You shouldn't eat green potatoes, but you can plant them. I cut large potatoes to scab a few days and we had one night of -2C, so failure is an option.. I will do a couple of updates through the winter. I am wildly optimistic for success come spring.

We were incredibly successful last year using this Irish method here in Canada. Those winter and spring jobs are now off the table, so you can concentrate on the patio and yard.

TOMATO PLANTING IN FALL? Two Turtle Garden & Outdoors 2022-11-11 | Tried planting tomatoes out in fall for spring germination three years ago and its been a total success for three years straight. A no fuss method of getting seedlings in the spring and there is no need to start seedling as they catch up fast. The tomato seeds are protected by tomato slime and this gets the seeds through the winter.

The slime inside the tomato protects the seeds for the unforgiving Canadian winter here in zone 5B Ontario. In the spring you separate the seedlings and plant where you may.
