As they roast, the high heat works its magic, transforming the ordinary into the extraordinary. The aromas that waft from your oven are an enticing preview of the culinary delight to come.
What's truly remarkable about roasting veggies is how effortlessly it elevates everyday ingredients into a mouthwatering masterpiece.
"Vegetables require ample space! The greater the space they have on your baking sheet, without overcrowding, the superior their roasting outcome. When veggies overlap, they tend to steam instead of achieving that desired roasted texture, resulting in somewhat limp and soggy flavours.
Preheat your oven to a scorching 400°F - 200°C to ensure that the vegetables become tender on the inside and acquire that delightful caramelised exterior. Then lower to 350°F - 180°C once you put in your veggies.
Apply just enough olive oil to thinly coat the vegetables evenly. Too little can lead to burning and drying out, while excessive oil makes them overly oily and soggy.
Be patient and allow them to bake sufficiently to achieve those golden brown edges; this is where the true flavour magic happens!

A smoky chicken tandoori recipe you can make at home using one pan. It’s simple to make, and the flavours will amaze you. This recipe is prepared by marinating the chicken in a spicy tangy yoghurt mixture. This not only flavours the meat but also tenderises it and makes it juicy. Traditionally chicken tandoori is made using a tandoori oven, which is a cylindrical clay oven that originated in India. As we don’t all have tandoori ovens at home, this recipe has been simplified to give you similar results at home. Enjoy my simple smoky chicken tandoori made in one pan.
(2) Indian Chicken Curry - Simple Indian Curry with amazing flavours!
Who doesn’t like a good Indian chicken curry or a Murgh Kari.
This recipe is relatively simple with basic ingredients. No cream, stocks, canned tomatoes, or unheard spices. It’s a simple chicken curry that’s far from simple in flavour. You will need a good chicken, skin removed and broken down into 16 pieces. Keep everything on the bone, as that’s what actually makes a stock while it’s cooking giving the meat a beautiful flavour. I do not like to split the thigh bones as you get bits of bone chards which is unpleasant. You can cut the breast into four pieces still attached to the breastbone.

Butter Chicken or Murgh Makhani is always a favourite in Indian restaurants, this recipe is fairly easy and cooks the chicken in the oven. You can also cook it in a pan, on the stove, but it’s the roasting flavours that make the difference. There’s chili it’s spicy and it’s hot, so of course adjust it to your taste. Chicken Biryani or Murgh Biryani, is a classic Indian dish that has captured the hearts and taste buds of food lovers around the world. It is also a popular ingredient in vegetarian and vegan dishes, as it is a good source of protein, fibre, and essential minerals.
Dahl can be made from a variety of lentils or pulses, including red lentils, yellow lentils, mung beans, and chickpeas. This version is made using red lentils which cook very fast.There’s no need to soak them, simply boil them in water 15 to 20 minutes. Dahl is often seasoned with a blend of spices such as cumin, coriander, turmeric, and chili powder, which gives it a rich and flavourful taste.
(6) Easy to make Roti Bread “Chapati” Flat bread made with few ingredients. Unlike traditional breads, Chapati or roti bread is simple to make as there’s no yeast, so no proving. It only requires five minutes of kneading, ten minutes of resting and cooks in minutes. It’s origins are from India and is also common in South East Asia. Your kitchen will smell of toasty hot bread, and if you’re like me you won’t resist eating at least one piece with a little melted butter. I used all purpose or plain flour, but traditionally whole wheat flour is used which makes it a little coarser.

(1) Thai Beef Salad - Is this the best summer salad ever?
Thai Beef Salad must be the best summer dinner recipe ever! Made with delicious grilled tender beef, robust flavours and healthy vegetables it’s hard to beat. Plus it’s perfect for those following a low carb diet.
For the beef you can use any cut you like, I prefer tenderloin (eye fillet) but you could use sirloin, ribeye, Scotch fillet. As it’s a salad, I personally like the tenderest meat possible so it’s easy to eat with tender salad leaves.
I used coriander or cilantro, plus mint leaves. You can also use Thai basil for that extra flavour complexity. I used brown sugar instead of the traditional palm sugar as it’s usually more of a staple, but if you can find palm, then use it. Try and get fresh limes for that beautiful flavour.
(2) Thai Chicken Stir fry Recipe - Maximum flavour with fresh ingredients, easy chicken recipe.Thai cuisine is about lightly prepared dishes with strong aromatic flavours. Stir-fries which originated in China, require a very hot wok with a small amount of oil. The heat seals in the flavours and the textures. Most stir-fries include plenty of crunchy vegetables, they are fast, easy to prepare and so delicious. This chicken breast recipe was cooked in a wok, but of course you can also do it in a frying pan. The hotter the flame the better the results. I used cashews and sugar snap peas for that extra crunch, but you can also use snow peas. You will need oyster sauce and soy sauce widely available from Asian stores or Asian sections in supermarkets. Coconut oil is the best choice for frying but any vegetable oil will also work. Serve over coconut rice for that Thai authentic flavour.
(3) Simple Thai fish cakes with sweet chili sauce - With chili Sauce.
Thai fish cakes are another one of my favourites when it comes to Thai cuisine. They are so simple to make if you have a food processor. If not, then you can still do it with a knife or a cleaver and a mixing bowl, no problem. Most Thai people deep fry them, but I find you can get away with shallow frying. I also like to fry the coriander (cilantro) witch becomes crispy and adds another layer of texture and makes for a stunning garnish. But that part is optional, you could just use fresh sprigs. Serve these Thai fish cakes with a sweet chili sauce, garnished with a cheek of fresh lime and a few slices of chili. These are also known as Tod Mun pla.
(4) Thai Crispy Spicy Garlic Fried Chicken - Street food at home
After travelling to Thailand, I’m always inspired by new ideas and recipes, so this is my take on Thai Fried chicken, some say it’s the best fried chicken in the world. This fried garlic chicken recipe is crispy and remains juicy by sealing in all the juice and flavours. The added shallots are worthwhile but optional, and the sweet chili sauce is a must. Serve it with sticky rice for a great combination. See my sweet chili sauce recipe.
(5) Pad Thai Westernised - Pad Thai made with Chicken and Shrimps
An amazing Pad Thai recipe you can make at home. This recipe has a westernised spin, it’s not quite authentic using simpler ingredients.
You will however need pad Thai Pad rice noodles. It’s best to use a wok on high heat but this will still work well in a frying pan. If cooking in a pan, cook the chicken first ten set it aside. Do the same with the shrimp, and combine them with the noodles later. If using a hot wok, follow the recipe as is.
(6) Coconut Chicken Skewers Garlic and Chili, Thai Style. These Garlic and Chili Thai Style Skewers are an adaptation from Southern Thai street food. First you make a spicy garlic marinade, divide it in two and let your chicken marinate overnight in one part, or at least two hours. The chicken needs to be sliced very finely; this allows more surface caramelization. By grilling your chicken under your oven broiler or grill, you get that nice BBQ flavour we all love. Of course, a wood char BBQ is even better if you have that option. The chicken is grilled then coated in the coating mix and grilled again. This step is repeated three times allowing a thick caramelized coating for an intense flavour. If using chicken thighs, the chicken remains nice moist.

