick slices Olive oil 1 English cucumber (preferably seedless) Garlic herb cheese spread or hummus Preheat oven to 400 F (204 C). Brush or spray bread with olive oil. Bake for 15 minutes, turning once halfway through. Cool completely. Using a veggie peeler, slice cucumber into very thin, long strips. Spread cheese spread or hummus on toasts. Place the cucumber on top, lining up one edge with the edge of the toast, then zig zag the cucumber back over itself until you reach the end. Insert a star-topped pick through top of cucumber stack into the bread. Gently pull cucumber stack up to the top of the star pick, forming a Christmas tree shape. Serve within 20-30 minutes.
PIGS IN A BLANKET Makes 18 1 sheet puff pastry, thawed 6 oz lil smokies sausages Everything but the bagel seasoning or sesame seeds For serving: ketchup or mustard Preheat oven to 400 F (204 C). Line baking sheet with parchment paper. Lay puff pastry on a lightly floured surface. Using a sharp knife or pizza cutter, cut puff pastry into 18 rectangles (cut into thirds vertically and horizontally, then cut each third in half vertically). Place sausage on one end of a rectangle and roll up. Place on lined baking sheet. Repeat with remaining sausages. Brush a little water on top of puff pastry. Sprinkle with seasoning or sesame seeds. Bake for 30-35 minutes. Serve with ketchup or mustard.
CAPRESE STACKS Makes 15 30 cherry tomatoes 15 mini balls of marinated mozzarella For serving: fresh basil, balsamic glaze or pesto Press cherry tomato onto a decorative appetizer pick. Follow with a mozzarella ball and another cherry tomato. Repeat with remaining tomatoes and mozzarella balls. Serve on with balsamic glaze or pesto, and garnish with fresh basil.
CHEESE STRAWS Makes 22 1 sheet puff pastry, thawed 1/4 cup grated cheese Optional: dried parsley or smoked paprika Everything But the Bagel or Avocado Toast Seasoning Preheat oven to 400 F (204 C). Line a baking sheet with parchment paper. Lay puff pastry on a lightly floured surface. Using a rolling pin, roll out about 1 inch vertically and horizontally. Sprinkle cheese over the lower half of the puff pastry. Sprinkle with parsley or smoked paprika if desired. Fold top half of puff pastry over bottom. Roll again to seal two sides together. Using a sharp knife or pizza cutter, trim and discard right and left edges. Slice vertically into 1/2 inch thick pieces. Gently twist each strip of pastry and place on baking sheet. Bake until cheese straws are puffed and golden brown, about 20 minutes.

For a gluten-free version, simply sub in a cup-for-cup gluten-free flour blend for the all-purpose flour. For a reduced sugar version, sub in Truvia brand brown sugar substitute (link below).

Ingredients: 1 Β½ cup (210 g) all-purpose flour 1 teaspoon baking soda Β½ teaspoon salt Β½ cup (113 g) unsalted butter, melted ΒΎ cup (150 g) brown sugar, packed 2 large eggs 2 teaspoons vanilla 3 mashed bananas (1 ΒΌ cup or 300 g) Β½ cup (120 ml) sour cream Β½ cup (60 g) chopped walnuts
Topping: chopped walnuts
Instructions: Preheat oven to 350 F (176 C). Grease a 9x5x3-inch loaf pan with baking spray or butter. In a medium bowl, mix together flour, baking soda and salt. Set aside. In a large bowl, whisk together melted butter and brown sugar until smooth. Add eggs and vanilla; mix again. Add bananas and sour cream; mix again. Add dry ingredients to wet; mix just to combine. Fold in walnuts. Pour batter into loaf pan and sprinkle with additional chopped walnuts if desired. Bake for 60-65 minutes, or until toothpick inserted into the center comes out clean.

Instructions: 1. Preheat oven to 375 F (190 C). Line two baking sheets with parchment paper. 2. In a medium bowl, mix together flour, salt and finely chopped walnuts. Set aside. 3. In a large mixing bowl, cream butter, sugar, vanilla and maple extract, scraping down sides as needed. Add dry ingredients to wet and beat again just to combine. 4. Shape dough into 24 1-inch balls. Place 12 balls on each lined baking sheet and bake for 12-15 minutes. Do not brown. Place 1 cup powdered sugar in a shallow bowl. Let cookies cool slightly before rolling in the powdered sugar. Enjoy!
Make-Ahead Tip: β’ Unbaked cookie dough balls can be frozen for up to 2 months. Freeze on a flat surface and then transfer to a freezer bag or other freezer-safe container. Bake from frozen and add 2-3 minutes to the bake time. β’ Baked cookies can be frozen (before dusting in powdered sugar) for up to 2 months. Thaw on the counter, dust in powdered sugar and serve.

