Cooking ILOCANO favorite dishes in my bamboo house, complete from appetizer to dessert! Gayyem Ben 2025-08-11 | TODAY, I cooked few Ilocano favorite dishes from appetizer to dessert. Some of the notable Ilocano dishes featured here like the tambo-tambong can only be eaten during celebrations as I grow up. The pinakbet, an Ilocano vegetable stew is a comfort food of mine as an Ilocano kid. It is savory and healthy at the same time. Bagnet and dinakdakan can be eaten with rice as a viand or it can be consumed as pulutan(food taken while drinking alcohol). Some uses bagnet as ‘sagpaw’, to pinakbet. Sagpaw means adding meat or fish to a certain dish to add flavor. Sapsapuriket or dinardaraan nga manok is a savory stew made with poultry and chicken blood. I don’t oftenly eat Ilocos empanada since it’s only available in the streets of Ilocos Norte and Ilocos Sur provinces which is very far from my home province, Nueva Vizcaya. As a country folk, going to the river to gather anything edible is really a part of our survival in the boondocks. Today, my brother and I went to the river to and gathered bennek clams and agurong snails. I cooked the clams and snails the next day since these need to be soaked in water for at least twelve hours to remove dirt. I made pinipig and turned it into a dessert which we ate after dinner. The next day, I dug cassava roots and made nilupak - a pounded cassava dessert. Pounding boiled cassava is called lubi-lubi in my hometown. It’s onion season so we harvested onions and used it to cook various dishes in my bamboo house Gayyem Ben 2025-03-21 | My friend invited me to her onion garden to get some onions. I gathered enough to use in my kitchen. I made a much healthier 'burger' for my siblings. I caramelized some onions for three hours and made 'patties' using banana blossom. The next day, I harvested okra and cooked pinakbet, paksiw and okra stir fry. GINGER | Harvest ginger to cook Filipino food | Inasal, Ginisang Munggo, Pininyahang Manok and more! Gayyem Ben 2025-02-09 | I harvested ginger in my garden to cook chicken inasal, a Filipino chicken BBQ. Ginger is a very important ingredient when making chicken inasal because you need a lot for the marinade. I've been craving inasal lately and decided to make some and it went well. My parents liked it too.The next day I prepared ginisang munggo(sauteed mung beans) with wild ampalaya leaves that grew in my backyard. You can add moringa leaves instead of ampalaya leaves but since I'm Ilocano, I grew up eating mung beans with bitter gourd leaves. I noticed that one of my pineapples is ripe so I cooked pininyahang manok(chicken with pineapple) too. I like the balance when eating this dish. It has the balance of sourness, sweetness, saltiness and creaminess from the coconut milk. Of course we ate this with rice. Rice is very important in every Filipino meal. It's our staple food. I cooked ginger fried rice to complete the dinner. I sauteed chopped ginger and garlic then added leftover rice, scrambled egggs and spring onion from my backyard. This is a sign of planting plenty of vegetables and fruits whether for one's own consumption or commercial purposes. I planted ginger on my mini garden in front of my kallapaw(hut). I gathered decayed hay to put into my garden bed to make the soil better before planting. Just before the wet season came I already planted tomatoes, chilies and herbs in my garden. I will plant more soon for our own consumption.In the afternoon, I cooked adobo fried rice for our family dinner. It's an easy dish to make but very tasty. The process includes cooking adobo(pork or chicken) first then stir fry with leftover rice. Cook tambo-tambong, make breakfast | Sea of clouds, rainy days in the countryside [Gayyem Ben] Gayyem Ben 2024-06-23 | It’s officially rainy season in my country.I cooked fried rice or ‘kinirog’ in my language and harvested pakbet chilies(not spicy), chinese malunggay and eggplants for my lunch. I grilled the eggplants with the chillies and blanched the chinese malunggay in a boiling water. I made tomato-onion and bagoong sauce for the vegetables. It rained as I eat my lunch.I wentt to the market to grind the whole glutinous rice grains to make tambo-tambong(Ilocano) or ginataang bilo-bilo for the Tagalogs. The Bisaya people call it binignit. I grated carrots and pandas leaves and got the liquid to give color to the ground glutinous rice. It’s so good to eat such food for the rainy season. I hope you like our video for today. Making halo-halo to beat the heat in the Philippines, 40 degrees celcius! Gayyem Ben 2024-05-05 | An ‘el niño pheneomenon’ hit my country before the dry season. Now that the dry season came, the weather became hotter than usual. In some parts of my country they are experiencing 45 to 50 degrees celcius during the day. In our place, we’re still lucky for having 37 to 40 degrees celcius heat index during the day and 21 to 29 degrees celcius during the night. It is cooler than the other places in the Philippines.To beat the heat, I made halu-halo, a Filipino shaved ice dessert with sweetened fruits and other ingredients. This food is very memorable to me. I remember growing up, I beg for 10 pesos to my mother and go buy half-halo in our neighbor's house during the dry season.