Turkish Çılbır is a harmonious culinary masterpiece that brings together the softness of poached eggs and the tangy creaminess of yogurt.
A rich drizzle of hot melted butter adds a touch of indulgence, and a sprinkling of red pepper flakes lends a gentle kick of flavour. The combination of textures and flavours creates a delightful dance on the taste buds, capturing the essence of Turkey's culinary heritage.
It seems that in some Balkan countries, the term "çılbır" is used to refer to a fried eggs dish. As these eggs are poached, I therefore prefer to pour the hot chili oil directly over the eggs while still bubbling hot. This gives the eggs a light frying, introducing an extra dimension of texture just before serving.

Beef Roulade - Delicious Beef Rolls from Germany - Rouladen is a German dish made of beef that is rolled up with bacon, onion, and pickles inside. It is simple to make and only requires a few ingredients. I’ve given this recipe a slight French twist.
First, the beef is pounded thin and then seasoned with salt and pepper. Then spread meat with ½ tbsp Dijon mustard. I used Dijon, but traditionally you would use German mustard. Next, bacon or smoked ham, onion, and pickles are placed on top of the beef before it is rolled up and secured with toothpicks or kitchen twine. The Rouladen is then browned in a pan before being simmered in beef broth until tender.This dish is typically served with potatoes and gravy. For a French twist, Rouladen can also be made with veal instead of beef. Being French, I like it served with mashed potatoes and green beans.
The Ultimate Beef Cheese Burger - Made on the stove! This is the ultimate beef cheese burger, it’s made on the stove and taste incredible! At the time of making this it was for the national hamburger day. Use a good quality beef, freshly minced by your butcher. This makes a big difference. Don’t add egg, onion and all sorts of flavourings, that’s not what a real burger is about. It’s about tasting each ingredient without over doing it. Be gentle with the patties, don’t pack them tight. Let the meat rest a few minutes and there’s no need to thumb press the centre. I used brioche buns for a higher level, but you can select your favourite bread bun. The caramelised onions bring the sweetness, the tomato for freshness, the alugura or rocket lettuce gives you a peppery taste with balsamic vinegar for acid. Melted Gruyere or Swiss cheese for cheese lovers, a perfect hamburger balance.
Beef Braciole - A Classic Italian Favourite - Braciole is a classic Italian favourite that’s sure to please the whole family. Tender slices of beef or pork are rolled up with savory fillings like Parmesan cheese, parsley and garlic before being braised in an irresistible tomato-based sauce. Serve it over pasta, or Polenta with a side of sauteed vegetables. Either way there’ll be no leftovers! Slices of the top round (topside) can be quite large so if they are, you’ll want to cut them to make it the perfect size to accommodate two slices of prosciutto. It needs to be pounded to be thin and tenderised. Braciole offers something special for any occasion; whether you’re looking for a hearty weeknight dinner idea or prepping ahead of time for entertaining guests this traditional dish packs all sorts delicious flavours into one impressive main course.
Boeuf Bourguignon - A classic French beef and red wine stew that's all about flavour! Slow cooking is the secret to this dish. Beef burgundy known in French as Boeuf Bourguignon, a well know and popular dish across France. It’s a slow cooked stew, braised in red wine and beef stock and arguably one of the most delicious beef dishes in existence. I used rump steak in this recipe but you can use any cheaper style cuts or gelatinous meats such as chuck, as it cooks for hours and still be amazingly tender.
Beef Ragu Cannelloni - Pasta filled with slow cooked braised beef with a cheesy sauce. Cannelloni is a tube or cylindrical shape pasta served baked with a filling covered in sauce. This version uses Italian style beef Ragù that’s been slowly braised for that intense flavour. Topped with a white cheese sauce and mozzarella cheese, baked until golden. It’s that Italian home style cooking at its best.
Rib Eye Steak With Red Wine Jus - The ultimate cut of meat with a shallot and red wine reduction jus. The rib eye is a tender cut of beef with great flavour due to the marbling of fat. It’s more common to have the bone removed in US. In Australia, it’s also known as Scotch fillet without the bone. This recipe uses the juices from the meat, reduced red wine, shallots and beef stock. The jus is thickened with butter for that creamy flavour. Quick to make and will please any steak lover.

