This requires a bit of patience--just when you don't think it's working, it becomes fluffy and airy so hang in there. It's worth the wait! Add to glass container when it's whipped. VLOG # 17 - LEARNING TO COOK FROM MY HUSBAND | MAKING METHI ROTIS (FENUGREEK FLATBREADS) gayamusic 2018-03-13 | Being on a specific nutritional plan, lots of my favourite Indian dishes are off limits. Luckily for me, my husband’s super creative kitchen skills make those dishes an option again, and to top it off, he makes them healthy & protein-packed! Watch as he teaches me (schools me, rather!) how to make Methi Rotis (fenugreek flatbreads) from scratch in a few easy steps, putting his own twist on this classic Indian dish! Watch Vlogs 1 - 16: youtube.com/watch?v=2rcYq… -------------------------------------------------------------------------------------------------------------Reiner’s Protein-packed Methi Roti (Fenugreek Flatbread) Recipe:Ingredients:-1.5 Cups of Fenugreek leaves (Methi), washed, de-stemmed and finely chopped. (If fresh methi is not available, you can make it with just coriander, or substitute with fresh baby spinach)-0.5 Cups of fresh coriander, washed and finely chopped-1 inch of grated ginger-1 clove of grated garlic-1/2 tablespoon of olive oil-1.5 cups of whole wheat flower (atta)-1 packet of Fage 0% greek yoghurt (around 0.5 cups)-1 medium red onion, finely chopped-1.5 teaspoons of salt (or to taste)-1.5 teaspoons of turmeric powder-pinch of asafoetida (hing)-2 teaspoons of carom seeds (Ajwain) (If not available, use fennel or cumin seeds)-1 teaspoon of cayenne chili powderTo make the dough:-Combine all ingredients in a large bowl and kneed, adding a little water if needed (little at a time, until all the flour is fully absorbed into the dough and dough is quite sticky)-knead until the dough is soft and fluffy and still slightly moist, approximately 7-10 minutes-form the dough into a ball and lightly coat with some olive oil.-cover and rest for minimum of 20 minutesTo make the flatbread:-Tear off a piece of dough, approximately the size of a ping pong ball and knead it into a puck shape with your hands.-Dip the puck into flower, coating both sides-Flatten the puck into a circle on an even surface (kitchen counter, or cutting board)-Using a rolling pin, form a circular shaped flatbread. be careful not to break or tear the dough. Should be approximately 3mm thick and even.Preheat a tawa or skillet on med-high heatTo cook:-Place flatbread onto a hot skillet, cooking it for approximately 15 seconds before turning it over-Cook this side for approximately 1 minute, then turn over again. (At this stage you can baste some ghee or olive oil on the top side, however, this is optional)-Cook this side for a further 30 seconds, pressing the edges of the circle into the skillet to ensure their get cooked evenly.