INSTRUCTIONS Melt butter in a large skillet over medium-high heat. Add onion, carrots and celery and cook, stirring frequently, until soft, about 15 minutes. Add garlic, thyme, salt and pepper. Cook until fragrant, about 2 minutes. Reduce heat to medium and sprinkle flour over vegetables and cook, stirring frequently, about 1 minute. Add wine and broth, stirring and cooking until flour is no longer visible and some alcohol is cooked off, about 4 minutes. Add half-and-half, peas, chicken, and Worcestershire; stir and continue cooking 2 minutes more. Taste and adjust salt if needed. Transfer filling to another container and refrigerate until completely cool. On a lightly floured surface, roll out one pie crust into a 15Γ10-inch (38Γ25-cm). (Puff pastry may roll out a little smaller, depending on the brand.) Cut into 4 rectangles. Place about 1/4 cup filling on one side of each rectangle, leaving room around the edge. In a small bowl, whisk together egg and water. Using egg wash to brush around the edge, fold the rectangle in half, and press to seal. Using the tines of a fork, press around the edge to create a decoration and further seal the edge. Cut 3 slits in the top of the crust so steam can escape. Repeat with remaining filling and pie crusts. Just before baking, brush pies with egg wash. AIR FRYER: Place 2-4 pies in the basket of an air fryer. For egg wash: 1 egg + 2 teaspoons water For serving: sweetened whipped cream
ππ‘π¦π§π₯π¨ππ§ππ’π‘π¦ Roll out pie crust and fit into 9-inch plate; then freeze for 30 minutes.
In a small pot, mix together pumpkin puree, brown sugar, salt, cinnamon, ginger, cloves, allspice and maple syrup. Cook over medium-low heat, stirring often, for 10-12 minutes. Transfer cooked pumpkin mixture to another container and refrigerate to cool completely.
While pumpkin mixture is cooling, blind bake the crust. Preheat oven to 415 F (212 C) and remove pie crust from freezer. Let crust sit on counter for 15 minutes while oven preheats. Line pie crust with parchment paper and fill with pie weights, or fit a disposable aluminum pie plate inside the parchment (pressing down so the plate fits tightly inside the pie crust) and then place an inverted oven-proof bowl in the center to weigh it down. Bake on parchment-lined baking sheet until edges are set, 15-20 minutes. Remove parchment and pie weights or disposable pie plate and bowl (be careful β the bowl will be very hot!) and set aside. Prick the bottom of the pie crust with a fork, reduce heat to 350 F (176 C) and bake crust for 15 minutes more. In a small bowl, whisk 1 egg and add 2 teaspoons water. Brush a thin layer of egg wash all over the warm crust. Bake the crust for 2 minutes more.
While pie crust is baking, make custard. In a large bowl, gently whisk 2 eggs until light yellow. Add half and half, vanilla and cooled cooked pumpkin mixture; whisk until just combined. Mixture should be smooth and all one color. Do not over-whisk.
When crust is done, pour filling into crust. Cover crust edges with pie shield or aluminum foil. Bake at 350 F (176 C) for 60 to 70 minutes, until custard is set and does not wobble.
Let pie cool completely, about 4 hours. Serve and enjoy!
Make-Ahead Tips: - Cooked pumpkin mixture can be made 3 days ahead. Today we're making a fresh green bean casserole from scratch! We start with 1.5 pounds of fresh green beans and 1 pound of sliced mushrooms. Yum! For the sauce, we use chicken broth and half and half, and thicken those with a little flour, sour cream, and Parmesan cheese for a ultra-creamy but not overly-heavy texture. To add layers of flavor, we mix in fresh thyme and garlic, along with stone-ground mustard and Worcestershire sauce. And then to brighten things up, we sprinkle in a little lemon zest before cooking, and then lemon juice at the end. It's such a delicious combination of flavors!
For the topping, grab jar of French fried onions, or try your hand at some home-fried shallots! Either one adds a salty, crispy, indulgent crunch to a creamy green bean casserole. Canβt wait for you to try it!