It means "Jumps in the mouth" or "Jump mouth" in Italian
An Italian dish normally made with veal but works equally as well with chicken thighs. This version is braised with Marsala wine and white wine. The sauce is thickened with a little butter and the flavors are truly to die for, a marriage made in heaven. Enjoy it with a nice white wine such as a Riesling to match the sweetness of the sauce, or if you prefer reds, than a light red such as a Gamay or Pinot Noir, even a Rose will go very well. (2) Chicken in roasted bell pepper sauce
with spinach and mushrooms
Chicken in roasted bell pepper sauce. If you like bell peppers or capsicums, then this is for you. There is something magical that happens to bell peppers or capsicums once roasted. They become a whole new vegetable with a pleasing texture and smoky flavour. This recipe uses the peppers for the sauce base, giving you a reddish velvety sauce. It is made by first sautéing chicken thighs that have been coated in cayenne pepper and smoke paprika. Mushrooms and spinach are added for a complete meal. Simply serve it with pilaf rice or even pasta. Enjoy my Chicken thighs in roasted bell pepper cream sauce.
(3) Chicken Thigh Mozzarella with Smoked Ham
With triple smoked ham, sundried tomatoes and oregano, melted cheese inside and grilled cheese that oozed out on the outside, this chicken dish is to die for! If you have a choice, buy the larger chicken thighs it will be easier. Get the best The best part of this recipe is the actual cheese that oozes out of the chicken and grills in the pan, yes that’s part of it so tip it in your plate! I used triple smoked ham for that beautiful intense smoky flavour that permeates throughout the chicken, but any good smoked ham will work well. Enjoy this chicken mozzarella dish with a great white wine such as a Chardonnay or if you prefer reds, a light Pinot noir.
(4) Garlic and Herb Chicken
Chicken thighs with Crispy Skin served on Mash
A very simple and quick to make, garlic and herb chicken recipe cooked in a pan. The chicken is juicy and the crispy skin will taste like a roast chicken. Best to use thighs but you could also use the chicken breast. Make sure the skin is on and any bones removed.
If using dried herbs, use thirty percent less than if using fresh. Try and use fresh parsley, as dried parsley has little flavour.
I like to serve mine on potato mash (see my recipe) but that’s optional, you could also serve it on sweet potato mash or any vegetable you like.

East meets West recipe
Honey and Soy Chicken is classically an Asian dish. This Eastern recipe meets the West by using oregano and parsley. It’s cooked in an oven with soy sauce and honey until the juices are caramelised. Serve it with rice and greens of your choice.

Succulent crispy skin chicken with lemon butter cream sauce
It’s the sauce that makes this dish, the chicken is baked in the oven in it’s own juices smothered by the creamy lemon butter sauce. The smoky paprika permeates into the sauce and through the chicken meat. Baked with baby spinach, this dish would go well with a side of simply boiled pasta to absorb this delicious sauce.

Garlic Chili Shrimp with smoked paprika, also known as Gambas al Ajillo
Traditionally, Gambas al Ajillo or Spanish garlic prawns or shrimp are so simple to make. Made with only three ingredients, shrimps, garlic, and olive oil. This recipe is inspired from that, and brought to a higher level, with the addition of smoked paprika, chili, wine and butter for that richness and smoothness. Try and buy the best ingredients you can, fresh shrimp is always best, but frozen works well too. When deveining them, cut all the way from the tail to the top so they open nicely while cooking. Make sure you use high heat for that beautiful caramelisation. But don’t over cook them, keep them translucent inside, they will finish cooking when you throw them back in the sauce. So many recipes over cook the shrimp as they don’t set them aside first. This is such an important step, so don’t miss it.Buy the authentic Spanish smoked paprika if you can, the fragrance is so much nicer than regular ones and of course, use high quality extra virgin olive oil. Serve it with crusty bread or saffron rice.

Call it a prawn linguine or a shrimp pasta, this dish will transport you and your taste buds to a fine dining restaurant by the Mediterranean seaside. You can now make this shrimp pasta dish fast at home, where it can take many hours in a professional kitchen. If you’re a seafood lover, the flavours will leave you breathless I promise you. Restaurant food is always a level higher because of the slow cooked stock that take hours if not days to make. Who’s got time to do that at home! But this recipe uses the prawn heads and shells, and it only takes 30 minutes.So it’s well worth the extra effort of making the stock, as that’s where the magic lies. A tasty Mediterranean dish combining both French and Italian influences. Please, keep the cheese away from this one.Happy cooking!
Shrimp Pasta with Roasted Tomato and Chili Sauce - Bucatini Pasta Fra Diavolo - Brother of devil or Fratello del diavolo sauce.
If you like garlic and chili, then this is for you. Known in Italian as the brother of the devil, Fra Diavolo is per its name, is a hot and spicy dish. I have reduced the amount of chili to what I feel is an acceptable level. This allows me to still have the pleasing piquant chili sensation, and the ability to still taste my wine. Having said that, you are the cook, so make it your own. In this recipe I used roasted cherry tomatoes to elevate the flavour to another level. Buy the ripest tomatoes you can find so you have full sweetness and flavour. Otherwise use the tomatoes you have. Enjoy Bucatini Pasta Fra Diavolo!
Coconut Shrimp - Simple, Crispy and Delicious!
If you like coconut shrimp with a crispy coating than this recipe is made for you! A very simple recipe with delicious result. Too many recipes add a ton of ingredients, spices, herb, breadcrumbs etc. which takes away the integrity of the shrimp or prawn. (We call them prawns in OZ). This recipe is made simple so you can taste the real prawn flavour, enhanced with the tropical crunch of coconut. The prawn remains creamy inside with a crispy outer coating. Serve them with a crisp Asian salad with coriander leaves as a side dish. These are great as starter (entree) or appetizer. If making them in advance, you can reheat them by placing them in a cold oven, turned on at at 350°F – 180°C for 20-25 minutes. Enjoy my coconut shrimp!
Thai Style Chili Shrimp on Warm Salad
Who says you can’t make friends with salad. I guarantee this salad will make you lot’s of friends if you serve it up. The idea of a warm salad is to have fresh crunchy but slightly warm vegetables. The shrimps (prawns) need to be hot and of course spicy. This is a great Summer dish although it can also be enjoyed in colder seasons. It’s healthy and incredibly tasty with the aromas of Thailand.

