This improved version of the Long Island Iced Tea was created the beverage director of Porchlight NYC, Nick Bennett. Nick also spent time behind the stick alongside Dave Arnold at Booker & Dax. His Long Island Iced Tea recipe sees a few subtle improvements including the use of aged instead of unaged rum and tequila, a spiced citrus syrup, Fever-tree cola and a healthy dose of Angostura bitters.

LONG ISLAND ICED TEA INGREDIENTS:
- 1/2 oz (15 ml) vodka (bit.ly/curiada-vodka)
- 1/2 oz (15 ml) gin (bit.ly/curiada-gin)
- 1/2 oz (15 ml) aged Guyanese rum, preferably El Dorado 8 (bit.ly/curiada-el-dorado)
- 1/2 oz (15 ml) reposado tequila (bit.ly/curiada-tequila)
- 3/4 oz (22.5 ml) Cointreau (bit.ly/curiada-cointreau)
- 3/4 oz (22.5 ml) lemon juice
- 1/2 oz (15 ml) citrus syrup (see below)
- Cola to top, preferably Fever-Tree
- 4 dashes Angostura bitters
SPICED CITRUS SYRUP RECIPE
- 1 lemon zest
- 1 lime zest
- 550 grams water
- 525 grams sugar
- 12 grams ginger, chopped
- 1.25 grams salt
- 22.5 ml lime juice
- 15 ml lemon juice
- Citric (amzn.to/3RjE3NO) + malic acid (amzn.to/3P8SGRi) based on syrup volume (see below)
METHOD
1. Combine all ingredients except the juices.
2. Simmer for 20 mins.
3. Add the lemon and lime juices.
4. Let the syrup cool and filter.
5. Measure the volume in milliliters, then add 10 grams citric acid and 5 grams malic acid per 1000 milliliters syrup.
6. Stir until the acids are dissolved.

Today I’m finding out what happens when you microwave a cocktail. If you google “microwave cocktails” you’ll get an endless list of warnings about the dangers of microwaving alcohol – which makes sense considering ethanol is highly flammable and heating it about 78 degrees releases highly volatile vapours.
Amongst the sea of warnings you’ll find a few recipes from Ryan Chetiyawardana aka Mr Lyan. Ryan is one of the most innovative bartenders in the world. He’s been involved with numerous bars that have all featured in the top 50 bars in the world, he won world’s best cocktail bar, has been awarded best bartender in the UK twice as well as world’s best bartender. Basically, he knows his shit, so I thought I would test one of his recipes out.

I first shared the Surfer on Acid over 3 years ago. The video blew up... well, at least for the first 3 months then all went quiet! My initial reaction when tasting the drink was that it was missing a little something.. missing some acid. The man that brought us Italicus Rosolio di Bergamotto, Giuseppe Gallo, has done it again, with Savoia Americano! The heart of Savoia Americano takes inspiration from the authentic c.1897 recipe for ‘Bitter di Milano’ adding mouth-watering Orange, Cinnamon, Rhubarb, Cassia wood and Cascarilla but it’s the blend of both Gentian Root and Bitter Orange peel that is central to the ‘Americano’ style. An excellent Aperitivo to use in an array of classic cocktails.

Ginger ale or beer is the key ingredient in a buck which can be paired with a number of spirits or liqueurs. In Jamie Boudreau's Italian Buck he chose two Italian amaro as the heroes. The first being Cynar which is an artichoke amaro, and Amaro Montenegro. The lime juice balances the sweetness making for a complex, bittersweet highball.

It's one of his favourite originals and it shares a few similarities to Sam Ross' Paper Plane (youtu.be/X-_5zg0IlpA), although this is a much juicer version. The Flippin' Banana was a creation of Michael Matthew (instagram.com/michaelmatthew_) for the 2022 Mr Black Coffee Cocktail Challenge. He took out top place with this combination of peanut butter, coffee, banana and chocolate in a flip format (spirit + sugar + whole egg). The resulting drink is intensely flavoured, rich and decadent.

INGREDIENTS
- 1.5 oz peanut butter whiskey
- 1 oz Mr Black cold brew coffee liqueur (bit.ly/curiada-mr-black)
- 0.5 oz banana syrup (see below)
- 5 dashes of Mexican chocolate bitters
- 1 whole egg
- Garnish with a banana chip
BANANA RICH SYRUP
- 1 ripe banana (about 3 oz)
- 3 oz sugar
- 1.5 oz water
- 1 pinch salt
METHOD
1. Make a banana oleo (sugar on skins). Rest for a few hours.
2. Add water and pinch of salt
3. Gently heat on medium (without boiling) for 5 mins
4. Let cool and bottle

The humble (yet elegantly perfect ) Gin Sour has a glow up with the addition of an Earl Grey infused London dry gin.
Now don't panic - the infusion of your gin is a quick and simple process that can be undertaken after your morning cuppa to ensure the gin is ready for a lunchtime cocktail.
(2 tablespoons of loose tea steeped in 375ml gin will give you approx 8 cocktails )
