In short, both choices between Gail and Rick each has an exclusive ending, which are unlocked simply by following the game’s directions. But well as this, there’s a third ending you can reach after choosing either choice, whereby you visit the Helipad instead. Doing so sees you discover another route off the island, one where everyone survives, making it arguably the best ending.
The Helipad is an optional area you likely missed earlier, and this video will show you where to find it, as well as the complete routes for the Gail and Rick specific endings.

One extra thing to point out: You’ll unlock items for the next playthrough of Dino Crisis after completing the game , and these are based on the number of endings you’ve seen. In short, it doesn’t matter what order you unlock each ending, as long as you see all three over three playthroughs to get all bonus items.

The church dial puzzle reward is a Green Catseye - a fairly meagre reward for your trouble.

You'll first encounter Blue Medallions in the Farm from Chapter 1-1, and the Cemetery from Chapter 1-3.
Shoot all 15, and on your next visit with the Merchant, he will give you the Punisher pistol for free.
Each morning of the harbour job, despite each race being technically mandatory, you can simply not take part and it'll progress automatically after six minutes and move onto that day's shift.
So, for those who don't enjoy the daily race, this is a good excuse to take a break. Place the controller down, put the kettle on, and be sure to come back once the six minutes are up.
Remember, for completionists, you'll want to race and finish in each position - first to fifth - to get each unique forklift capsule toy prize.

For Nozomi’s Confession, this requires reaching the point of the story where you get the Chinese Letter, but have not yet collected the Sword Handguard. You must also be in the Hazuki residence after 7pm, and to pick up the phone when it rings.
For Naoyuki and Ichiro, this has the same window of availability as Nozomi’s Confession - which is between collecting the Chinese Letter and Sword Handguard, however it has two additional requirements. One, you must have seen Nozomi’s Confession, and two, you must have visited the harbor at least once.
For Nozomi’s Tears, this has the most straightforward requirements of them all - and that’s to have the in-game date be December 26th onwards (in voice over says after December 26th - it can be on that date too) and to visit Sakuragaoka Park after 7pm.
The cut off date is effectively until the end of the game - until and on the fourth day of the harbor job. And no, you don’t need to have seen Nozomi’s Confession, or talked to Eri outside You Arcade, first. Also, thanks to discussion on the Shenmue Dojo forums (involving Gamer2 and RyoHazuki1987) for clarifying a theory about how early you can see Nozomi’s Tears: shenmuedojo.net/forum/viewtopic.php?t=28032

By default, the monster arena is very difficult to win with the few monsters you have, so it's highly recommended you source more. To do this, certain monsters can be 'captured' by defeating them with Sprigg, adding them to the 'Dopplegang' roster.
The best (and only) monster you need is a Taurminator - and with that, and the right combination of existing monsters, is all you need to win the tournament:

You get the Tele-porter when Kid joins your party. Using the Tele-porter isn't well explained, and though it only works at save points or on the world map, it means you can change Chrono Cross characters regularly enough.

You can go to MJQ Jazz Bar for a billiards game, although this is not essential - there, two guys will tell you that they will give you information if you play a shot.

First, you need to call 0468-61-564 (add a 7 if you are playing on Dreamcast) and give the password.
From there, you need to find where Warehouse No 8 is based, where to find Amihama, going to the harbour and once there, finding out where Warehouse No 8 is. It eventually leads you to the Old Warehouse District, which you have to sneak into at night. Phew! Hope you like stealth sections!