I Make this Complete Meal Roast Vegetable Salad all year-round!
Who says salads have to be raw? There’s something delicious about a roasted vegetable salad in any season!
Because all vegetables cook at different rates, there’s a little skill and timing involved, but don’t worry it’s very easy. You first start with the hardest vegetables, the potatoes and sweet potato. The potato is still harder than the sweet potato, so you want to cut the pieces smaller, this way they finish cooking at the same time. Once these are almost cooked, you then add the softer vegetables. Finally, the tomatoes. Remember, it’s a salad, not a roast, therefore you don’t want to overcook the vegetables, you simply want to extract more flavour from them but still retain their integrity. Once cooked, simply toss the cooked vegetables (still warm) into your favourite dressing. I added mine if that helps.
(2) Summer Salad
With avocado, olives and semi dried tomatoes
What’s better than a healthy fresh salad on a hot day. This salad can be made as a standalone meal or as a side dish to complement a nice steak, chicken or even fish. The rocket salad (arugula) gives you a peppery taste, the tomatoes and olives will bring you to the Mediterranean and the avocado provides the smooth richness. Use semi dried tomatoes if you can otherwise sun dried will also work, just use a little less. Made with a French style dressing using only one bowl, so very simple.
(3) Mediterranean Salad
A healthy Complete Meal Salad with Cheese and Potato.
A healthy and super delicious Mediterranean salad everyone will love. A complete meal to enjoy with crusty bread. One thing I always admire when travelling through the Mediterranean countries is the freshness of the ingredients. That is always the key to a good salad, wholesome and fresh produce. This recipe is purely a guideline, so there’s plenty of flexibility for you to make it your own. Vary the quantities, it’s all about balance of colour. Try not to overdress the salad with the dressing, once the salad is gone there shouldn’t be a poodle of dressing in the bottom of the plate. It should almost be dry, so don’t use it all. Enjoy my Mediterranean salad with a bunch of people.
(4) Roasted Beetroot Salad
A healthy beetroot salad with a sweet and salty flavour. The dressing is made with honey and vinegar complimenting with the saltiness of the feta cheese. Beetroots are first peeled then roasted so you can that nice caramelisation on the outside. I find this better than peeling after. It is advisable to wear gloves when handling beetroots, as the juice will stain your hands, and that can last most of the day. For me personally that doesn’t bother me. I used my home-grown beetroots, which were so easy to grow from seeds, no chemicals, no sprays, all one hundred percent organic goodness. This is a very healthy salad, it’s delicious, and can be consumed as a complete meal. Enjoy my roasted beetroot salad with rocket, cheese and walnuts.
(5) The best Caesar salad with grilled chicken
Tasty and tangy with optional crispy bacon
Keeping closely to the original, a Caesar salad is composed of romaine or cos lettuce, croutons and a dressing made from Worcestershire sauce, garlic, egg yolk, Dijon mustard, lemon juice and Parmesan cheese. For this Caesar salad I’ve also added warm grilled chicken breast and crispy bacon. It’s tangy, it’s packed with flavour and makes a delicious meal. You cannot beat making your own dressing, enjoy the best Caesar salad with grilled chicken. The best Caesar salad with grilled chicken.
(6) No Mayo Summer Potato Salad
With lean bacon and fresh herbs
A healthier alternative to a potato salad. This recipe has no mayonnaise but uses healthy Greek yogurt instead for that creamy consistency. The bacon is lean so there’s very little fat and it’s packed with fresh herbs, and the tangy taste of Summer.