Instructions: 1. Preheat oven to 375 degrees F. Grease a 10x8x2.5-inch baking dish.
2. Bring a large pot of water to a boil. Add salt and wait until the boil returns. Add green beans and cook until tender, 8-10 minutes. Using tongs, transfer cooked green beans to an ice bath to stop the cooking and maintain bright green color. Drain water and dry beans thoroughly. Transfer to the baking dish.
3. In a large saute pan, melt butter over medium high heat. Add olive oil and mushrooms. Cook 10-15 minutes, stirring frequently, until mushrooms are starting to brown and liquid is evaporated. Add garlic and thyme leaves, stir, and cook until fragrant. Add flour, stir and cook about 1 minute (mixture will be very dry). Add chicken broth, stir, and cook 2-3 minutes until mixture starts to thicken. Add half-and-half, mustard, and Worcestershire sauce; stir to combine. Cook 5 minutes over medium heat, stirring occasionally. Add sour cream, lemon zest, 1/2 cup grated Parmesan, salt, and pepper; stir to combine. Pour sauce over green beans and gently stir to combine.
4. Bake casserole at 375 degrees F for 30-40 minutes, or until filling is bubbly and green beans are soft. Add 1 1/2 teaspoons lemon juice and remaining 1/4 cup Parmesan. Stir to combine. Taste and add more salt and pepper if needed. Top with crispy fried onions or shallots and serve.

Heat custard over medium heat until mixture is thick and large bubbles rise to surface, about 6 to 8 minutes. After you see a few bubbles, whisk about 10 seconds more. Then remove pot from heat, and add butter cubes while whisking until fully combined. Add vanilla and bourbon and whisk just until smooth. Pour hot filling into crust and smooth top with a spatula. Sprinkle top with ground cinnamon and nutmeg.
Bake at 375 F (190 C) for 20 minutes (itβs okay if the filling wobbles when you move the pan β it will firm up when it cools). Let pie cool completely on wire rack, about 2 hours. Then cover with plastic wrap and refrigerate 4 hours, or up to 48 hours. Serve and enjoy!

(680-900g) beef stew meat β’ ΒΌ cup (30 g) all-purpose flour β’ Β½ teaspoon salt β’ Β½ teaspoon smoked paprika β’ Freshly ground pepper β’ Extra virgin olive oil β’ 1 medium onion, roughly chopped β’ 2 teaspoons herbs de Provence β’ 3 Tablespoons (50 g) tomato paste β’ 4 cloves garlic, minced β’ 2 cups (480 ml) dry red wine β’ 1 teaspoon finely chopped fresh rosemary β’ 2 dried bay leaves β’ 3 to 4 cups (712-950 ml) beef broth β’ 4 carrots, peeled and sliced β’ 2 to 3 cups (300-450 g) cubed potatoes β’ 1 cup (125 g) chopped frozen green beans β’ 1 cup (125 g) frozen petite green peas β’ 1 Tablespoon balsamic vinegar β’ 2 Tablespoons Worcestershire sauce
For serving (optional): wide egg noodles, warm bread
ππ‘π¦π§π₯π¨ππ§ππ’π‘π¦ 1. In a large bowl, whisk together flour, salt, paprika, and pepper. Add beef and toss with seasoned flour until all pieces are coated.
2. In a large Dutch oven, cook onions in oil over medium heat until soft. Transfer onions to a bowl and set aside. Add additional olive oil to the Dutch oven. Working in batches, brown beef in oil over medium heat. Add onions back to the pot with the beef, along with herbs de Provence, tomato paste, and garlic. Stir and cook until fragrant, about 2 minutes.
3. Add wine and stir, scraping up any brown bits on the bottom of the pan; cook until mixture just comes to a boil. Simmer about 5 minutes. Stir in 2 to 3 cups broth (depending on desired thickness), rosemary and bay leaves. Bring to boil. Reduce heat, cover with lid and simmer about 45 minutes to 1 hour.
4. Add carrots, potatoes, frozen green beans and additional 1 cup broth. Stir, cover and simmer until meat and vegetables are tender, about 45 minutes more.
5. Add frozen peas (if using), vinegar and Worcestershire sauce. Discard bay leaves. Stir and simmer for about 10 more minutes. Taste and adjust seasoning. Serve with wide egg noodles or warm bread.
Gluten-Free Version: Use gluten-free flour blend in place of all-purpose flour.
Make-Ahead Tip: Allow stew to cool completely. Portion into freezer-safe containers, leaving about 1-inch at the top for expansion. Stew can be stored in the freezer for 2-3 months. Thaw overnight in the refrigerator and then reheat to desired temperature.