There is something magical that happens to bell peppers or capsicums once roasted. They become a whole new vegetable with a pleasing texture and smoky flavour. This recipe uses the peppers for the sauce base, giving you a reddish velvety sauce. It is made by first sautéing chicken thighs that have been coated in cayenne pepper and smoke paprika. Mushrooms and spinach are added for a complete meal. Simply serve it with pilaf rice or even pasta.
3) Italian stuffed peppers with cheese and herbs - Italian style Stuffed peppers with beef and cheese with Italian flavours. These Italian peppers make a perfect lunch or even dinner and are ideal prepared in advance. These Italian peppers have a meat filling made from beef, Parmesan cheese, herbs and brown rice. The peppers are first roasted to soften the flesh and bring out the pepper flavours. Ensure you select even sided large peppers or capsicums when buying. Leaving the stems on gives it a more rustic appealing look, but that’s entirely optional. A serve of two halves per person is perfect but you can also serve half with a nice salad.
4) Bell pepper chicken stew - A one pot or pan wonder that you can make anytime of the week, simple and delicious. This is perfect with rice or pilaf rice, see my recipe. The chicken thighs are first coated in seasoning and smoked paprika. It's browned and mixed with three different colored bell peppers or capsicums. You could of course use what ever color you like if unavailable. The chicken thighs are slowly stewed for 30 minutes rendering them very tender. You can use fresh or dried herbs, both of these herbs also work well dried. This dish is easy to reheat in a saucepan or microwave, always add a little extra water before reheating. It freezes well and will keep sever days covered in the refrigerator.
5) This fried chicken will send tingles in your mouth! Asian Garlic Fried Chicken with Sichuan Pepper - A garlic fried chicken recipe that will send your palette to heaven. This recipe is quite simple to make, just mix a few ingredients for the sauce, chop up a few vegetables and fry the coated chicken. Combine the lot, for an amazing Chinese style recipe. This recipe is peppery funny enough with a berry called Sichuan pepper. It’s used a lot in China’s South West Province called oddly enough, “Sichuan or Szechwan”. It has a remarkable numbing effect on your taste buds, quite different to the spicy chili piquant we are used to. You will need to marinate them for at least one hour, I prefer overnight or even 24 hours. When coating the chicken, make sure each piece has corn-starch on it. If you find it difficult, just spread them out on a flat tray.
6) Chicken Roman style with bell peppers, prosciutto and tomato - This Roman style chicken recipe is cooked in the oven using only one pot. It's best to use a whole chicken so you get the bones for extra flavour and juicier meat, plus the carcass to make a nice stock. Go for organic if you can afford it, it's well worth it for taste and for health.

2) Eggplant Rigatoni - Made in around 20 minutes, the ultimate comfort pasta meal everyone loves. If you like pasta Puttanesca or alla Norma then you will love this. It's very cheap to make, incredibly delicious and perfect to bring to the table on many occasions. Great for vegans and vegetarians too! (Minus the anchovies) It's usually a great summer dish when the eggplants are in season, and I'm big on cooking seasonal but of course these days they are available all year round. The flavours of this recipe are intense because of the fried eggplant which is the hero of the dish. They are usually fried in seed oil but as we all now know, seed oils are very unhealthy so I opt for virgin olive oil. Olive oil doesn't heat as hot as seed oils but still hot enough to brown the eggplants without smoking. I prefer to use the slated capers as they hold a stronger flavour, you can however use the capers you like. Mixed with the olives and the anchovies, this dish comes to life. Cook this rigatoni alle melanzane today and bring it to the table for the people you love.
3) Spicy Eggplant in Olive Oil, a delicious Italian antipasto that any eggplant lover will enjoy. It’s basically spicy pickled eggplant that’s often used as an antipasto, perfect with cold meats or cheeses. This recipe is an old fashion style, and very versatile. Use it for toasted sandwiches or panini. There are a lot of variations and I learnt this one from an Italian Michelin star Chef known as “Pepe” on my recent travels on the south coast of Italy. It’s a delicate and very tasty dish showcasing the true Italian flavours. Melanzane alla parmigiana.
6) Spaghetti Melanzana Fritta is a delicious and easy to make eggplant pasta dish. The eggplant is sliced and then fried in olive oil until golden brown. It is then cooked with a little water and garlic until it breaks apart. It’s then then tossed with the spaghetti for a thick tasty sauce. This dish is perfect for a quick and easy weeknight meal. The eggplant gives the pasta a slight sweetness, and the fried caramelised flavour brings it to a whole new level. The eggplant part can be made ahead of time and reheated, or it can be served immediately. This will also intensify the flavour. Either way, it is sure to be a hit with your family and friends. Just the right amount of spices without overdoing it. The chicken is marinated in milk, yogurt and spices to tenderise the meat making it super juicy and flavourful. There are a lot or recipes for fried chicken, many try to imitate the famous KFC secret recipe, you can see my version on this channel. But let's face it, as good as KFC might be, it's convenience food and why try and make something when you can simply buy it. The only reason I can think of is to make it better. You just can't beat the freshness of home made fried chicken. Now this is not a copycat recipe, but it is quite simple to make and despite its simplicity, I'll be bold enough to claim that it's the best fried chicken recipe you will ever find. With the smokiness of the paprika, the popcorn like crunchy coating and the brined moist chicken thigh, you will be amazed at the outcome. I've made this using boneless, skinless chicken thighs but you can certainly make it with breast and keep the skin on if you prefer. 1) Classic Potato Croquettes . The French word “Croquette” means “To crunch” and croquettes are usually small cylindrical shaped food rolls that are coated in breadcrumbs and deep fried. These croquettes are fluffy and buttery on the inside with a slight crunch on the outside making them irresistible. Used as a side dish, there is no need to add any other ingredients, it’s the simplicity that makes these little puffs of joy incredible. The key is to use potatoes that don’t contain much water, the ones you would buy for frying. I like to bake mine in the oven for total dryness, but they also work in the microwave if you’re in a hurry. If you have leftover mash or baked potatoes, use those, it’s a great way to recycle leftovers into a new creation. Use real butter for that great flavour and make them part of your next meal.
2) CHEESY CREAMY POTATO MASH. Bringing the mash potato to a whole new level, with cheese, cream and butter. The ultimate in mashed potato, an irresistible side featuring the buttery potato mash topped with a cheesy creamy crust with a hint of herb and garlic
3) Potato fondant - Melt in your mouth buttery chicken potatoes.
Potato fondant or also known in French as Pommes De Terre Fondantes is a technique used by cutting potatoes into cylinder sahpes and browning the ends while slowly braising and roasting in stock and butter. There's probably not a better potato as they become creamy inside and buttery roasted on the top. Great served with meats or most dishes as a side potato dish.
4) Pommes Duchesse. A French recipe of mashed potato made with butter, egg yolks and nutmeg. It's forced through a piping bag and baked until golden brown. A very classical potato dish in French cuisine.
5) The Lebanese Batata Harra. Upon my return from Lebanon, I was amazed with a style of potatoes that were served nearly in every restaurant. Called Batata Harra, these potatoes are incredibly popular in Lebanon and with good reason. After my first bite, I was hooked, just try and stop yourself from eating more. Served with fresh coriander (cilantro) in a chili and garlic hot dressing. In this recipe I have made two options, deep fried which is the authentic way and then roasted should you not have a deep fryer handy. Enjoy these Spicy garlic Lebanese potatoes.
6) Gratin Dauphinois - potatoes in cream with cheese. A classic French potato recipe with the addition of cheese. Gratin Dauphinois is a classic French potato dish that you will find in many bistro restaurants in France. Traditionally there's no cheese and instead, knobs of butter are added to the top helping the potato starch mixed with the cream render that brown gratin look and flavour. So you can leave the cheese out if you're a purist, but I think it takes it up a notch. It's such luscious velvety potato dish making it irresistible and difficult not to go for seconds.

It’s not authentic to Tuscany, this is my version, but it does contain many of the delightful Tuscan ingredients we all love. This recipe uses chicken breasts, you can however use chicken thighs if that’s your preference. If using breasts, you want them to be juicy and not dry. To achieve this, don’t over cook them in the pan, simply brown each side on high heat. When you touch them, they should still feel soft inside. Transfer to the oven and finish cooking at a low temperature. As soon as they become just firm to the touch, they are ready. If your sauce isn’t quite ready, take them out anyway. You will reheat them in the sauce. Some pieces will be thicker than others, so take that into consideration.

An easy recipe to make using fresh salmon and make sure you buy starchy potatoes. You’ll need the skins off the salmon, so if buying look for skinless, otherwise it’s quite simple to remove yourself. Great served with a fresh crisp salad and a side of mayonnaise although I personally just prefer lemon juice, I want to taste all those great flavours.
6) SALMON PICCATA STYLE with lemon wine butter. Salmon on spinach and butter beans with in a lemon and wine butter sauce. The word Piccata means "larded", although an Italian word, this dish originated not in Italy but rather in US. It resembles Sicilian cooking style with Northern Italian influences. Irrespective of its origin, I'm yet to find anyone who didn't exclaim gasps of food-joy whilst eating this succulent buttery lemony fish dish. Traditionally made with veal, but works equally well with fish.

Yes you can also use English Muffins, but for me crusty bread has a better texture than soft muffins, but that’s up to your taste. Either way, Eggs Benedict are to me the best breakfast you can have. I use quality smoked ham which makes a huge difference to the flavour. A little cayenne pepper, chives and voila! Make the Hollandaise sauce yourself, forget any packet mix stuff, this is the only way to go and it’s not that hard.This is an easy recipe, it’s not that hard, give them a go and let me know how you went. The eggs are fried and semi-poached, the best technique for cooking eggs, give it a go! The combination of smoked salmon, dill and cream is amazing, and it’s the best breakfast I’ve ever had.
5) Poached eggs Italian Twisted Style! The most delicious breakfast you will have. Although the ingredients and flavours are very Italian, most Italians don’t eat eggs for breakfast. That’s why this recipe is a twisted style. This might be more for lunch or even dinner. This is such a delicious dish, I personally could eat this anytime. I prefer to use rustic sourdough bread, I also have a recipe for that should you be interested. Try and buy an artisanal one or the best country bread you can find. For poaching the eggs, I strongly advise in using the freshest eggs, otherwise the whites will spread away from the yolks and could make a mess. If you buy fresh you will never have a problem. Use a good Italian Prosciutto ham, if you prefer bacon, I suggest baking it in the oven for better results. For the cheese, use a non-stick pan, alternatively you could cut the cheese slices, place them on the toast and melt it under the broiler or grill.
6) Scrambled eggs. Best Tasting Scrambled Eggs you will taste! Moist, fluffy, nutty and extra delish! Making scrambled eggs is not rocket science, however a few little tweaks and changes can make such a big difference. The secret in this recipe is to lightly brown the butter, this makes the world of difference giving you a nutty buttery taste. The addition of a little cream cheese simply brings it to a new level. Be liberal when buttering your toast. Eggs and butter are meant to be together! Don’t over cook it and this simple recipe will surprise your taste buds.