Add 3 tablespoons very cold water and 2 tablespoons vodka. Pulse about 8 times. The dough should feel dry when you run your fingers through it, but should hold together in a ball when you squeeze it in your hand.
Spread a large piece of plastic wrap on the counter. Gently dump the dough (it will be crumbly) onto plastic wrap. Pull plastic wrap together around the dough and mold it with your hands so the dough forms a disc inside the wrap. Refrigerate dough for at least 20 minutes, and up to 2 days.
When you are ready to roll out the crust, remove dough from refrigerator, unwrap and let sit at room temperature for about 5 or 10 minutes. Use your hands to flatten the dough slightly so it will be easier to roll out. Toss some flour on your countertop. Place the flattened dough in the center. Using a rolling pin, roll out the dough into a circular shape that has about the same thickness all the way around. After each roll, turn the dough ΒΌ turn clockwise in order to keep it from sticking. Once the dough is large enough to fit your pie plate, gently place in the pie plate with edges hanging over. Gently press the dough into the bottom of the plate. Using your hands, tuck any dough that overhangs the plate under itself, resting on the lip of the pie plate, into an even edge.
Finally, crimp the edges with your fingers for a decorative scalloped shape. Wrap in saran wrap and store crust in freezer for up to 2 months. Ingredients: β’ 2 cups (280 g) cake flour or 1 3/4 cup (245 g) all-purpose flour β’ 1 Tablespoon sugar β’ 2 teaspoons baking powder β’ 1/2 teaspoon baking soda β’ 1/2 teaspoon salt β’ 8 Tablespoons (113 g) cold unsalted butter β’ 3/4 cup (180 ml) cold buttermilk*
*To make your own buttermilk, add 2 teaspoons lemon juice to scant ΒΎ cup milk. Let sit 5 minutes to curdle.
Instructions: 1. In a medium bowl, mix together cake flour, sugar, baking powder, baking soda and salt.
2. Using a hand grater, grate butter into a large bowl. Add dry ingredients and toss to combine. Add buttermilk and mix gently just until the dough comes together; do not overmix.
3. Dump dough onto a lightly-floured surface and press into a 1 inch thick rectangle. Fold dough in half and then gently press back into a 1 inch thick rectangle. Rotate dough ΒΌ turn, then repeat folding, pressing, and rotating three more times, sprinkling flour on dough or the rolling surface if needed. Press the dough into a 7 x 4 x 1 inch rectangle. Wrap in saran wrap and chill for about 10 minutes.
4. Dip a 2 Β½ to 3 inch biscuit cutter in flour and cut out 3 biscuits (press straight down and lift straight up; donβt twist), dipping the cutter in flour between each cut. Gather scraps of dough, press out into 1 inch thick rectangle, and cut out remaining 3 biscuits.
5. Line the basket of an air fryer with a square of parchment. Place biscuits near the outer edge of the parchment (to hold it down while air circulates) about 1 inch apart. Air fry at 325 F (162 C) for 20-25 minutes. Halfway through cooking, brush a little melted butter on top of each biscuit if desired. Cool on a wire rack. Cook remaining biscuits or freeze for later.
Make-Ahead Tip: Freeze raw biscuits on a flat surface, then place in a freezer-safe bag for up to 3 months. Air fry from frozen (do not thaw) at 325 F (162 C) for 25-30 minutes.
Gluten-Free Version: Use 2 cups (280 g) gluten-free flour blend in place of cake flour. After folding and pressing dough into 7 x 4 x 1 inch rectangle in step 4, wrap in plastic and chill in the refrigerator for 15 minutes before cutting. Air fry biscuits at 325 F (162 C) for 18-22 minutes.
For the Oven: Bake on a parchment lined baking sheet at 375 F for 18-20 minutes.