1) Mushroom Ragu Lasagna. Made from scratch with spinach pasta sheets. You won’t believe this is a meatless lasagna. Made using a variety of fresh and dried mushroom for that incredibly tasty reduced ragu flavour.
This recipe is totally made from scratch but of course you can cut corners. Buy ready made pasta sheets and use a food processor. Most of the effort goes into the ragu, and by using a food processor, the mushroom ragu can be made in 15 minutes, plus cooking time. You can make the bechamel in 15 minutes or less. When baking, you may need a little longer depending on your oven. Crispy edges are delicious but don’t over cook it unless you want to eat it all straight away. Otherwise it can be over crispy once reheated. Once cooled and refrigerated, slice it up and make portions, reheat in oven from cold for about 30 minutes. The corners will be crispy and delicious. Enjoy my spinach lasagna with mushroom ragu.
2) Spinach Cannelloni. This recipe uses spinach and ricotta and is one of the most popular of cannelloni with its creamy filling and oozy mozzarella cheese. It’s made using three different styles of cheeses, Mozzarella, Parmesan and ricotta. Cannelloni refers to a cylindrical style of pasta dish. The pasta is filled with a filling and covered in sauce. To save time and make life simple, you can buy pre-made cannelloni cylinder shape pasta or use fresh bought lasagne sheets and then roll them up. It’s best to first blanch any dry pasta in water for a few minutes. For this recipe I’m using fresh lasagne sheets (noodles) made with whole-wheat flour. Fresh pasta only needs one minute cooking.
3) Chicken Mushroom Lasagna, Breaking the rules!
Any chicken or lasagna lovers will love this recipe. Yes I know, I am breaking some traditional rules, but when something tastes so good, why not. You could buy ready made lasagna sheets (noodles). You could also use a kitchen food processor to chop all your vegetables and probably only have 30 minutes of preparation time. Now if you’re a passionate cook like me, then making your own pasta is absolutely worth it. I added chopped parsley to mine for extra freshness and a little more excitement than just plain pasta. (I doubled the recipe in the video as I always like to make extra for another day). I also prefer to use real chicken pieces rather than dried ground (minced) chicken. Slice the chicken by angling your knife blade 20 or 30 degrees, to create larger slices, but keep them as thin as you can. Make sure you caramelise the chicken (brown them) just a little on each piece for extra flavour. I find that three layers are enough, but if you have an extra deep dish, why not go another layer. Leave to rest 30 to 45 minutes before serving.
4) Cheesy Lasagne Spinach & Basil Rolls. Made with simple fresh ingredients, these cheesy lasagne taste incredible. If you love cheese and Italian flavours, then you need to make these. You can buy the lasagna sheets or make your own, but make sure you don’t buy the “no boil” ones as they won’t work. Buy the driest ricotta cheese you can find, usually in baskets, not those wet ones in tubs. If you can’t find it, place in a sieve and simply drain it in the fridge overnight. These can be made in advance, and taste even better the next day.

5) Three Cheese Lasagna. Made with fresh ricotta cheese and Italian sausage. This version has four layers of meat and uses fresh ricotta cheese instead of white sauce. With fresh basil and Italian sausage it takes it to another level. It’s fantastic dinner party food as once the work is done, you simply reheat the dish and serve square portions.
6) Mac and Cheese With two Italian Cheeses. If you’re a Mac & Cheese lover, this will be your new go to recipe! It has two types of Italian cheeses, for a tasty creamy pasta and a cheesy buttery top. Mac and cheese never existed in Italy, but certainly pasta and cheese did. Instead of macaroni I used penne pasta, so I suppose it should be called PEN and CHEESE!

1) We all love a simple recipe that yields incredible results. Guess what? This is it! A French apple cake that can be prepared under 20 minutes and ready under 60 minutes. It’s slightly buttery with a beautiful crumbly outside texture, and incredibly moist crumb. Try and stop at one slice I dare you! I’ve made this cake so many times and each time my guests go crazy for it. This will be your “goto” secret cake recipe, that will be passed on for generations. Like a lot of French baking recipes, it’s the simplicity that’s makes it incredible!
2) With this yogurt cake, you’ll never need to buy packet cake mixes again, this incredible yogurt cake is so simple and virtually fail proof. Plus it tastes delicious. Prepared in 10 minutes, cooked in 20-45 depending on cake pan size and oven. No measuring tools required, just use the yogurt tub, so less washing up. This yogurt cake is the best quick and simple cake recipe you will ever find. It’s moist and light and fluffy. Enjoy it warm with a coffee or tea. Use a good non stick cake pan, I used a 24cm or 9½ inch metal cake pan. For the yogurt, I used plain natural Greek yogurt for its consistency, it seems to work the best. If the amount of oil concerns you a little, then you can cut it down, but why would you want dryer cake? You may end up buttering it to make up for it, so I would recommend to eat a smaller slice and at least enjoy it for what it is. Just don’t eat it everyday, it’s a once in a while treat, and why not treat yourself and your guests.
3) This apple cake is a variation from the Italian Umbrian specialty. It is rich in fruit containing at least 80 percent fruit and is deliciously soft and moist. The addition of delicate pears and soaked raisins brings this recipe to another level. The rum is totally optional, but if you like the taste of rum in your desserts, please add it in, you will love this.
Cover and refrigerate once cooled down, and it’s best to serve it warm. Try and use good quality cooking pears and apples for a better result.
For the cake pan, the size I used is a 9inch – 23cm spring form.

4) Tres LechesCake. A very light sponge cake soaked with a mixture of three milks. This is a simplified version but the results are outstanding. This is without doubt the best recipe you will find. I’m still not sure of the exact origin of Tres leches Cake, but I’m told it’s from Central America, others tell me Spain and Mexico. It doesn’t matter where it’s from, this cake is pure heaven. I use rum in my recipe for that extra kick, you can of course leave it out and replace it with vanilla or a zest of lemon. For me it’s the rum that makes this already incredible cake into an amazing Tres Leches Cake.
5) Chocolate cake. You won’t believe there’s no flour. A flourless, gluten-free fudgy chocolate cake, perfect for chocolate lovers. Simple and quick to make. This cake will satisfy your biggest chocolate cravings. It’s moist on the inside, a little crumbly on the outside and perfect with whipped cream and berries. You can also have it on its own, just sprinkle a little chocolate powder or cacao on top. Perfect with that cut of coffee or tea. You can use a stand mixer, hand mixer or if up to it, a hand whisk. If you preheat your oven, it can be made in 45 minutes.
6) French Tarte Tatin Apple Tart. Possibly the finest apple dessert you will ever taste! Simplicity at its best, the French Tarte Tatin is basically sugar apples and pastry yet it tastes out of this world! This French Tarte Tartin recipe is the thicker one, placing the apple pieces vertically for a higher impressive looking tart.

I had a fabulous time at our Indian getaway! We feasted on lip-smackingly good charred chili prawns, spicy crab curry and berry cheesecake. To top it off we sabred champagne then enjoyed gazing at the night sky before enjoying dinner in an incredible bubble experience - definitely not traditional but so much fun!
We began the day with a captivating exploration at the beach, where river and sea met each other. Don’t forget to listen carefully for squeaky sand as you walk - how fun! Our tummies were satisfied by delicious Indian breakfast Mysore Masala Dosa in no time followed by an amazing lunch full of Palak Paneer, Fish Recheado and more flavors. The highlight was observing our Executive Sous Chef Gorav Verma who create Butter Chicken from scratch that left us speechless. We also learned about making naan or flatbread in a traditional wood fire tandoori oven.
Traveling to the resort was like entering an enchanted world, full of breathtaking scenery and mouthwatering cuisine! We immersed ourselves in utter tranquility after escaping Mumbai's hustle and bustle. The wonderful staff provided us with impeccable service while we indulged in signature dishes from all around the area - what a delightful experience that will remain etched into our memories forever! But hold onto your seatbelts for another exciting culinary journey on our next vlog adventure.

Vegetarian French Onion Soup
There’s no more satisfying dish than a French Onion Soup in the colder months. This one is the vegetarian version, and it’s so tasty you’ll never know the difference. It’s simple, it’s packed with flavour and made with few ingredients. The cheese croutons can be made with any stale bread. The caramelized onion flavour is what makes this dish so popular. No need for chicken or beef stocks. And if you don’t like wine, then use apple cider. French onion soup is popular around the world with good reason. Traditionally made from a meat stock, caramelised onions, and loads of melted Gruyère cheese on croutons.
Garlic Soup Italian style
I know what you’re thinking, two heads of garlic, are you crazy! You can relax as the slow cooking of the garlic will dissipate the pungent flavor and leave a pleasing smooth note. Minestrone soup which means “Big Soup” has always been a favourite of mine. It has so many goodies and can be served as a first course or a main meal as it’s quite thick. There’s no real set recipe for minestrone as it was usually made up using available vegetables in poorer times. I personally prefer it simpler as it has a fresher taste. It can be made as a vegetarian meal with vegetable stock or by using meat stock, this recipe uses chicken stock. You can also add pancetta for a different style flavour. Cook the hardy vegetables first and add the rest last, this will retain some bite. Add the basil leaves at the very end to get the full fresh aromas. Buy yourself the best rustic bread loaf, toast it and lace it with olive oil for a fantastic minestrone meal Italiano style. What an awesome comfort food!
Roasted Tomato and Basil soup
If you’re a tomato lover like I am, then you will love this soup. The tomatoes are firstly roasted to intensify their flavours and bring out the sugars. The selection of good quality tomatoes is of course important, you want sweetness and flavour. These days a lot of supermarket tomatoes taste like water chestnuts. So the best time to make this soup is when tomatoes are at their peak of the season. That’s also when fresh basil is in season, which is the other important ingredient. Master those two ingredients and you will have a soup to die for. There’s two options here, make it as a regular soup or take it to another level by adding some golden crunch puff pastry. The steam will rise pushing the dough into a dome shape making your soup look like a spectacular souffle from a fancy restaurant. Plus once you crack it open, a puff of fresh basil scented steam will permeate into your senses. It’s theatrical but it’s also a tasty combination.
Moroccan Chicken Soup Harira
If you’re a fan of the above hearty minestrone, then you will also love this! Harira is a Moroccan soup typically made with lamb or chicken, tomatoes, chickpeas, lentils, and a variety of spices. This version is made using chicken breast. It’s a soup that’s often served during Ramadan as a way to break the fast.

Garlic naan is a classic Indian bread that is loved by millions around the world. It is made from a soft and fluffy dough and cooked to perfection in a cast iron skillet. The process of making this delicious bread may seem daunting, but it is actually quite simple. After my trip to India, I became addicted to naan bread and had to learn how to make it myself with the same flavour.
To start, you'll need to prepare the dough by mixing flour, yeast, salt, sugar, milk and yogurt. Then knead the dough until it becomes soft and pliable. Once the dough is ready, place it in a bowl and cover it with plastic wrap. Let the dough rest and rise for at least an hour. For best results, let it prove overnight in the fridge. That is the secret for better flavour, fluffier texture and it will be more digestible.
Once the dough has been rested, divide it into equal portions and roll each one out into an oval disc. You can also add herbs at this stage if you wish.
Now it's time to cook the naan. Heat up a cast iron skillet on high medium heat. Place one of the naan discs onto the skillet and let it cook until the bubbles have all risen. Check underneath when it’s a nice brown colour and flip. To get that smoky char flavour, use a pair of tongs to hold the naan over an open flame for a few seconds. This will give it that authentic tandoori flavour that we all love.
Once the naan is cooked, brush it with a mixture of melted butter and chopped garlic. Serve it up hot with your favourite Indian curry or dip it in some raita or chutney.

It's easy to make and the results are absolutely delicious.
